I love this place. This is one of my first choices to get sushi here in fort collins. OK, it's partially because its right across the street from my work. I have been to my share of hole-in-the-wall sushi bars. This place didn't have blue fin tuna or toro. There is a pile of mail on the sushi bar, which limits the bar to three seats. They serve cold sake in hot sake glasses. I do think this is an okay place for a quick bite to eat if you are craving sushi and they have large Sapporo bottles. I've got nothing else. read more

The first time we went here we were chatting with one of the sushi chef's at the bar and they told us that they overnight their fish from Hawaii. You can taste that in the sushi and sashimi, everything is so fresh and just melts in your mouth. I haven't had too many rolls and so far they have been good but nothing mind blowing. I'll keep searching but I'd trade fantastic nigiri and sashimi for average rolls any day! read more

Used to be the best bang for the buck but I was sad to see that they've adopted the Suh Sushi fruit salad crap. I used to go a lot but the last time I was there the rice was far too starchy, it clearly hadn't been rinsed which is a critical step for sushi rice. Oh well. I give it 3 stars because they deserve some credit for how good it used to be. read more

I'm not sure where all these 5 stars are coming from, but it really should not even be a 4 star sushi restaurant. The only reason why I even gave it two stars is for effort. This is my husbands and I first time trying this place. They had good service, but the food had a very bland taste. My husband and I have tried many sushi restaurants from traveling. So I hope you'd take our word for this. We did not have high expectations though. So we only ordered simple dishes, that usually are pretty good at almost every sushi restaurant you'd go to. Edamame, Seaweed Salad, Shrimp and veggie tempura, and a Dragon Roll. Disappointingly, most of the food was bland. They did not blanch the edamame. So it did not have that nice texture where the peas snap. The seaweed salad actually tasted alright, but for $5. You get a small amount. When you see it, it's in a tiny bowl (size of a asian rice bowl) and over filling the bowl. Unfortunately, under all of that is actually lettuce (reality you only get barely half the bowl). Now the Shrimp and veggie tempura appetizer looked okay, mainly just the shrimp looked really good, but the veggies were fairly brown, almost burnt looking. They tasted bland, it came with the usual dipping so that made it ok. Now the Dragon roll (california roll with eel on top) looked great. Presentation was awesome. It had a lemon peeled and decorated as a dragons head. Looked very appetizing, though i did notice it was lacking the eel sauce that most sushi restaurants drizzle over (there was none on the plate, looked like they put very little on roll). But i should mention, we did custom order it a little by adding shrimp tempura and no crab. When we took a bite, all we tasted was tons of avacado. And I mean a lot! No texture, just soft and mushy from the avacado. And the rice (in the roll) was wet (they probably added too much water when cooking). Barely tasted the eel or shrimp tempura (which i should add was the thinnest shrimp tempura ive ever seen in a roll) thus, a bland Dragon Roll. So my overall grading. A- is for effort. Presentation for main rolls were amazing. But taste was very poor. read more

As far as sushi in Fort Collins goes, this is my #2 - though it is a close call. I have been here twice and both times I was impressed by the quality and freshness of the fish. The salmon sushi melts in your mouth and the rolls are tasty. The restaurant has been virtually empty both times which makes me nervous but the experiences I have had make me wonder why more people don't come here. I'll be back. read more

Very disappointing...we had not been here for well over a year but thought we'd give it another try. Sushi was mediocre at best, not very fresh tasting. Sushi boat had no variety. Teriyaki chicken with combo bowl was dry and sucked all moisture out of your mouth!? Tempera veggies lacked total variety - potatoes slices & onion slices - that's it! We ordered a sushi boat for two, a combo bowl & an additional $75 worth of sushi & rolls. They charged us extra for 2 bowls of soup - that just doesn't happen at other sushi restaurants in this area! This was absolutely the worst sushi and food in general that my fiance and I have ever eaten. Poor quality fish, rice was flavorless and mushy, overuse of tempura (there was barely any shrimp in the tempura shrimp, it was mostly fried batter). This was the only time we have ever not finished sushi. It was so bad I spit mine out on the first bite. Overall, this was very disappointing and will never eat here again. read more

