Absolute favorite ramen spot. Let me preface that I have never been satisfied with any ramen spots in SoCal. For me ramen is 5 things - 1) broth 2) ramen(the texture) 3) the chashu 4) toppings 5)egg. Yes that's a tall order. But every other ramen spot I have been to does not have all 5 down for me. MOTTO RAMEN does! Their broth is delicious. I've had their motto red, motto black, motto special, and tsukemen. Ramen: 1) Broth - their base is delicious. I love how much bass their broth has. I would not say it's HEAVY, but it's it light either. I think it has the best flavor I've tried anywhere. Not overly salty either! 2) Ramen - so I've come to realize my personal preference of ramen is to have a thicker noodle. I understand that ramen is usually a thinner texture, but I like how they have the option of using Tsukemen noodles as replacement. This alone makes it so delicious for me. Worth the $1.5 extra. 3) Chashu - oh my gosh, they give 2 generous pieces of Chashu per bowl. And they are thick charred cuts of rendered down pork belly with a slightly sweet taste. It's not the traditional chashu taste, but it makes everything come together so well. 4) Toppings - I've been to other restaurants where toppings are extra, or they give toppings that's not good and make the bowl weird. But I like all the toppings provided for their standard bowl. In the motto special, there is earwood mushroom, bean sprouts, corn. 5) THE EGG - ok so I've had places where the ramen has everything outstanding from 1-4, but then the egg is underwhelming...THIS PLACE MAKES A TRUE AJITAMA EGG. a soft boiled center, marinated outside and it's just PERFECT! The fact that their bowls hit 5 out of 5 oft requirements makes this place my favorite spot. Another must try is their Tsukemen. It's a dipping ramen that isn't as popular, but it lives up to the OG Tsujita Tsukemen in LA. I was told the chef came from tsujita? Not sure if that's true or not but idc cause this just means I don't have to go all the way to Sawtelle and can come to HB for a bomb bowl of Tsukemen. MOTTO PLEASE SPONSOR ME!! read more

I ordered the motto special, extra spicy, swapped out the noodles for the tsukemen noodles (highly recommend doing this), and swapped out the poached egg for the soft boiled. They might've been a little too heavy with the chili oil, not that it was too spicy, but that it was too oily, so I wish they used more of their hot chili paste instead to make it more spicy without being too oily (I ordered extra paste on the side because it wasn't spicy enough) The server announced the wrong orders when passing out the bowls so my friends bowls got swapped and when they figured it out, it was too late and the other person got the spicier one I don't blame them too much because it's fairly new so I kind of expect the staff to be new. We also got the karage, which I wish was more crispy and the squid legs, which I wish they gave more of. Overall, the food was decent and I'd definitely come back for the ramen because of how close it is to home and I think they'll continue to improve! read more

Motto ramen is located in target area of Huntington Beach. Super convenient location. Inside is clean and newly renovated. The bowls are a good size, not too big and not too little. Came here with my friend at like 6pm ish. Got seated immediately it was great. We were starving. I got the Motto special and let me tell you. Oh my god it's so much food! And it burns!! Iit's great! Ive had spicy raven elsewhere and it was like a soft kick and mostly salty broth. When they say chili paste here. THEY MEAN IT. It will actually be chili. I totally didn't exist it so I sat there chugging soda. The broth was delicious and the mushrooms added a nice crunch to the everything. Unlike the ramen places ive been to before Motto, their noodles are firmer than what i'm accustomed to, but everything is delicious nonetheless! Definitely recommending this to my friends next time and coming back. Probably gonna try a basic tonkatsu like my friend, though. I'm probably too much of a noob to handle the chili here. read more

Get the Motto Special Ramen!! It was so savory and sooo welcoming on a cold night. My husband got the special and he let me try his ramen TWICE. Each time I didn't want to give his bowl back to him lol I got the chicken katsu curry and it was good. Finally a place that compares to my favorite curry place, but closer to home!! Very friendly and I loved how they had the "not tampered with" tape to close up the bag (super safe for ordering thru Postmates, ubereats etc) The food was all fresh and delicious but I must say the portions were extremely small. Ive been here several times and tried almost everything on there menu and every time they would let us check in for a free soda and last night we were there and they said 1 check in for 1 table and we normally spend about $70 just 2 or 3 of us and i asked the waitress how come its 1 check in per table but all the other times was per person and she says idk. So really?? Their gonna cheap out on a soda when it saids check in for a free soda. Its fuckin false advertisement and they just lost alot of customers and their food aint that great. This only gets a 2 star because of some uptight payment issues. One person in our group needed a separate check and the other 3 of us were just gonna throw 3 cards down on the other check and they said it was against there policy. 4 people while there was only one other group inside eating you think they would take the payment anyway they can get it.
