Drove by and decided to stop in for the first time to get some gluten free pastries for my son. I picked out a cinnamon roll and a monkey bread and took them to go. To my surprise, the bill came to just shy of $15 for TWO pastries. The food was provided cold but still tasted ok. I popped in here one day to figure out what it was. And to my surprise, they had the best carrot cake I've ever had (including my own!) You can't tell it is gluten/dairy free. Years later, still one of my favorite places in Castle Rock. I am having to restart my diet due to GERD issues. ITALIAN MOZZARELLA PRETZEL: Very peppery with light mozzarella flavor baked into the pretzel. I think this would be really good with cheese dip. CHEDDAR JALAPEÑO PRETZEL: Can definitely taste the jalapeño! The cheddar adds a nice savory bite. More starchy than the Italian mozzarella but still tasty. Owners were super nice and offered us samples of their pretzels, cakes, and bread rolls after learning it was our first time visiting. Definitely won us over on their bread rolls-- SUPER fresh and buttery. Their cakes were wonderfully moist and not too sweet. We grabbed a few more items on our way back to share with my bf's family. Even if it wasn't a "forced" lifestyle this place is amazing, the All of the baked goods are so hard to believe they are compliant with my difficult diet! We just came across this quaint, charming, a little gluten-free and dairy free bakery. We eagerly awaited 9 AM when they opened, by the way, they're only open Thursday through Sunday, and ordered the chocolate chip monkey bread and cinnamon roll. Sat outside with our little dog, of which they came out and gave her little gluten-free dog biscuits, and thoroughly enjoyed our freshly baked goods. Found No Cow Bakery this weekend after a morning workout at Miller Park and couldn't be more impressed. Looking for some gluten free options and this place had them in abundance. Off Wilcox Street in downtown Castle Rock, this small hole in the wall establishment was a delight. They gave us a sample plate with multiple options that whetted our appetite. We ordered the Chocolate Chip Monkey Bread, Lemon Blueberry Muffin, and Orange Glazed Poppyseed. All three were warm, moist, and delicious. The owner Arthur came out and spent 10-15 minutes with us, sharing his history and background. Loved the variety of menu options, the staff was friendly and helpful. We definitely will be back and make this part of our regular rhythm. read more

Absolutely loved the fact that there is a vegan cafe (especially bakery) when I badly needed a cake for a birthday in this town! The folks here are so sweet! And everything here looks phenomenal! I got the chocolate cake. Didn't like it a ton, as I don't like frosting, maybe order a cake without frosting if you like it that way? (The cake was already made so I had no choice). I've been wanting to come here for so, so long, and on a recent trip down to Colorado Springs I was finally able to pay a visit. No Cow Cafe/Bakery was well worth the wait. So many tasty gluten free and vegan options! When we arrived we were offered samples to try their mini cakes and pretzels, which were all delicious! My son LOVED his chocolate cake, and the icing was divine. And if this wasn't enough to win us over, the owner presented my son with a cute little toy. These are my kind of people. They offered little samples on my 1st visit and sent me home with some samples for my hubby...since he's GF. If I lived in Castle Rock we'd be weekly customers. I love this place. It's not 100% vegan, (only 99%), but what a great option! Their hours are limited, (They're closed Monday, Tuesday and Friday), but they serve up good product that is cruelty free. We loved everything we tried, and they were very open with the samples. If you have food allergies, or you just avoid animal products, this place is for you. There are some things they sell that have egg in them, but everything is very well labeled, so you will know before you buy. Besides, just ask, and they will tell you. We went in for a special gluten-free treat and though closed for in store eating, he had a variety of delectable dairy-free, gluten-free treats. I gravitated to the chocolate chip cookie. My immediate family does not have any gluten, nut, or dairy allergies, but several cousins, aunts, and children of friends do, so I am always on the hunt for excellent tasting products that are NF, DF, and GF. My siste-in-law, who recently discovered she is sensitive to gluten, just could not believe the chocolate cake is GF. She refused to share her cake with anyone. Then there is the triple chocolate cake with cherries, the upside down pineapple cake, pretzels, apple crisp, angel food cake, bread...all of it fantastic and none of them with the gritty texture of most gf products at other bakeries and stores. The staff is fantastic, as well. They are incredibly nice and friendly. Oh, and the owners are awesome. I always feel like their goal is to make me fat because they frequently give me little slices of various products to taste. My skeptical husband even eats some of their products. Did I mention their products are diabetic friendly, too? They are so soft and moist, with no or very low sugar used in any of them. What a shockingly good find - Was looking for breakfast one morning and came across this place. We ordered a little bit of everything - chocolate cake, red velvet, birthday cake, upside down pineapple cake, and pretzels..... Each of them were SO moist and dense. Great flavor! And they lasted so long. We picked them up on a Friday morning, went to Texas on Tuesday (took them with us) and ate on them for a week. Traveled well and everyone in Texas loved them too. I stopped in this week to grab a treat with a family member who recently had to alter their diet drastically. They can not have gluten or dairy. We were so surprised by how delicious the cakes and cookies were. Upon walking in we were slightly underwhelmed as the cakes do not have frosting on them in the case. What an amazing family that runs this place. My 3rd grade daughter whose birthday will be celebrated tomorrow at school wanted to get her teacher a cupcake that was gluten free and dairy free. I'm from out of town and visiting one of my closest friends for her birthday weekend. She works every day of the week and yesterday morning, we were on our way to No Cow to pickup her birthday cake before going to work and LITERALLY, 5 minutes before we're suppose to pickup the cake, No Cow texts her and says her cake wont be ready until 10am which is the same time she needed to be at work. Several things frustrating about this: 1) Why would you text 5 minutes before we're scheduled to pickup the cake? and 2) The order was placed 2 WEEKS AGO and yet, you're still late getting this done? So we go to No Cow since we were around the corner, walk in and give the information for the cake. The short of it is, maybe the owner? came to the register after the young cashier went in the back to share what was going on.. And he looked like we were an annoyance. His body language and facial expressions were so unwelcoming even though it was THEIR mistake not having the cake ready. We had to ask him to deliver the cake (which they don't usually do but again, that's not our problem), he said he would and that he'd text/call when he was on his way to deliver. We paid for the cake while we were there... He never called/text when he was on his way to drop off the cake and we tried calling twice AND text but never got a response. So we though we wouldn't have a cake for the birthday party but he did drop it off, left it outside on the table after he rang the doorbell. Seriously, if this is how you run a business, don't have one. I read some other reviews and there was similar customer service nonsense. And quite honestly, the cake wasn't that amazing and for damn sure wasn't worth the hassle in the end. read more

Surprised to see some vegan options in Castle Rock so decided to check it out. What a gem! A true mom & pop shop, colorful and artistic yet still very classic (you won't feel out of place).
