    My husband and I went on a long weekend trip to Eugene and stumbled upon this gem of a food truck. The proprietor, Koa, was there opening up and we were the first customers of the day. My husband is a great fan of eggs. Of sandwiches, banh mi, baguette, paninis... He said this was the most perfect breakfast sandwich he'd ever eaten and he's not prone to hyperbole (unlike my tendency towards it). He asked to go back the next day to get one for breakfast and one to go for lunch. Two perfectly plush Texas toast pieces surrounding a nice warm yolky goodness of mashed avocado, cheese, thick pieces of crispy bacon. We were told we needed about 3x as many napkins as we thought we did for the task and the gooey goodness did as advertised all over our hands and faces. It was a sensory overload treat of epic proportions.

    I wanted to try Only Yolking during my the Grilled Cheese Experience, but my schedule and their hours never aligned. I was able to today and I'm so sad I didn't try it sooner! It was easy enough to find and get to. I ordered the Green Eggs and Ham, although they all sounded good. I also got a side of tater tots. The sandwich was delicious, tons of pesto cream sauce which I love. The tots were fresh and crispy and I could see the sandwich toppings on the tots being good too. I only ate a few as the sandwich was more than plenty. The spicy aioli was good too. It was easy to order and came out quickly. I believe I've seen that they offer bread pudding sometimes, if that's the case I'm making a special trip to try some! But I will absolutely be back to try some of the other sandwiches, and I wouldn't hesitate to order the green eggs and ham again either. I also love that they have a "pup menu", with just eggs or meat. If I have my little sidekick with me I'd happily order him a scrambled egg be or the road!

    Wow wow wow! Only Yolking makes absolutely fantastic food! They catered brunch for our wedding and made the trip out to Loloma Lodge where our guests were floored by the delicious food coming out of the kitchen. Liz and Koa were so easy to work with and people I'd love to just hang out with. They were flexible with deciding what to serve for brunch, portion sizes, all the things. And they whipped up a feast for us to test the food ahead of time which made decision making all the harder when it was all so tasty. This was a highlight of our wedding!

    If you have never been to the Van Buren food truck pod, this is definitely a must visit for delicious egg creations. Not sure how long they've been in this pod, but it is something definitely NOT TO MISS. They have a whimsical take on egg sandwiches with their sandwich names. They even offer egg creations for furry 4-legged friends. I had the basic "one-eyed Jack" aka the Egg in the Hole and a side of tots. OMG, my simple meal was EGGSCELLENT!! The toast was buttery, the egg perfectly cooked; the tots were so crispy & crunchy. I highly recommend the spicy aioli dipping sauce--I didn't think it was spicy at all, but definitely has a little kick (they need to bottle this and sell it!) Order your egg sando and grab a coffee from the Kohi Time truck directly across from them. Eat it there under the covered gazebo or take it to go. If I could have their sandwiches on a regular basis I would, but I'm not from the area and was only visiting my son at UO. I will definitely have to make it a point to return on my next visit to Eugene. The service is awesome--the husband/wife team are so friendly.

    What a cute concepts and a cute food truck. They mainly have sandwiches made out of the egg-in-the-hole toasts, but you can also get them plain. They also have tots and Caesar salad, which we need to try next time. I got the B.E.A.T. which was very tasty, messy, and a bit spicy. I like spicy but I might try a different aioli next time. My daughter was with me so I got her a plain egg-in-the-hole and they were very accommodating to give us a side of bacon (not on the menu) for $2 so that made her "kid's meal" only $5, a great deal! She love it. This quant food truck is currently set up on Van Buren in the Whit on Saturday and Sunday for brunch. There a few picnic tables in the shade and there is a very unique coffee truck set up right next to it to round out your brunch needs. We'll be back soon and often!

    So so so good. Perfect breakfast place if you want good coffee from Glass House. Which you should LOL. Didn't get a picture fast enough it was so good. And being the morning on a weekend there was a lot of space to sit. Make sure to grab a wet wipe, you'll need it!!

