I went to Taco Mama once with a friend, tried El Cazador because the stand on Hwy 72 looked too cute, and went to Cantina Laredo with the hubby for a lunch date. Don't get me wrong, the tacos weren't terrible, but they weren't something I'd crave necessarily. I read about this taco truck during a google search and thought omg this is too good to be true, but it wasn't! I tried it for the 1st time last week with the hubby and was so thrilled. We both got 4 carne asada tacos for $6. So cheap! (I've found that food is not necessarily cheaper here than in CA even with the high wages in CA just saying...) And man was it good. The meat was so well seasoned and they gave plenty of meat per street taco. The only thing missing is some darn Carne Asada fries! I wish that was a thing here! Oh and orange bang. Where can a girl get some orange bang around here? I need my whipped orange creamsicle drink stat! Or whipped pina colada drink! They do have horchata that is a plus! I'm so glad I found this place. Makes this Cali girl so happy!

Their pastor and lengua are phenomenal (asada is hit or miss) and the flour tortillas are soooo chewy and delicious. Their cheese sauce and salsa are mid. And the only reason why I took off a star is because their hours can be super unpredictable. Make sure to give them a call OR check their instagram page BEFORE driving over! Even though their hours said they'd be open, they're not always open... Eating tacos at Valentina's is one of the reasons why I look forward to coming to HSV. One day last week I saw they'd be stationed at Northrop Grumman while I was working nearby, so I made plans to go grab a meal. They were fairly busy with a bunch of NG employees, but I came towards the end of service and they were still working efficiently. My wait wasn't bad. The menu is fairly large for a food truck and has classic Thai offerings, from curry to Thai basil plates to noodle dishes like pad see ewe and drunken noodles. You can choose your protein for practically any dish: chicken, beef, pork, or shrimp for an upcharge. They even have fancier, more traditional drinks like Thai coffee and green tea. It's an impressive setup for a food truck. I initially asked for an order of red curry, but the lady working the window said they only had green curry that day. I'm not sure if they only run one curry at a time, or if they'd just run out of everything but green. Next, I asked for pad see ewe, but they had run out of noodles. That was a little disappointing, though perhaps it's on me for coming later during service. I ultimately wound up with Thai basil with chicken. It came served with white rice. I also ordered some mango sticky rice for dessert since the season is basically on us for mango! I got a diet soda to drink -- as much as I love Thai tea, I didn't want to gild the lily TOO much. My food came out quickly and was packaged beautifully and very neatly. It was clearly made fresh as it was also very warm! I returned to my car to nosh covertly before returning to work. The Thai basil was good -- it's not my go-to Thai dish, but it was a good bit better than a version I had not long ago at a different restaurant. Pleasantly aromatic, veggies were still crispy, most of the chicken was a good, non-rubbery texture. It went well with the delicate white rice. I forgot to ask for at least a level 2 spicy, which is the one thing I'd change about it -- as it was served to me, it was very mild, and I wanted some kick. I wish someone would've prompted me about spice level when I ordered, but it's ultimately on me. The mango sticky rice was a delicious treat as always. This version was served with a purple-y colored rice rather than white. It didn't taste much different to me but the color was pretty. My mango still had a few slightly sour bites but it was mostly great, and that's not their fault anyway. The rice itself was still warm and delightfully, subtly sweet. I'd definitely patronize this truck again. Would love to try a curry or a noodle dish someday in the future, though I enjoyed my meal enough that I'd also order it again!

I decided to order their chicken and shrimp pad thai, spring rolls, and chicken dumplings. You may have to wait a few minutes since the food is cooked to order, but that didn't bother me at all. The food was awesome! Each dish was served hot and was seasoned very well. You could tell they used natural ingredients. The chicken & shrimp pad thai was my favorite! It also came with thinly sliced cabbage and carrots and a side of limes. Thankfully, they put the peanuts on the side without me having to ask (I don't like a lot of peanuts in my pad thai personally). Keep in mind, they do have tables with umbrellas that you can sit at if you want to eat your food there/in the elements. I really enjoyed my visit today and I highly recommend this business.

The food truck has a nice Facebook page where you can find their weekly schedule. This is very convenient for finding the food truck. It was parked in front of Washlab on University drive. It is brightly colored and hard to miss :) The health department gave them 100 for their last inspection. Excellent score!!! I ordered a combo with 3 quesabirria tacos, a side of potatoes and guacamole with chips and a drink. It was a 7 minute wait to get my food and I was surprised as it was delivered to me. My tacos were filled with soft delicious beef and a container of consommé. Wow! These tacos were loaded with meat and very tasty. The consommé was not too salty nor too greasy. The guacamole was about 2 tablespoons worth with about 8 chips. It was good. The diced red potatoes were so delicious. They were excellent. My combo scores 5/5. From a meat to taco shell perspective, this food truck was 3rd and second in taste. The quesabirria tacos they sell are extremely tasty and I will return to buy more. I saw several things on the menu I want to try. It is impressive they score a 100 health department inspection. If you like tacos, please try the quesabirria tacos. This is a food truck, though it's quite a large one and hard to miss with its beautifully pained sides! Most days they seem to not be itinerant and are instead parked in front of the Washlab (next to Shottenkirk Honda) on University Drive. However, they are active on social media and post their location weekly, and they do move around from time to time. Definitely check out their page before going looking for them. They have quite a large menu with lots of traditional Mexican favorites like tortas, sopes, and alambres, as well as some stuff for more American palates like hamburgers and cheesesteaks. I was, of course, after birria, which I ordered as a combo with rice and beans. The combo was fairly pricy at ~$20, but one thing I did like was that it included my choice of an agua fresca -- I chose pineapple this time. Service was very friendly, offered to help answer any questions I might've had, and got my order out to me in a timely fashion. I had no trouble ordering in English; likewise, the man who ordered after I did seemed to have no trouble ordering in Spanish. Win-win! Although the price was a little high, the quantity of food was great and the quality was impressive. My meal came with three quesabirria tacos, rice and beans, consommé, red and green salsas, a fresh lime, and some pickled veggies. EVERYTHING was yummy. The birria was tender and unctuous (though I wish there had been a *teeny* bit more meat), the beans were smooth and smoky, and the pickled veggies were delightfully crunchy and sour. The rice was just so-so flavor-wise, but it was nothing a splash of the delicious and mild-almost-medium heat red salsa couldn't fix. The salsa verde was herbaceous and cooling; my preference was the red but I can clearly see the merits of both! Lastly, my pineapple agua fresca was refreshing and sweet, though not cloyingly so. I finished my meal feeling so excited and happy about what I'd just consumed. The lingering flavor sensations of heat and savory, umami birria brightened my whole day! I will be back when the birria craving strikes again.
