Wow! I really enjoyed my experience at Pho & Bar! We were warned upon arrival that they were training a new staff in the kitchen and asked for patience, but I'm telling you... the wait was worth it! Yes, our items didn't come out in the correct order, but everything we tried was delicious. I opted for the traditional broth with rare beef and the broth alone was filled with a deep, rich flavor! The temperature was so nice and hot! For a chilly day, it was the perfect meal! I also really appreciated that they separated the noodles from the broth when asking for it to-go! I chose the raw beef and I love how they presented everything. If you order this dish, I recommend scooping the broth from the bottom to avoid packing all the chili oil in one slurp. I have ordered from Pho&Bar a few times. Let me start with the fact the food is tasty. And that's most important. But.. for the price they are very stingy with some things. First... each time we have gotten pho, they have given us about 5 small leaves of basil. Yes... that's it. Even the cheapest, bargain pho I have gotten at hole-in-the-wall places give a few big sprigs of basil (like 20 leaves). Basil is such a crucial component in pho, and it's very cheap and easy to grow so I don't get why this place skimps on it. Second, I ordered a rice bowl that is supposed to come with carrots and cucumbers. My order had about 5 little carrot slices and one (yes... ONE) slice of cucumber. I had to laugh at that pathetic little slice in a huge bed of rice. Again, a fairly cheap ingredient that they completely skimped on. Really good and probably the best I've had in Denver. I love a good menu that has something new and not typically seen. The pho rolls weee this for me here. OMG, they were so good. The peanut sauce was amazing especially with the rice wrap. Wow. The pho broth was amazing. I like OG better than the Spicy actually. The packaging was great and very typical of others however the staff didn't overfill the containers. Ok. So I'll admit... I was a little skeptical because I'm biased when it comes to Vietnamese food (mama is the best cook) but my fiancé wanted to try. We got there on a Saturday night and there was a 20-30 min wait so we got on the list and they said they'd text when the table was ready. We were texted within 10 minutes and seated outside. A lot shorter than expected and seated at a table that was open when we first got there. We were helped by a very friendly sever with waters and she ran back shortly to take our order. We had enough time waiting for her to come by so we were ready with everything we wanted. My fiancé got the Asian pear mule that came with a slice of the pear. We split shrimp spring rolls and Asian Buffalo wings to start. I got the combination pho (rare filet, beef, and meatball) and he got the banh mi that comes with fries. First, spring rolls - typical but typical is exactly what I like. The peanut sauce with it was delicious too. Yum. Now, the Asian Buffalo wings. Wooo! You definitely have to be okay with a little heat. These wings were juicy inside and the outside was crispy but not like a typical Buffalo wing - like a crisp you'd get in a fried chicken sandwich. Delicious!!! Shortly after, we got our entrees. The pho was a HUGE serving. I loved the bowl. It's tall so you don't have to lean over too much and get the pho sweats (IYKYK). :) It was refreshingly great. I did not expect such an authentic tasting pho and this more modern location. They give you the fixings on the side but it was the perfect ratio of hoisin and sriracha. My fiancé also really enjoyed his banh mi and again so awesome how authentic and not over the top like these trendy places try to do. I love pho. It is legitimately one of my favorite dishes, and have spent too much time trying as many places as possible. This place was a surprise hit. Far cleaner and with a far nicer staff than pretty much every other pho spot in town. Their spicy broth is amazing. I've had the house broth as well, but the spicy bump is perfect without it just being about spice. Wontons, wings, and corn are pretty darn good as well. I think my only complaint is that I usually get meats such as tripe and tendon at other places, and those are not offered here. read more

Ok so in reality this is 4.5 stars. Really cool spot that's well decorated. I particularly liked the empty Buddha bottles behind the bar. It's a specific bottle and the person with me knew what it was but I can't remember the brand now only that they had a really cool effect. The main event, the pho, was delicious and the reason my 4.5 stars is rounded up instead of down. Broth was absolutely delicious. Savory. Perfect level of saltiness and umami flavor. I liked it so much that I ate it without taking a picture. That's how you know it's really good food because all thought goes out the window once you smell it! I'm always a fan of the rare beef which cooks in the broth as you eat it. Seemed like a good pink color when we started so I was very pleased. We also got the chicken wings with fish sauce. I don't particularly crave wings but my dining buddy really wanted to try them because he hadn't had them in a while (says his aunt makes the nest vietnamese food he's ever had). He was pleased. I liked the flavor. Fish sauce is so good when it's used well! So a little stench for all the flavor was well worth it. The pretty good parts were the cream cheese rangoons and the bar seating. I thought the dough was a little thick and more puff pastry than typical. But I mean, I still ate more than my fair share. As for bar seating, we got lucky and snagged the last two spots at the bar. With social distancing, half the tables were blocked off but the bar was at full capacity (aka sitting next to other parties). I know they're doing the best they can so I hope restrictions ease up soon