Drove to Maple Valley to try this out and was pretty happy with the Pho. I got the beef pho with steak and brisket. The broth was a tad too salty, but the meat was very high quality unlike most places that really mess this up. My wife got the veggie pho and really liked it, but found it a tad salty too. I didn't come in here with high expectations, but they certainly shocked me. The space isn't huge but we were able to get a table right away. Our server came and took our order pretty quickly. We ordered the Beef Pho, a Beef Banh Mi Sandwich, and the combination plate. The Beef Pho was so flavorful and the portion was pretty big. The Bahn Mi was so good. The veggies they put on it really set it off. The combination plate was also very flavorful. The salad dressing they use is unique and it's really good. The beef on the combination plate and on the Bahn Mi sandwich are the same but they have completely different flavor profiles based on what they're on. we've always had our "go to" pho place but didn't want to drive that far so decided to give this place a try. I cannot even begin to say how happy we did. We might just have a new go to place!! We had to large combo bowls of Pho, an order of fresh spring rolls, eggs rolls and potstickers. Everything was extremely fresh and tasted delicious. If you get anything else that's non pho related it's too sweet. Any of there meat dishes the meat is way too sweet. Maybe it's a me thing because I'm not a sweets person but they could lay off the sugar a bit in the recipes. I would order other dishes a lot more if it weren't so sweet. read more

I used to live in Maple Valley several years ago, so I've eaten most of the spots around the city and I can definitively say this is the best restaurant in Maple Valley. I been here three times and it's always consistent and the portions are very big for the price. The last two times I've ordered the Bun Bo Hue and it has everything in it including oxtail. It's a big bowl and I need to have my "A" game to finish it. I like how they put plenty of noodles too. In other places, some don't add enough noodles to the bowl. It's not just the noodle soup bowls that are good values. My friends have ordered the vermicelli and lemongrass chicken rice bowls and they need to-go boxes because it was too much for them. If I need to pass through Maple Valley, you bet I'll be stopping here even if I'm not hungry. I'll get something to-go because I know I'll regret it if I didn't stop. The only drawback is that this place doesn't have air conditioning or at least they need to increase the power. It can get warm in there, but I'm willing to look past it if the portions continue to be large. read more

This place was recommended to me by several fellow foodies and since it is so close to where I live I gave it a try. Tucked away in a strip mall, there was adequate parking. Parking lot was clean and presentable. They have a very extensive menu! I selected the shrimp spring rolls to start. Generously sized portions and you can tell that they were made fresh. Nice peanut sauce to accompany them. The star of the show was the beef brisket pho. Again, nice sized portion and very fragrant and appealing. The broth was fantastic. In Maple valley on a cold fall night and you look around for a hot Pho and this is the place with the highest ratings. And they did not disappoint! The Pho was amazing, the hot chicken broth with chicken which was cut perfectly and were very soft and tender in the broth and with lots of veggies. I am absolutely obsessed with their salt and pepper tofu -- the yummiest and most memorable tofu dish and I've had. Simple, yet delicious. Food is always delivered to my work and yet, this dish is always warm, tofu is crispy, portions are always consistent, the garlic, the flavorrrrrr! Nothing makes me happier than knowing this delicious pho and Vietnamese restaurant is but a few mere short miles from my new place. When I moved to the area I was afraid I'd have to drive far, far away to get good pho. Nope, they've got it right here at Pho Binh Minh and it's simply delicious. The broth tastes like it's been simmering for years, full of rich, traditional pho flavors and (in the combo, which is my fave) they don't skimp on the meats or noodles. Next: their vermicelli bowls. Full of that perfect combination of thing, soft vermicelli noodles, grilled chicken and tofu, and crispy fresh veggies...and of course served with a simple-but-sublime traditional dressing that ties everything together. This dish, along with the pho, travels well for takeout and makes great leftovers. Finally: their banh mi sandwiches. I'm a big banh mi fan, and Pho Binh Minh does not disappoint.