Had the albacore and salmon rose appetizer. AMAZING is the word for it. The presentation is beautiful and the fish the best I've ever had. The salmon literally could melt in your mouth. The rolls are generous in portion and well made. Stays together while immersing in soy sauce. The spicy salmon was fabulous. It takes a little longer than most places, but well worth the wait. My wife & I went here having high hopes and expectations after reading Yelp and Urban Spoon's review. When we first arrived, we were greeted by a cheerful, wonderful server. She quickly took us to our choice of table. After we were seated, the experience turned really, really south. Our actual server got our drink order - after almost 5-10 minutes of waiting. She was very rude, and was not anywhere cheerful/genuine like the hostess had been. We decided on our order, but then it took almost 10 more minutes for our server to come back. She quickly took our order, and then brought back our Miso soup and salad. The salad dressing was horrible and the miso soup was bland. Maybe the night would get better with our entree? Nope. Our order was brought out (Vegetable Tempura for the wife and I). My order was lukewarm, and my wife's vegetables weren't even done. Did I mention we also had to ask for rice? After another seemingly long wait, we were finally brought rice and my wife's fried vegetables. One of the dishes for soy sauce was chipped (safety hazard?). The vegetables in our tempura were nothing but bland. At this point, we contemplated leaving, but were too embarrassed to request a check and/or refund. Honestly, this dining experience was a complete waste of my time, money, and palette. Save your money and dine elsewhere. read more

I go back and forth with this place. The service can be absolutely amazing with great ambiance. Or sometimes the service can be average. Huge selection of rolls, all very tasty. Usually nice portions. Quite often there aren't a ton of people here so your food gets right out to you. Make sure to discuss food allergies with the servers as not all ingredients are always listed on the menu. And they deliver within a couple miles! read more

I have a second home in Loveland Colorado and the Mt Fuji is just to the north of me. I've eaten sushi all over the US and in several European and Central American countries and the Mt Fuji is one of my favorites - certainly my favorite in Colorado. It is family owned and they are really nice people. The service is excellent and the food is always fresh, nicely prepared and tasty. When in Colorado, I don't bother with the others. read more

This restaurant adds another feather into my theory cap regarding owning/running a Japanese sushi shop without caring about making proper Japanese sushi. It's not possible to run a good sushi shop by putting profits before pleasure. Charge whatever you want, just make sure the experience equates to pleasure. I'm from the midwest, I understand and sympathize with the difficulty of getting good ocean fish or even the ability to locate a decent sushi chef when you live next to a rocky mountain...so I want to express my forgiveness on that front and thank the staff for being nice and cheerful. However, the only thing that was enjoyable about my meal was the sake, and that, of course, was due to the fact the restaurant purchased the sake from people who know how to make sake. Part of my meal came with miso, was served almost cold. This would piss a Japanese person off, if they were expecting a relaxing meal...versus a fast slurp between morning and afternoon work....but it was dinner time...and my miso was not pleasurable. The rice was not sushi rice, don't need to go into an explanation why that's not pleasurable...especially when sushi is sold at common sushi prices. The tamago was obviously sweetened egg omelette folded up and sliced like tamago, the point here...it was obvious....and a very poor tamago if you wish to call it that. I would call it a fusion chinese fried egg/tamago or something fancy like that. I've been to many sushi resturants, and they usually try to make it like the sweet egg cake it should be, not a fancy sweet sliced up dinner omelette. Back to the rice issue, you can increase customer satisfaction 100 fold if you would simply use proper sushi rice. A simple and low cost improvement to your business would be to use better rice. Yes....I know you live near a rocky mountain, and I also know you can buy sushi rice at your local grocery store, I'm more sure you can get sushi rice from your local restaurant supplier, hell, mail order a couple large bags of sushi rice from somewhere and try out my suggestion. The wasabi.....was wasabi?....either it was prepared and sitting out in the fresh mountain air for about a week before being served to me....or I swear someone added a colorless tasteless powder to it. Don't need to go into why the bill didn't hold up to what was served. Main point, I felt like I was eating at a inexpensive low quality Chinese restaurant pretending to be a Japanese restaurant. So if you are into that kind of thing I fully recommend this restaurant.....otherwise, ignore it....go to Taco Bell or something. I would have had a better experience at Taco Bell if Taco Bell served sake. Sorry, for being so negative. It's really sad to see the nice people of Fort Collins be mislead this way regarding an ethnic food that is taken very seriously by the ethnic group that created it. If your not Japanese, it's perfectly OK to open a sushi shop....but if you can't do it with heart, don't simply resort to doing it to make money because you are in a location where Japanese restaurants are not very common. Make great food of a particular kind and charge what you need to in order to continue making great food of a particular kind. If you can't do that, do something else you can do. This restaurant isn't doing it. FYI..I'm comparing this to sushi restaurant experiences I've had in Japan, Indonesia, Washington, New York, Florida, Ill(Chicago), and Michigan. I haven't been everywhere, but I believe I have enough experience to be fair in this review. I don't know why I'm seeing 1 star reviews! This place is GREAT! I love when you walk in, you are greeted right away! The couple times I've been, I've had a different server. But the last time I visited we had a server I can't remember her name but she was blonde and tall. One of the best servers I've ever had. At any place! Definitely my favorite sushi in Fort Collins! Delicious and creative specialty rolls. All of the rolls that I've tried are very unique and tasty, as are the sauces. My husband also really enjoys the sesame chicken bento box (both the lunch and dinner one). All of the food seems to have really fresh ingredients, including very creative uses of fresh fruits and vegetables in the rolls. The only reason I didn't give them 5 stars is that the rolls seem to come out incredibly slowly. The first time we were there it was for an early lunch and only a couple other tables were occupied, my rolls came out slightly after my husband's bento box but it wasn't a big deal. The second time we went was for dinner, the restaurant was more crowded, and one of the rolls took so long we were completely done with our meal and I actually asked either to cancel it or for a to-go box (they gave me the box). Still, delicious food and the waitress gave me a complimentary bowl of soup. I will definitely be back, but will just keep in mind that the rolls take longer. Also, as a bonus everything is beautifully plated :) its a really nice touch. read more