and they can get back to using all tables. They filled water glasses for everyone at the corner of the bar right in front of us which was totally fine, but then left filled glasses there while we were eating? I thought they would have moved them after filling and was a little worried I'd splash my pho in one of the cups. So, just a slightly weird spot to keep water is all. All in all, good! There's only one size for the pho so we ordered one and had them split it into two for us. So that's roughly $5 a bowl of delicious pho. The color of the broth intrigued my interest to come here to try this place and I'm glad that I did. The five spices fries were really good. I never thought of adding five spices to them but why not- I add it for fun with other dishes I cook. The pho roll wasn't what I was expecting. It literally is just Vietnamese grilled beef with pickled veggies wrapped in the thick noodles. I don't know- I was expecting something crazier. It was good but not worth the hype. I can get great Pho in the neighborhood that's only a short drive away? I'm down. I will be here often. Pho and Bar serves a "build your own bowl" style of pho where you choose your soup base and add any your proteins/veggies you want starting at $10.50. Portions are huge and there's a good amount of meat in each bowl. I've had better broths, but this one is still pretty good and flavorful for their traditional pho (7.5-8/10). I've done mostly take out so far, but they do have a patio and indoor seating available. Pho and Bar is not your traditional Vietnamese restaurant and has some interesting appetizers (cojita corn, a variety of different wings...) . I'll definitely have to come and try them sometime even if it's just through take out (which is packaged well and ready quickly). For main dishes, they have 3 "base" pho broths, banh mi, rice bowls and vermicelli bowls where you pick your proteins. So - I'm glad there is pho in my neighborhood where I can easily walk to from City Park South/Congress to Uptown/City Park West from mi casa. And it's a cute place to socially distance and meet people outside for drinks and noms. It use to be Jax but what a nice replacement. Pro: 1) decent traditional beef pho 2) vegan pho options 3) banh mis are decent and comes with fries/spicy mayo sauce. Will ask for more meat and pickled daikons/carrots next time. It's really pricey at like $10 but if you are not driving to Vinh's near federal, this isn't awful awful. 4) decent outdoor seating options Cons: 1) not a fan of the spicy house pho, but that is because I don't like shrimp paste and it's not spicy despite it saying it is spicy. FYI - def not kosher for Shabbat night. Hahaha. But it's not listed as an ingredient which is strange since many people have a shrimp/shellfish allergy. I wouldn't have known unless the waitress told me when I asked about the difference. Glad I didn't take my best friend here bc I would be sticking an epi in her. But - Did get to try a sample of it and it's heavy on the shrimp but my other half liked it - so to each it's own. 2) no chicken broth options but you can add grilled chicken to your vegan or beef broth 3) higher pricing on the appetizers for summer/spring rolls and basics but oh well I don't have to drive anywhere Honestly - great to know when you can't get to federal or just want some warm pho for the upcoming winter that this is around the corner. Wow! I am SO EXCITED this place has opened. It's a wonderful addition to 17th street Uptown. The owners also own Pho Haus, my absolute favorite pho spot in Denver! When I heard they were opening a pho spot in my neighborhood, I knew I had to check it out! One of the elements that makes this place a star is the variety of broths you can choose from: traditional, haus (spicy version), or vegan. I LOVE all three of the broth options, and they are the same famous family recipes as at Pho Haus. Other than pho, they also have an expansive menu: banh mis, vermicelli rice noodle dishes, Asian chicken wings, edamame, crab rangoon, etc. The menu here is larger than the menu at Pho Haus, and there are more options for a bar-like feel, including a brand new cocktail menu. There is also lots of outdoor seating, right on 17th, which is great for people-watching and enjoying our amazing Colorado sunshine. Finally, the service here is excellent! Family-owned, friendly. While in Denver, I wanted Pho because it is freezing being a Cali kid and below 20 degrees it is a must. With all the expectations of good Pho being close to Westminster all my life I didn't expect this pho to be that good. It's actually really great. My friend and I arrived at Pho & Bar at 9:05 PM, well within their listed business hours of 12:00 PM to 9:30 PM. Although near closing, the restaurant had plenty of diners still eating inside, outside, and even the bar was full. The host seated us but then casually informed us that the kitchen would be closing in three minutes--meaning 9:08 PM. I asked for clarification: did this mean all customers, including those already dining, would be required to leave by 9:30 PM? The host confirmed, saying everyone had to be out by then. Faced with this absurdly rushed timeline, we excused ourselves and left, opting to eat at Steuben's instead. Ironically, on our way back from Steuben's at 10:25 PM, we drove past Pho & Bar and saw the restaurant still buzzing with diners--nearly an hour past their supposed "closing time" and far beyond the three-minute kitchen deadline we had been given. This experience was both baffling and disappointing. Restaurants should not seat customers if they intend to impose arbitrary and contradictory restrictions, let alone expect patrons to rush through their orders and leave on command. Clearly, their posted hours mean little, and their treatment of customers even less. We won't be returning. read more