    Second time eating at the best breakfast spot in Eugene . This amazing food truck is the best breakfast sandwich spot ever. Nothing compares to it . Grab your napkins and a picnic table and enjoy this culinary delight . The amazing service makes these breakfast sandwiches taste even better . Thanks for being amazing .

    We arrived at Only Yolking later in the day and were worried they wouldn't have enough food to feed our party of five. They were out of sausage and only had a little bacon left, but the man taking our order worked with us to make sure we got 'EGGsactly' what we wanted. We got there during a rush and the man kept apologizing for the wait, even though we didn't have one issue. He was so kind and the environment was friendly. The little table area under the canopy was a cozy spot to sit and wait, we got to watch the squirrels mess around on the fence. The actual food was delicious! The sandwiches were thick and a good breakfast. The yolks were perfectly cooked, the sauces were spiced correctly, and the bread was brown and Texas toasted. The chipotle sauce had a good kick to it, and the avocado spread was a perfect creamy addition. Not a bad thing to say, amazing experience, will go there again soon!

    Needed breakfast before moving my kid into UofO. Found this on Yelp and decided to take a walk to find it. Nestled in with a few other interesting food trucks, we were greeted with a kind smile and a very limited but well curated menu. I settled on the Green Eggs and Ham while my daughter had the Some Pig. Both were out of this world good. What made it even better were the perfectly cooked tatter tots. My only advice, other than go here immediately would be to have your eggs cooked "traveler style" because the amount of yoke that squirted out of my sandwich was no joke...or should I say "no yoke!" All kidding aside, very good high quality food for a good price. I remained full all day.

    wow! my friend recommended this place. so much flavor and well executed. the service was friendly and quick for being busy. it's located in a parking lot with other "food trucks" in front of Ninkasi brew company. casual setting with communal tables- nothing fancy. My new favorite breakfast sandwich spot!

    Egg in the Hole just like everyone's parents made. They even have a whole crew of dogs roll through every weekend. Very good!

    What a weird, strange, surreal place. Went there a while…read moreback but the owner who just sort of hangs out there made fun a person ahead of me because they ordered a vegetarian sandwich. That's what I was going to order so I left. I recently gave them another shot and what a regret that was. Came in and the owners and their entire family were there ripping bags of chips, using foul language, talking about personal subjects not appropriate for a restaurant, etc. I felt like I was in their living room rather than a restaurant. Also, one of them kept on going in and out of the front door every 1-2 minutes wearing a hoody in a way that made me nervous like I need to keep a watchful eye. He was constantly engaging with all the "off" street people and even invited a homeless person inside to go through the garbage to collect recycling. All the while the owners are all there, chilling with their family, and not really caring about cultivating a comfortable environment for their dine in customers, I had enough. They opened a second location in what is now the ARBY'S on West 11th. Their bread was fresh and soft and withstood the topping piled onto their sandwiches. It was heaven and a sandwich was good to get you through two meals. Then they disappeared. Today my wife brought me home a sandwich from Subshop and it hit all the right notes! Fresh baked bread with a great flavor and structure that held together. I had the turkey sandwich and added avocado and bacon. They were very generous with both. Every bite had all of the ingredients and flavors and was perfectly balanced. While this was my first experience with Subshop it won't be my last!

We were told it will take about 40 minutes to get our food which is fine. - 1200 the wait staff finally came by and took our total order (food and drinks) -1210 water was finally brought to table -1220 four of 5 beverages came out. - 1235 final beverage delivered. There is zero engagement from anyone between these long waits. -1255 three meals delivered. One missing something. - 100 one of the remaining meals delivered - 110 final meal and apology that it would be comped. That's 1.5 hours to get breakfast food for 5 people. The menu was good but the execution by the kitchen was inconsistent. At that point we just wanted to finally get out of there. Sitting there with tap water after finishing your first round of coffee/drinks a long time ago and hoping someone ever returns is crazy. The location is great, menu well constructed, and it was clean and welcoming. If you are looking for a place to just sit around and talk to each other for a couple hours and maybe, just maybe get some food or service at some point then this is the place for you. The one positive note was the barista slinging coffee drinks. She was working her tail off the entire time and all the coffee drinks were great. If anyone had come to ask we likely would have ordered more while we waited.
