    this place could easily be overlooked in an otherwise busy shopping center. a lot of the restaurants and eateries are closer to the street, while motto ramen is tucked in the back near target. my husband chose this as a dinner spot for a little saturday date and it was very good. we can in around 7:45 and had no problem finding a seat. there was plenty of tables and booths that were slowly filling as our evening progressed. there are a lot of great offerings across their menu that could accommodate so many different types of palettes. there are many preset ramen dishes as well as build your own feature, an extensive sushi menu, a variety of appetizers, rice bowls, noodle bowls, and curry dishes. we shared a deep friend shumai appetizer that came with a bed of shredded cabbage and carrots and a sweet ponzu dipping sauce. these were excellent! very freshly fried, juicy, and flavorful. i was (and am always) craving something soupy and hot, and i was excited to see a tom yum and a tom kha on the preset menu. i ordered the tom kha with udon noodles a side of crispy pork. the pork was exceptionally crispy and crackly. i found it was even more delicious when dipped into the spiced coconut broth of my ramen. it was also really good with the curry sauce in my husbands dish. my husband ordered the pork katsu curry plate. the menu item says "homemade curry sauce with carrot and potato" next to a photo of the dish with those vegetables. the dish arrived without any vegetables and that was disappointing. the rice and curry were very good, the pork was nice and thin, but the panko was a little heavy and again, the vegetables were very missed. for dessert, i encouraged my husband to try the crepe cake (which he fell in love with) and i opted for the yuzu cheesecake. the yuzu cheesecake had a great creamy texture but i couldn't taste the yuzu. even though there were some negative aspects, i would definitely come back here. we're looking forward to trying more of their menu.

    Haven't been here in a while. Decided to stop by before going to Hmart. We've always ordered the Ramen here. Saw there were more items added to their menu. I was surprised to see Pad Thai, been craving it. I wasn't sure how it would taste because it's not a Thai restaurant. I thought.. what the heck, lets try it. Surprisingly it was pretty good. Also ordered Katsu Curry, Shrimp Tempura, Shrimp Lover Roll and Thai ice coffee. Everything was good except the Shrimp Lover Roll, tasted a bit mushy and bland. I don't know if it was the roll but something gave me stomach issues after i left :(

    It's not the first time here and not the last. Keep coming back for the Motto Red. The chasu pork is always on point.

    OK this place is on fire. We just had the BEST Ramen in OC. The broth was full of flavor and my hubby had the crispy pork and said it was one of the best things ever. Keep up the good work Motto! You have two new loyal customers.

    My daughter ordered the chicken katsu curry and it was crunchy on the outside and moist on the inside! My son got sushi and I got the Motto ramen. We all like something different so this place was great if everyone wants different things!

    Motto ramen is located in the plaza with target. There was plenty of parking. Got seated right away. They serve ramen and sushi. They had a build your own noodle and you can choose from different broths, noodles, and toppings. I did the spicy miso with tsukemen noodles. The broth was delicious but it was waaaay too spicy. I told our server and she gave me a small bowl of regular miso broth. It definitely helped, but still spicy. Next time I will be asking for mild. This time they didn't ask what spicy level. I'm not sure if tsukemen noodles are usually like this, but the noodles were hard. I would have liked them to be a bit softer. I got chicken chashu as my protein. It had a good miso flavor! It was delicious. Got the chicken karage as an appetizer, it was good but there wasn't too much flavor.

    I hate that I have to give lower stars, but I cannot give this place a 5 review. I'd give it 1 but the manager was nice so I will add 1 extra for kindness. We went for ramen. Red Flag 1) the waitress saw us sit down and gave menus to the party who came in after us Red Flag 2) the waitress asked us if we would like anything to drink and we ordered water. It took her forever to bring it Red Flag 3) The party next to our booth found hair in her soup and we flagged down someone for her, because gross! Red Flag 4) Husband asked her if the sashimi was ahi and she said we only have tuna and salmon. Ahi IS Tuna. Red Flag 5) The waitress pulled a crumpled piece of receipt paper out of her pocket to write our order on Neither of us finished our ramen. I had pork ramen and it had corn in it and what tasted like chicharrones rather than cuts of katsu pork. It was salty and the chicharrone-like things were fatty and turned my stomach. Tonkotsu ramen doesn't typically have corn in it! Husband had chashu pork soup and his soup was extremely sweet. For the first time ever, husband did not finish his food and he did not leave a gratuity, which is unusual for someone raised in Polynesia...they eat and eat. When the manager walked by to ask us if we wanted to-go bowls for our food, we both declined, which is also unusual. He asked husband in private what was wrong, and husband said, "It was too sweet. Not the way I am used to. Maybe it's different back home." Husband's sashimi was the wrong style of cut, or at least what he's used to. Being a person who went to culinary school, husband said it tasted low-grade. They didn't have spicy mustard and they didn't even know what that was. So he just asked for wasabi and ginger. We really wanted to like this place and lost our appetites quickly. I liked my ice water better than my soup.

