They really do a good job with their wood fired oven (i.e. expect some areas to be charred) and the service is great. I went to Peel the first week they opened and as a pizza and (local!) beer lover, I was really excited about their taste and feel and atmosphere and wasn't disappointed. Their service was lacking, but it was new! I returned today for the first time since then and was severely disappointed. The service was the worst I've had anywhere in a very long time, our order was wrong, the place was in an actual state of chaos, and my daughter got cut on some shattered glass from something that had broken before we got there. Of course, this could be chalked up to a bad experience because they seem successful, but I'd rather bank on other local businesses that have been reliably awesome. I really think this place could benefit greatly from choosing to be a higher end/bar/pizzeria like what they feel like (maybe even make an age limit?) with the pretty glasses and unique recipes, rather than trying to create a family atmosphere. Stopped in at the recommendation of a coworker and couldn't be happier with our meal! The ingredients were so fresh and they had great flavor combinations! The arugula salad was so light and fresh for a hot summer day. I'm a sucker for goat cheese and really enjoyed the Capra pizza. Since leaving NYC, I've eaten far less pizza as a Coloradan. Don't get me wrong; I've had decent pizza since moving here, but Peel really knocks it out of the park. Honestly, I'm a little sad my pizza prejudice kept us from coming in sooner! My husband and I came in last night and enjoyed two vegetarian pies--the Fungo and the Capra (delicious)--a house salad (huge), and the peanut butter pie in a jar for dessert (yowza). My husband enjoyed the cocktails while I stared at them with the longing only a pregnant lady knows, though the housemade lemonades (lavender-vanilla and watermelon) more than made up for my temporary tee-totaler status. The service was warm and efficient, there was fantastic live music, and the atmosphere was casual but romantic. The pizza crust is neither too thick or too thin, the ingredients and combinations both high-quality and creative, and even the meat options made this vegetarian a little wistful. Super disappointed! Brought friends here to show them our favorite local pizza place and received horrible service, slow, burnt pizza that had burnt yellow cheese and little to no dried prosciutto! We spend summers in Italy, so we know what a great pizza is. At Peel, we tried 6 different pizzas and they were absolutely great!! The appetizer was the quality you might expect in Milan or NYC. Our first experience was the day after Christmas and we could tell that they were short staffed and stressed. There was a little mix up with our pizzas going to the wrong table but our server made it right. Everyone was very friendly and helpful. The Mushroom pizza is the BEST pizza I have ever had!!! We added sausage. The crust is made from dough that has fermented three days. The roasted garlic, olive oil sauce instead of a tomato based is divine. It has homemade ricotta cheese. They say it is the most hand-crafted pizza they make. It is divine. The Lavendar creme brûlée is the best I've ever had, and the Oreo peanut butter tart with carmalized bananas was just delicious. The owners, chefs, managers and waiters were all friendly and wonderful. Even the history of the building is interesting. Ask your waiter about the history. For instance, the tables are built from repurposed bowling alleys. It is worth the trip out to Frederick CO. Anytime I'm I'm Colorado, I intend on revisiting this wonderful restaurant. read more

They put 3/4 of a plate of over done house croutons with a few olives tomatoes, small pepperoni and a few small cheese balls. We've had Antipasto from east coast to Italy. This is not it. Holy cow, what an amazing find in Frederick! When we first got here we thought the prices seemed Cherry Creekish. Well I'm here to tell you it was worth every penny. I had the antipasto salad where the tomatoes tasted as if they were kissed by God. My husband had the spinach salad that was also uber flavorful. He had the sausage panini and I had the spinach jalapeno bacon pizza. Both were wonderful. We topped it off with lavender creme brûlée! Oh my goodness, a flavor explosion. Peel is a wonder in a small package, in a small town, seemingly in the middle of nowhere. But it's worth the adventure! Peel has perfected the art of pizza making in Colorado. The bar has been raised, what were my favorites West of the Hudson, now have some work to do! The service is exemplary, the atmosphere is cozy and warm. Look for the repurposed bowling alley tables. Decided to try out the new pizza place in town for Dinner. They were slammed. We had an appetizer and a salad. Bruschetta and the house salad, dressing on the salad was fantastic. Our table was in the bar so we could watch them cook the pizzas. Like that each pizza has its own special touch. Our pizza had roasted red pepper, homemade sausage, mushrooms and pepperoni. It was outstanding. Not a slice left. We will be back. Can't wait for the patio to be open. Nice to have variety in town. Owners and wait staff were very attentive. read more

My fiance and I stopped in for dinner last night. We shared the jalapeño bacon pizza and four cheese panini. We weren't impressed. There was almost no bacon on jalapeño bacon pizza. It was like they used half a strip of bacon for an entire pizza. There were several slices that I couldn't find any at all. Then there was the four cheese panini. We joked that they should change the name to the no cheese panini. The bread was good but for being a four cheese panini, there was hardly any cheese. The passion fruit salad that came with the panini was the highlight of the meal. The margarita was also very good. The staff was friendly and efficient. I've been to peels twice now and have been so happy with the service and food. The last time, tonight, we had the pleasure of Cassidy waiting on us. She was an awesome server and took the best care of us. She also was quick and witty with our friend, (creep Keith). She had us laughing and we had the best time having her take care of us. The setting is nice, wait staff in excellent, beer is awful! How does such an establishment, that sells craft beer in the pub one floor below owned by the SAME people have such a weak offering? The pizza was good (med-lg) but not worth $20 (after the %18 hospitality fee tacked on) There were only 5-6 beer choices in Peel's and after sampling (4 of us) didn't like any - you'd think there would be at least ONE beer that would appeal to the group. We asked if we could buy beer at 5030 local downstairs and bring it up to the restaurant, which is what we did. Where on this planet do you have to do that?? We ended up paying $7 for beer that wasn't remarkable during a time that is normally happy hour in other establishments and where we can get truly classic Colorado craft microbrew for $3-4. By the time the %18 is added onto the tab, it's expensive for a less than remarkable experience. Won't go back, won't recommend it. read more

This is probably the best artisan style pizza I've had in my entire life. We did the mushroom pizza. The crust was perfectly crunchy yet light. The flavors were amazing, and the perfect proportion of each ingredient! The food was served incredibly fast! I'm typically not a crazy pizza lover but I already can't wait to go back to try some of the other menu items. For dessert I had the lavender creme brûlée which was delicious (wish it was bigger as its a little small for the price) and my boyfriend had the citrus cake (it was dryer than we expected as we were picturing something incredibly moist) the flavor was yummy! Awesome wood-fired pizza with a great mixed drink menu. Local distilleries and breweries featured, always a plus. Service was friendly and quick. The decor is a light and modern feel. The food is prepared in the open, everything looked clean. The creme brulee I had was a little over-bruleed so the custard underneath had melted. Overall was good. The reason they get two stars is they add 18% gratuity to every ticket no matter how small your party and they don't tell you about it until you get your ticket. Not too crazy about this place. The food was overpriced and doesn't really cater to the needs (or wants!) of the population of the town that it resides in. We were disappointed that for only 3 people (2 adults and 1 child), it cost us well over $65 for a lunch meal.
