I previously tried the San Gabriel location and really enjoyed it. Met up with a friend to catch up here and we ordered a great spread of things to try. I recommend the beef rice noodles. Very light and flavorful. I also fell in love with their seasonal Sichuan spicy wontons; that's a must order. Another dish that surprised us were their dumplings. I like all the different kind of noodle dishes they have here. If you're in the mood for hot soul they have a lot of those and they have some dry noodles as well. I usually see this place busy with people whenever I walk by it to go the the ups store next door. I chose to try the zhajiang noodles which is a dry noodle with bits of minced pork, green onions, and cilantro. The noodles were not too soft and the sauce was not too salty or heavy. Finding Noodology on Yelp for the first time was very intriguing because it didn't appear to be your conventional Chinese restaurant. But at the same time, there was a sense of appeal as the chain's concept focuses on specializing in Chinese noodle dishes and soups as opposed to a specific province of food. Though ambitious, I thought I'd give Noodology a try. Entering the restaurant on a Saturday around 1PM, the first thing that caught my eye was the mix of beige and grey colors in the dining room. The environment was very streamlined-looking which made me feel like the place was very well taken care of. But though the dining room was clean, it was a little too clean for a Saturday afternoon. Even though the dining area was not that large, only two tables were occupied in addition to the one I was sitting at. After looking around, I was seated promptly. Once seated, the waitress walked away, leaving me unsure on how to order because there were no menus given. But after a few minutes, I realized that the ordering system was mobile. From there, I looked at the menu for a few minutes and settled on the Taiwanese Braised Beef Noodle which cost $14.50 at the time of this review. **As a side note, the waitresses that were working in the restaurant did not come around all that often to do anything other than serve food. I had to get up to ask them for water and the bill.** The food came about 10-15 minutes later and I proceeded to look at the ingredients. In the bowl was one piece of bok choy, four pieces of beef shank, green onions, egg noodles, and the broth. At first, I thought that the bowl was filled from the top to the bottom with ingredients. But after eating about half way through, I noticed that there weren't much of any of the ingredients inside. The portion size wasn't bad, but it wasn't remarkable either. If I had to select one item in the bowl that I wanted more of the most, it would have been the beef. Each piece was concave and not a full chunk, which meant in reality the bowl had about 2 full pieces of shank. I ended up leaving pretty full, but not completely stuffed. For $14.50 in Chino Hills, this is slightly more than the average of 13 dollars. And for the portion, the price-to-portion ratio is not justified on the merit of quantity alone. The flavor of the bowl was pretty good though! The broth wasn't loaded with spice (perhaps because I asked for less spice) and had a subtle sweet flavor. On to the vegetable items, onions made the broth a bit more savory, which gave a nice minor contrast. The bok choy tasted normal, more than likely boiled or steamed. Next, the beef was probably the best part of the dish as it was semi-juicy and tasted like it was slow cooked. From all of the Taiwanese Beef Noodle Soups I've had, this beef was better than average. It did not seem to be heavy in sauce, rather held its own with decently tender meat. On the other hand though, the egg noodles felt sort of lacking. I expected them to be dense for what they were, but they were not very filling. The rounded texture also made them a little awkward to keep in the mouth for longer periods of time. And on top of that, the noodles broke apart a little too easily which meant they were somewhat gooey. In all, I did enjoy the noodle soup and found the beef to be the highlight. But on the category of taste alone, it was a little above average at best. **Another side note: About an hour after eating at Noodology, I did begin to feel dehydrated and somewhat drowsy. There is a chance Noodology uses MSG in their food.** From this experience at Noodology, I'm not entirely convinced that this is the new hotspot to get a noodle soup. The price was semi-high and for a semi-lower quality all for a semi-good taste. The mobile ordering system was streamlined and sped up the experience of dining in, but the lack of engagement with the staff offset that benefit. At least the atmosphere was clean, which really helped save the experience. From what I could see, I think the issue could be the amount of different dishes on the menu. Because the noodle dishes are so diversified among the different provinces, the restaurant seems to focus on having selection than honing down on particular noodle dishes. If I had to give one piece of feedback, I'd say perhaps focus on mastering a few of the dishes and slowly expand outward. There are many restaurants that have crowds out the door for one really great thing, while others are too versatile to the point where they cannot specialize. I'd give 3.5 stars if I could give half points, but because Yelp doesn't offer this feature, this experience at Noodology gets 3/5 stars in my book. I might return to try other noodle dishes, but not for awhile. If you're looking for a dining experience where you can dine and keep to yourself at the same time, Noodology might be for you! Really enjoyed the service and the food. I ordered the #6 beef with green and red chili peppers noodle. It was very flavorful and extremely spicy which was good for me because I enjoy extra-extra spicy. I did not believe it would actually be that spicy so beware! My mouth was burning the entire time. I noticed the 3 chilis next to the name on the menu afterwards when I was paying & the server said it means very spicy & it's their spiciest bowl. All in all, the noodles were good, the meat was tasty and the broth very flavorful. Our server was a young man who was very attentive and nice. Portion of the dishes was great.
