Located on the main street in Pagosa with ample parking (the entrance is around back), it's a cute converted house with original wood flooring, bright lighting, and the wonderful aroma of freshly baked bread when you walk in. We ordered the Ham & Cheese Croissant, which was buttery and flaky with just the right amount of filling. Next, my wife ordered a breakfast burrito smothered in green chili sauce. This burrito was surprisingly good (I helped her finish it)! The sauce was made with fresh Hatch green chile (NM-style), which we loved because it reminded us of home. The coffee was decent overall. My wife said her latte wasn't quite strong enough, but I really enjoyed my cold brew. Long overdue review for not only the best bakery in Pagosa Springs but the best small scale bakery I have ever lived near. Pagosa baking company has an absolutely dazzling array of rotating cakes, pastries, croissants, pies and tarts. From the crème brûlée tart (8$) to the chocolate cream pie minis (6$) to the amazing croissant breakfast sandwiches (5.75$) and cookies of all kinds (1-3.50$) we have been coming here for our sweet treats for months and they are literally batting 1.000% THEY DO NOT MISS. Service is ALWAYS friendly and prompt despite massive demand.....and don't even get me started on the bread. Made with locally milled flour and rye it is sublime (7$ per loaf). Major construction requires you to find the alley behind this former home. Parking is provided. Service dogs only, but we were allowed to have our 16 pound poodle at an outside table. Pies and other baked items looked great, but we just had roast beef sandwiches and chips. My wife commented that the bread tasted like something from a Keto diet. Prices are a bit absurd and I only had interactions with one employee but she was very Brusque and didn't know what a smile was and couldn't even say thank you after my purchase. I asked her where I get my coffee and she couldn't bother to speak. She simply turned and pointed behind her like I should know or something even though the place caters constantly to tourists. I got fresh brewed coffee which was lukewarm, and while the carrot cake muffin was very tasty I have definitely had better and definitely at a lower price. A very good bakery with freshly baked tasty items. Breakfast muffins and scones are delicious. The prepared lunch sandwiches are limited in choice, but taste exceptional. This time I had a Colorado Green Chili Stew that was wonderful. The breakfast burrito was not to my liking -- dry eggs and dry chorizo -- It was 7am, right after opening, yet everything tasted like they had been warming a long time before going into the tortilla. Great bakery and coffee shop right on main street in Pagosa. Note that there is no street entrance or parking because of construction. There is a lot you can access from the alley. We tried to eat there on 7/9, the idea of bakery food sounded delicious to us & the bakery items looked wonderful, however, the young girl at the front was very rude & dismissive. The sandwiches were pre-made in a cooler & even though there were people in the kitchen, they refused to make a fresh sandwich, she tried to push the ciabatta sandwich as sourdough, which ciabatta is not the same as sourdough. We ordered an Americano, a chocolate ginger cookie, a chorizo empanada, this amazing Italian bread ball filled with olives, artichokes, and peppers, plus a slice of blueberry pie and a lemon poppyseed muffin. Every single item was full of flavor and clearly made with care. The woman working the register was incredibly kind and fun to talk to. My friend and I had just come from a river walk and had collected some driftwood and rocks--she actually took the time to chat with us about the rocks we found, which made the visit even more memorable. How lucky were we to run into this cute, quaint bakery! We were only there for 2 days, and twice we went for morning drinks. I had both the matcha latte and the spiced chai latte. Tasty! I'm happy that they don't add sweetener to the matcha automatically. Clerk did ask if I wanted sweetener, but I like the flavor of pure matcha. The baristas were quick to serve my drinks.
