It is probably one of the most put-together restaurants I've ever had the privilege of visiting. Every detail feels intentional. Clean lines, modern touches, spotless floors, organized buffet, upbeat energy -- they hit every mark. The décor has personality without being overdone. It feels like a true family restaurant -- warm, authentic, and welcoming -- but with a level of polish most places never achieve. The service? Exceptional. Real smiles. Real hospitality. You're not just another table. You feel seen and taken care of. Now let's talk about the brisket. Unbelievable. I had to ask how they were doing it, and Mark was more than happy to walk me through his process. When brisket is smoked low and slow -- and they smoke theirs for 20 hours -- here's what happens: * The visible fat cap mostly renders down. * The intramuscular fat melts. * Collagen breaks down into gelatin. * The melted fat soaks deep into the meat fibers.
