It has that exact, hyper-specific airy crunch that is so incredibly hard to replicate outside of Europe. The dough is clearly fermented with patience. It's light, shatteringly crisp on the bottom, and has those beautiful, irregular air pockets that give it a pillowy structure without ever feeling heavy. Let's talk about the sauce, because that's where most places fail. It isn't that sugary, paste-heavy stuff you find at standard joints. It is vibrant, bright, and tastes intensely of sun-ripened tomatoes and clean olive oil. It is remarkably fresco; striking that perfect balance where the acidity cuts through the richness of the cheese without overwhelming the palate. The vibe inside the West Lake spot is casual and unpretentious, but they take their craft seriously. Food service is streamlined and efficient; you order at the counter, and they pop the slices back into the oven so they land at your table screaming hot.
