I absolutely love this place. I love the fact you can build your own pho. The lemon pepper chicken wings; to die for! Typically, I will switch out the noodles for only veggies, and some days they pack veggies in the bowl, and sometimes I feel skipped. Either way, the pho is still really good. I am so happy I tried this place. Brought my mom here for lunch and so happy I did. They were recommended by these young college kids that otld me they had the bomb pho and were super inexpensive. We came after lunch rush time but they were still super busy. We waited for about 15 mins. then got seated. Our summer rolls came out soon after and our pho took a bit longer. I have to say there was only two guys working the floor, taking payments, seating, getting orders and delivering food as well as cleaning tables. They did a great job considering how many peole they had to care for. The broth was so incredibly flavorful. Great amount of rice noodles and tons of white meat chicken. Love that! We love this place! Veggies are always super fresh. I get the vegetable Pho, and the broth is so flavorful. Usually if I get vegetarian Pho, it is pretty bland, but not here. If you are craving something warm and comforting but still on the lighter side, I definitely recommend it. The service is always good, we have been here a number of times as we live close by, and our order was only messed up one time, and handled it very well. I had a terrible experience a few months ago. We use to be regular customers and glad they had a Vietnamese restaurant up here. Unfortunately we had a very bad experience. We ordered food to go and my wife ordered it thru grub-hub so when I went to pick them up, there were two bills attached to our takeout order. One from pho-ever and one from grub-hub. The service person told me that grub-hub didn't get paid so I said I would pay for our order. When my monthly visa statement came out,, both bills were on there. In other words, I had paid twice. The food is well prepared and packed with flavor. Prices are reasonable. Serving sizes are huge. You can never go wrong with the Pho. It is served with Steamed Rice, and BBQ Pork, Beef, Chicken, Meatloaf, Pork Chop, Shrimp, and/or Egg, or a combination thereof, and with a light, fresh salad. It's the perfect combination of flavor and ingredients, which leaves a memorable, delightful taste on the palette. Exotic specialty dishes are also offered, like the Bún Bò Hué (Spicy Beef Noodle Soup) and the Quàng Noodle Bowl. Several sauces are available at each table and/or upon request to increase flavor or complement the taste are offered. My favorite is the fish sauce. Service has dramatically improved. In the past they made some small, innocent mistakes during their busy hours. One time the servers forgot to put in my mother's order. Another time they spilled water on our table as they were refilling our water glasses. But the servers made up the mistakes with their kindness and generosity: on both occasions they picked up the tab! That's what I call great service. The place itself is not a "Fine Dine" joint. Solid spot! My husband and I came here for pho when the power went out in our neighborhood and we couldn't cook. It's nice and casual. They have two sizes, and we both got the large for $1 or $2 more, which was totally worth it. Very flavorful broth, we both got the rare beef one. I didn't come to the actual restaurant, but was able to help myself to their trays of stir-fried items at the Taste of Cardiff event this year. There were two trays of fried rice and two of the lo mein. This looked more like Chinese food to me, even though we do have similar dishes in our culture. Both dishes were okay tasting...there wasn't anything spectacular about it. I wouldn't mind trying more traditional dishes when I'm in the area though! read more

A wonderful location for another Vietnamese Pho restaurant however I have to agree with other yelper's about the service and a few of the wait staff. Our service time was not long however, some of the young staff have no experience waiting tables and confusing orders. One bus boy with his backwards cap came to clean our table and did not even look happy to work there. Dressed in untidy street clothes, unpresentable with long key chain hanging from his back pocket. I feel a staff member is really a reflection on your business. The food is good with great portions and I hope this location improves on its service and staff. Also, when a customer asks the staff what something is on the menu, I would think each server should know what is on the menu and talk about it as if it was the best item and they should order it. So I'm sitting here waiting for a menu, or a drink, or even a second acknowledgement that I'm here, other than the "take any open seat" I got when I first walked in about 14 minutes ago. And after trying to ESP one of 5 staff members over and not succeeding, out of boredom I decided to start a review WHILE I'm actually here. A LIVE review! Or as my friends down south say, EN VIVO! Food Survivorman style... So here goes... When I first walked in, there were 2 other tables. At this point 3 other tables of indigenous Encini-tites have come in after me and have been greeted, given menus and have successfully located a source of water. It is minute 16 and my ESP is clearly not working. Will have to discuss this with my support staff after this expedition is complete. I have heard word from locals that there has been a severe shortage of rainwater and water supplies are low. My