    Just ordered a veggie ramen on uber eats and once I received it I opened my ramen to dump in the broth and before I do that I found a small bug... sooo disgusting and now I lost money and can't eat it.

    Just came back from about a month in Japan, so my standards for ramen is probably more particular than usual. Almost faltered with coming in but so glad I didn't. Got the crispy pork ramen. Broth was decent, and would've merited a 4 stars. But the pork made this dish an easy 5 stars. Protein portion was generous. I didn't take a pic before eating because I didn't expect to be pleasantly surprised like so...so much so that I'm posting this as I am seated at the restaurant. Noticed the negative reviews were from 5-6 years ago, but if you look at the recent posts, they're pretty stellar. Was curious so I asked the server and was told the ownership transitioned to 4 friends about 2 years ago. I have without a doubt once H Mart opens in this plaza that this place will be buzzing. Def an underrated place

My boyfriend also chimed in saying that we knew it was our mistake and was why we offered to pay for that bowl to go and have them make another one. The server said it wasn't a big deal but continued lecturing us and stating they had to waste an entire bowl of ramen. When my boyfriend received his bowl it was clear to see that they didn't throw it away as the server claimed since his bowl was extremely messy. We dined in and there are about 10 seats available to sit at or you can order take out which is what most people do. They have a variety of options to choose from, I went with the spicy salmon and scallop hand rolls and both were delicious. The salmon carpaccio and spicy edamame we ordered as appetizers was also solid. They brought out our handrolls as they finished making them and spaced it out so not everything came out all at once which I liked. The free salad was refreshing and a good palate cleanser. They also offer fresh wasabi for an extra charge which I liked. Overall, this is a solid spot for handrolls and sushi and I recommend coming here if you want something on the lighter side that isn't too heavy compared to the other spots in Rodeo 39! A 7.5/10

FOOD/DRINKS : Tonkotsu Ramen - Pork Chashu, spinach, green onion, seaweed, bean sprout, half egg -- creamy and flavorful broth, love the toppings and the chashu is some of the most tender I've had! Upgraded to Combo to include a small salad + salmon poke rice bowl - Salad dressing was nice and acidic, helped to have some veg between all the decadent bites! Salmon poke was okay, but I like Spicy Tuna more for sure. Quite a bit of rice in the bowl compared to fish. Spicy Cold Dipping Noodle - Bonito dashi broth w/ chili oil, cold noodles with pork chashu, bamboo, kaiware sprouts, bean sprouts, egg, spinach -- Super refreshing and cold! Loved the vinegar-y refreshing dipping broth. Not spicy to me, but had good chili flavor. Crispy Rice w/ Spicy Tuna - spicy tuna, avocado, crispy rice, eel sauce -- rice was soft yet crispy, not too oily. generous amount of spicy tuna. It seems there was text on the menu about how to bypass it, but they blocked it out in marker so it's not avoidable.

We ordered three Blaze Ramen combos, and unfortunately, all three had issues. One bowl (tofu + added corn) came out with pork and no corn. Another (chicken, no corn) came with pork and corn. By that point, my boyfriend didn't want to send the entire bowl back, so he just asked for a side of chicken and removed the pork himself. The third bowl (chicken, corn, mild, no bean sprouts) came with bean sprouts and an overwhelming amount of chili. After dealing with the first two orders, I didn't even want to send it back--I just didn't eat. It was frustrating, especially since we know how good this place can be. The only bright spot was the pork buns--they were excellent as always. Would have been a one-star experience otherwise.
