    Shoyu Ramen and Salmon Sashimi
    Jean S.

Motto Ramen is an okay ramen restaurant that serves decent ramen and mid sushi. Three of us got the Shoyu Ramen, which we enjoyed. On the plus side, they are generous with their pork chashu and the toppings are good. Their broth flavor was okay, not super outstanding, but not bad. I ordered the salmon sashimi and the quality was average. It wasn't the best salmon, but just okay. We also got one of the build your own ramen bowls with pork tonkatsu broth, classic noodles, beef rib eye, and green onions. I didn't try this but the person that ate this seemed the like it. Service was a little below average. Our waitress seemed very quiet, tired, and lacked energy. I also had to remind her several times for items requested. The restaurant wasn't too busy and we were able to get a table right away. The place was casual with plenty of seating.

Haven't been here in a while. Decided to stop by before going to Hmart. We've always ordered the Ramen here. Saw there were more items added to their menu. I was surprised to see Pad Thai, been craving it. I wasn't sure how it would taste because it's not a Thai restaurant. I thought.. what the heck, lets try it. Surprisingly it was pretty good. Also ordered Katsu Curry, Shrimp Tempura, Shrimp Lover Roll and Thai ice coffee. Everything was good except the Shrimp Lover Roll, tasted a bit mushy and bland. I don't know if it was the roll but something gave me stomach issues after i left :(

Ramen was very good, it was our first time and we're a little picky and had the option to build our own bowl. Definitely kid friendly for picky eaters

this place could easily be overlooked in an otherwise busy shopping center. a lot of the restaurants and eateries are closer to the street, while motto ramen is tucked in the back near target. my husband chose this as a dinner spot for a little saturday date and it was very good. we can in around 7:45 and had no problem finding a seat. there was plenty of tables and booths that were slowly filling as our evening progressed. there are a lot of great offerings across their menu that could accommodate so many different types of palettes. there are many preset ramen dishes as well as build your own feature, an extensive sushi menu, a variety of appetizers, rice bowls, noodle bowls, and curry dishes. we shared a deep friend shumai appetizer that came with a bed of shredded cabbage and carrots and a sweet ponzu dipping sauce. these were excellent! very freshly fried, juicy, and flavorful. i was (and am always) craving something soupy and hot, and i was excited to see a tom yum and a tom kha on the preset menu. i ordered the tom kha with udon noodles a side of crispy pork. the pork was exceptionally crispy and crackly. i found it was even more delicious when dipped into the spiced coconut broth of my ramen. it was also really good with the curry sauce in my husbands dish. my husband ordered the pork katsu curry plate. the menu item says "homemade curry sauce with carrot and potato" next to a photo of the dish with those vegetables. the dish arrived without any vegetables and that was disappointing. the rice and curry were very good, the pork was nice and thin, but the panko was a little heavy and again, the vegetables were very missed. for dessert, i encouraged my husband to try the crepe cake (which he fell in love with) and i opted for the yuzu cheesecake. the yuzu cheesecake had a great creamy texture but i couldn't taste the yuzu. even though there were some negative aspects, i would definitely come back here. we're looking forward to trying more of their menu.

Excellent food, great service, overall amazing. Went on a quiet Sunday night to introduce my 12 year old niece to ramen. The gyoza and meat buns were outstanding followed by gorgeous black garlic ramen. She was hooked and so am I - definite repeat!

It's not the first time here and not the last. Keep coming back for the Motto Red. The chasu pork is always on point.

Motto ramen is located in the plaza with target. There was plenty of parking. Got seated right away. They serve ramen and sushi. They had a build your own noodle and you can choose from different broths, noodles, and toppings. I did the spicy miso with tsukemen noodles. The broth was delicious but it was waaaay too spicy. I told our server and she gave me a small bowl of regular miso broth. It definitely helped, but still spicy. Next time I will be asking for mild. This time they didn't ask what spicy level. I'm not sure if tsukemen noodles are usually like this, but the noodles were hard. I would have liked them to be a bit softer. I got chicken chashu as my protein. It had a good miso flavor! It was delicious. Got the chicken karage as an appetizer, it was good but there wasn't too much flavor.

