It has a very relaxed vibe.. order at the bar, find a seat, sing along! I'm used to karaoke bars that have private rooms, but it's an experience seeing people sing in front of the crowd! My husband and I shared a huge fishbowl cocktail that was deliciously dangerous, but the unexpected star of the show were their fries! I've never seen a potato cut like that and it's something I've never seen - imagine a potato wedge spiral that's not too thick, perfectly crunchy. We got the Parmesan truffle one and the sauce was so good! Cheese curds were also good! Some notes I picked up on.. it looks like you can reserve tables, bathrooms are the public restrooms outside, and it turns into 21 and older after 10 pm. On the Saturday night that we went, they had regular karaoke on stage with the song's music, then they switched over to karaoke with a live band which was pretty cool! I understand that busy nights can be stressful, but the consistent rudeness seems to be part of the overall experience rather than an isolated incident. What made the experience especially uncomfortable is that, after reading many positive reviews, I found myself wondering why my interactions felt so different. As a Mexicana, I can't help but question whether my ethnicity played a role in the way I was treated. I can't say for certain that it did, but the contrast was significant enough that it left me feeling unwelcome and concerned.

Echo has events that rotate out, and this Sunday, a friend of ours happened to be performing his Retro Brunch set with live DJ and drumming. Morgan and I got there early and had a drink while we waited for our reservation time. The bartender was an absolute gem. She was super friendly, and makes a mean cocktail!! Drinks were stellar. Standard price for downtown (a little spendy, but in this instance, worth it.) For drinks we ordered: Autumn Serenade: vodka, St. George spiced pear, absinthe, peach nectar, ginger beer Lover Boy: rye whiskey, angostura bitters, orange bitters Neon Tiger: hendrick's gin, yellow chartreuse, campari and an Espresso Martini. My favorites were the Espresso Martini (best in town!) and the Autumn Serenade. So amazing! For food, I had the shrimp and grits, which was ENORMOUS and absolutely delicious. Do I wish that the shrimp were a little bigger? Sure. But that's if I'm being super picky. I am picky about my grits, and these were amazing. I definitely ate more than I should have because they were so flavorful. Morgan ordered the pan fried pork chops and eggs. These were really yummy! Not a huge pork chop fan, and they were done beautifully. The potatoes were phenomenal, and the eggs were cooked to perfection. We also ordered the deviled eggs, and they were so good. Morgan doesn't really eat mayo, and he loved these. A must order. Our friend's mom also offered us a taste of the beignets, and they were light, pillowy, and so good. Both sauces were crave worthy. I will definitely get those myself next time. Service was great, and the music was awesome. I love the atmosphere here, and honestly cannot wait to come back for some different events.
