While so many rest on their laurels, the folks at China 8 consistently put out hot and fresh food time after time. This last time I ordered Pepper Chicken. Fried Rice and Egg rolls. It was still so fresh and hot when I got home. The vegetables weren't cooked to mush which is a definitely plus. The chicken was very tender and plentiful and the sauce was delicious. Luckily I had some, so I added it to my liking. Overall, the dish had plenty of shrimp, but seemed to lack the depth of flavor usually found in a pad thai. No notes of tamarind or that hint of fish sauce that's usually present. Overall, it was good, but only good. With a little more effort it could have been really good. The shrimp egg roll was huge, well cooked and full of flavor. That was when our grandson ordered jellyfish. The restaurant is fairly small but the large tables make the restaurant good for groups. I think this would be an excellent place for a Yelp event. They have a lunch menu but you have to ask for it. It includes some of the popular Asian dishes for $9:95. They have smaller portions that come with a choice of soup or egg roll. Danny and I asked to see the lunch menu, but decided to order off the main menu. We split Crispy Tofu with garlic sauce and egg rolls. I liked the presentation of the egg rolls. They were cut diagonally and arranged nicely on the plate. The tofu dish was quite tasty. Next time, I plan to get Mei Fun. I have had it here before and loved the variety of flavors. The service wasn't terrible but it wasn't wonderful. We got our food in a timely manner, but we felt rushed to order and she didn't check to see if we needed anything or refill our water glasses.