I hate that I have to give lower stars, but I cannot give this place a 5 review. I'd give it 1 but the manager was nice so I will add 1 extra for kindness. We went for ramen. Red Flag 1) the waitress saw us sit down and gave menus to the party who came in after us Red Flag 2) the waitress asked us if we would like anything to drink and we ordered water. It took her forever to bring it Red Flag 3) The party next to our booth found hair in her soup and we flagged down someone for her, because gross! Red Flag 4) Husband asked her if the sashimi was ahi and she said we only have tuna and salmon. Ahi IS Tuna. Red Flag 5) The waitress pulled a crumpled piece of receipt paper out of her pocket to write our order on Neither of us finished our ramen. I had pork ramen and it had corn in it and what tasted like chicharrones rather than cuts of katsu pork. It was salty and the chicharrone-like things were fatty and turned my stomach. Tonkotsu ramen doesn't typically have corn in it! Husband had chashu pork soup and his soup was extremely sweet. For the first time ever, husband did not finish his food and he did not leave a gratuity, which is unusual for someone raised in Polynesia...they eat and eat. When the manager walked by to ask us if we wanted to-go bowls for our food, we both declined, which is also unusual. He asked husband in private what was wrong, and husband said, "It was too sweet. Not the way I am used to. Maybe it's different back home." Husband's sashimi was the wrong style of cut, or at least what he's used to. Being a person who went to culinary school, husband said it tasted low-grade. They didn't have spicy mustard and they didn't even know what that was. So he just asked for wasabi and ginger. We really wanted to like this place and lost our appetites quickly. I liked my ice water better than my soup.

OK this place is on fire. We just had the BEST Ramen in OC. The broth was full of flavor and my hubby had the crispy pork and said it was one of the best things ever. Keep up the good work Motto! You have two new loyal customers.

From the moment mine companions and I crossed the threshold, we were greeted with warmth and cheer, as though we were cherished guests returning home from a long and weary journey. Upon our departure, the farewells were equally heartfelt, leaving us with the feeling that we had dined not amongst strangers, but amongst dear friends. The atmosphere within was calm and comforting, familiar in a way that soothed the soul. In a world filled with noisy feasting halls and chaotic marketplaces, this establishment stood as a peaceful sanctuary where one might rest and enjoy a most noble meal. The serving folk were nothing short of extraordinary. Attentive without hovering, quick of wit, and brimming with personality, they carried themselves with the sort of genuine hospitality that cannot be taught by any guild or academy. Every interaction felt sincere and full of heart. Now, let us speak of the pan-fried gyoza, for I fear words alone may fail to capture its greatness. These glorious parcels arrived golden and crisp upon the outside, yet tender and delicate within. Each bite tasted as though it had been crafted by hand moments before reaching the table. Were I granted a chest of gold, I would gladly spend it all upon another plate. And lo! The White Peach Seltzer. Good people, I have sampled beverages from many corners of the kingdom, from noble feasts to humble roadside inns, and never in my years have I encountered a seltzer so divine. It was refreshing beyond measure, kissed with the perfect essence of white peach. Had a celestial spring existed in the heavens themselves, I imagine it would taste much the same. Perhaps most admirable of all was the story behind this fine establishment. The keepers spoke of their history and journey with such authenticity and pride that one could not help but feel invested in their success. Nothing felt rehearsed or hollow; their passion was as real as the food upon the table. I departed with a full belly, a joyful heart, and a solemn vow to return many times henceforth. This shall become one of my regular gathering places, and I shall recommend it to all wandering souls seeking comfort, hospitality, and a feast worthy of legend. Five stars. Five crowns. Five royal decrees of approval. "Should destiny guide thee to this ramen house, enter without hesitation. Thy taste buds shall sing songs of victory long after the meal is done."

[Missing noodles, expensive ramen, bad customer service, and no reason to come back.]…read more I visited this restaurant to place a to-go order and picked up my food during a late lunch around 1:40 p.m. I ordered two items, including a bowl of tonkotsu ramen. When I got back to work in Santa Ana and opened my bag around 2:30 p.m., my ramen had NO NOODLES. It was literally just broth and toppings. I called the restaurant expecting a simple apology and a reasonable solution. Instead, the manager would not even speak to me directly and chose to communicate through a waiter the entire time, which made the situation even more frustrating. We went back and forth multiple times with the waiter acting as the middleman. First, they told me I could come back and pick up the missing noodles. That was not realistic. I was already back at work, and it takes me about 25 minutes to get from Fountain Valley to Santa Ana. Driving all the way back for a side of noodles made no sense. So I asked for what seemed like the easiest and most reasonable solution: a complimentary bowl of ramen on my next visit. Instead, I was told no, but they could give me "extra noodles" next time. Extra noodles next time? What exactly was that supposed to do for me when I was sitting there hungry with no actual ramen to eat that day? Then the manager, again through the waiter, said she would personally drive noodles to my job. I even told them that did not make sense because by the time she got there, it would be around 4:30 p.m. At that point, my lunch break would be long over, the ramen would be cold, and all of it would be a waste of my time, her time, restaurant resources, and gas. But I agreed, because at that point it was obvious they really did not want to simply offer me a free bowl of ramen on my next visit. And to be clear, I was not asking for some huge free meal. I was asking to be compensated for the ramen I already paid good money for and did not even receive correctly. For how expensive ramen is, that should not have been a difficult ask. About 10 minutes later, the waiter called back and said the manager would give me a free bowl of ramen next time I came in, which was the exact solution I had suggested from the start. I can only assume she realized how far the drive was and how unnecessary and impractical that solution would have been. Mistakes happen. Forgetting the noodles was one thing. But the way this was handled was unnecessarily difficult, inconvenient, and honestly kind of absurd. I did not ask for a refund. I was looking for an apology and some common-sense customer service. Instead, I got a lot of back-and-forth and a manager who would not even speak to me directly. Kudos to the waiter for doing their best to mediate the situation. Even they thought the situation could of been handled differently by the manager. Very disappointing experience. I will not be returning, and I would not recommend this place to others based on how this situation was handled.