Ordered a variety of rolls. Spicy yellow tail tasted really fishy and had us concerned. Spicy Tuna was very mushy and off putting. The specialty roll (Honeymoon Roll) had a slimy consistency to the fish on the outside. Seriously disappointing. We won't be eating here again. read more

I had a rice noodle dish with mixed seafood consisting of previously frozen imitation crab, mussels and scallops. Seafood was not fresh and the dish was very bland: just rice noodles with miso soup for sauce and this bargain bin seafood for $14. Somehow the bill for two people was like $43, way too much for what we got. Leftovers look and smell awful the next day, so right into the bin. read more

I have been to my fair share of sushi restaurants in northern Colorado and I must say the hospitality of the restaurant is top notch. Our waitress who i recall name was sammi was amazing! Her demeanor and knowledge of the menu was top notch and she was very friendly! We ordered 5-6 different rolls to really test the sushi chef skills...Kevin who I later found out did nothing but impress us with even a few creations of his own! Update May 2014 -- Made a reservation for a party of 10ish, no problems there. Tried a couple of their rolls and some uni this time, and those were solid. Dining companions got bento boxes with tempura that was delicious (onions and sweet potato in addition to shrimp), and the dessert (green tea/mango ice cream + mini banana lumpia-like treats) was amazing! Also, if you accidentally leave an expensive piece of office equipment behind, the staff are great and will hold on to it for you -- and the waitress who returned it to me even remembered my name even a couple months after she'd hosted us last time! So yeah, super nice staff who seem to enjoy working there (family biz, I think), delicious food, definitely worth checking out. read more

Used to go here a lot, this time was my last. We called ahead the day before to reserve a tea table for our anniversary. The hostess was rude when we came in for our reservation and told us, "oh really, cause I don't see one here for you" Service was slow, very slow, we had to ask her to take our order and the drinks she kept forgetting. The food matched the service. According to Mt. Fuji, their California Rolls consist of rice, crab meat and avocado, last time we went it had those plus cucumber, and carrots. same with tempura veggies, they served us only tempura potatoes, that were very undercooked. When I called to inform the management , 30 minutes before they closed, the woman on the phone said he was too busy.. I was there during dinner rush. and it was my table and 3 others, not busy. I talked to the manager he said sorry, but he sounded like he had said the spcheel of his apologies over and over before. he offered a free lunch. which I won't be going back to have there again. avoid this place. bad , previously frozen food, horrible staff.