Soft music played in the background, and the traditional Japanese decor gave the restaurant a warm, relaxing feel. Our server was friendly and respectful, and the food came out quickly and hot. The curry was flavorful and comforting without being spicy, making it an easy choice if you prefer a milder Japanese curry. The Cheese Pork Katsu was also excellent. The melted cheese added a creamy richness that complemented the crispy pork well. Both meals also came with miso soup, which had a clean flavor, and a side of shredded lettuce with dressing that helped lighten up the richness of the fried dishes. This place is a charming aesthetic when you walk in. It's got some good lighting, not bright, just calm, at least to me. The decor is itself is beautiful, simple, yet beautiful. Service is good! Everyone is nice, they're always on the move, but always willing to help when needed. Food, I never had a bad thing here. And oh my goodness, a one page menu, decision fatigue has lessened! The simple go to for a lot of us has been the Katsu Curry. It's big, but never skimps on flavor. The texture is perfectly crispy, and the meat is juicy! The curry is full of flavor, and all of that with rice, is served in a big stone bowl. So it stays warm your whole meal. Garlic Su Yuk has been a comfort dish since say 1 for me. It's just comfy, with the toppings, I just need to add rice and that's my happy meal. Tofu Stew is that thing I get if I'm either craving soup, or I really need to open my chest because asthma is a pain in the booty. You get that bowl of rice, so I like to add the fried egg to that, let me say that yolk from the egg is an enhancement. The dish is perfect, but egg elevates it! So overall, this one of my comfy food spots. I know the Katsu is viral, but try the other delicious foods here too! You won't regret it!

We ordered the chicken katsu curry, beef soup (galbi tang with glass noodles), and dawa chicken. All three dishes were shared family style and we had a good amount of chicken katsu curry to take home as leftovers for my friend's partner to eat for his dinner. Can you believe that a group of seven women only had to pay $71.86 total (including tax and the automatic gratuity for our party size that was 5+ people) for that much food? We each paid $10.27 for our portion and that's highway robbery in this economy. In terms of customer service, I'll say that our server was incredibly friendly when he was present, but he admittedly came by literally only three times during our visit: when we had to dramatically flag him down to order, when he dropped off our food when it was ready, and when we had to flag him down to pay for our check. I'm so glad they had a handheld terminal for us to use for checkout because we might have passed out from heat stroke if we waited any longer, lol. There are always trade-offs in this life, I suppose. We'll be back soon!

The puff bread was a bit too flour-y for me but I loved the honey butter it came with. I really hope the crab roe spaghetti stays on the menu because it was delicious, great portion, and had amazing crab flavor. The pasta was also well cooked and sauce not too creamy. The berry part of the matcha berry tiramisu was the strongest so I didn't detect matcha as much. They were kind enough to provide a small slice of chocolate cake a la mode with a candle for the birthday and it was actually a great balance of flavor, not being too rich or heavy in chocolate. I would order this again separately as a solid fudge sundae. The beef carpaccio, squid ink uni pasta, spicy miso carbonara, mentaiko pizza, and sticky toffee pudding are still solid as usual. Came back yet another time, and got the beef carpaccio because I just love the truffle flavor, the two sauces, and the arugula/apple bites in between. The only improvement would be smaller slices to make it easier to eat since the larger ones are hard to pick up. The crab roe spaghetti I had to get again for the summer menu in case they decide not to keep it for fall/winter because the crab flavor is so good. My friend ordered the seafood malfadine which I was apprehensive about considering my previous experience but WOW I was surprised by how different it was this time around because when I tried a bite, they REALLY turned it around. I'm so grateful my friend decided to order it because after trying theirs, I might start ordering it again for myself now. Not sure if I had it on an off day previously or they changed the recipe but it now is actually as flavorful as the spicy miso carbonara and might actually be even better. The sausage flavor actually adds a lot of richness without being heavy or overpowering, the spice is a good kick without being actually spicy, the shrimp is delicious, but I kept going back for the sauce. INI Ristorante is one of very few restaurants I consistently keep coming back to instead of trying other new spots in the area because I can't choose my favorite out of so many good things on the menu and just want them all so I need to come with bigger groups or rotate each time I visit. A great problem to have. Their dishes are innovative, pack full flavor, and are unique enough to not find elsewhere. I never have to worry about finding parking and I love being able to reserve in advance since it gets busy. They're the spot I keep bringing friends and family to.