chances of locating a fresh glass of ice cold water are diminishing by the minute and things are starting to look grim. After having a nice chitchat session with the attractive young lady waitress, a young man has finally come over and asked if I had been helped yet to which I just shook my head and gave him a look of :/. But I finally received a menu and I can now decide on wh.... "Ready to order?" Another staff member asks. "Not yet," I reply as I had just received the menu 3.4 seconds prior and have yet to see what the offerings of this feeding establishment were. The menu seems standard. Pho, rice dishes, banh mi. The local Encini-tites have been in great need of a Pho restaurant, as prior to this place there were none. I had heard stories of the locals trekking beyond the hills to Vista, San Marcos and even Mira Mesa in search of pho. But now they have found a pho source within their coastal suburban jungle. I am happy for these Encini-tites. I decided to try a #5 Pho tai nam gau. Rare steak, well done flank and brisket. The consumption of raw meat is sometimes a dangerous move, and especially in a coastal suburban jungle such as this, poorly prepared raw food can leave you with a really bad tunmy ache. But this is Food Survivorman. And I'm famished and can't wait for meat to be cooked. I also ordered a chicken banh mi togo for my support staff to eat later. The pho has finally arrived. It smells much like the pho of other suburban jungles I have ventured to before. But I do not see raw meat. I am too famished and it is now minute 26 and I haven't the energy to raise concerns. The ice water has also come. It is icy. And watery. I may shed tears from joy, but i have fears of making my newly found ice water salty. This would cause dehydration and the need for more ice water. A side dish of the usual sprouts and mint and jalapenos has found its way to the table. I see over at the end of the table there is sriracha and hoisin sauce. I pour a small amount of sriracha on the plate and attempt to do the same with the hoisin. None comes out. Is it empty? No. The bottle feels full. The cap has dried out and a crusted layer of hoisin sauce is stopping the river of hoisin sauce from flowing through. Was not aware that Encinitas had dam-building beavers stopping rivers of sauces from flowing. I squeeze harder. Nothing. I am wearing the local apparel of a white tshirt and fear getting my shirt stained. With my renewed strength I pull off the cap and pour out hoisin sauce. A small victory. But a morale booster nonetheless. I may finally begin eating my pho. With hidden excitement, I dig in. It is passable as pho. Having spent many years living near the original Little Saigon of Westminster, I find myself often disappointed by pho restaurants in other suburban jungles. This one is ok. Not the best, but not the worst. But their organization and service needs work. I have now received the bill and pull out the local currency of dollar bills. I leave a few extra as gratuity as is general courtesy in these parts. I wish I could leave more as I generally leave an excess of currency. But the service was lackluster and I leave the minimum required amount of 18% as not to be labeled a cheapskate by the locals. I see my support crew coming to get me now. Well... The food is excellent here and well above average for Pho. I have eaten at their other location in Vista on Melrose for some time but this location is closer to me since I'm living West of El Camino Real now. Only downside was that the service was way off. Waitress was def' not on her A-game. Food was slow to come out, she was forgetful for a few things we asked for. Outside of this, it would have been a 5-star experience. I will absolutely dine here again but ask for a different server than the one we had. Great food. Great prices. Nice location. Some of the best Pho around! read more

When a restaurant is new it should do it's best to be welcoming to new customers trying out the restaurant.... Otherwise why would customers come back? I went there on a Sunday afternoon ...after lunch time since I read on yelp that the service was really bad. So I thought I'd check it out when they are not crowded. The service was still bad. I agree with the other reviewers, that the staff is young and don't know how to service customers. A real downer. For a new restaurant, the Decor looks outdated already. There is a sheet hanging from the door opening separating the kitchen. Looks tacky. The tables were slight dirty and seats were slightly sticky. As for the food, I ordered beef noodle soup and rice noodle soup thing. My rice noodles were not all the way heated up, and they were hard on some of the edges like dryed out. The beef noodle soup was not that bad, but lacked any depth of flavor. Just a salty mess. You can't compare this to the Vietnamese restaurants down in Miramesa. Too bad, I live in Encintas and would love to have a Vietnamese restaurant close by, but I would rather drive 20 minutes out of my way for better food. I saw two tables get served food after I ordered. The service is slow, and I didn't even come on a busy time. I can't even imagine coming here doing any dinner rush hour. Service = bad - strike one Food = blah - strike two Decor = outdated - strike three Usually a new business should start off on the right foot by having great service, good food, and a nice ambience. I ordered Spring rolls , Thai tea, and Vermicelli Noodles with Grilled Pork and egg rolls to-go today around lunch time (1pm). When I walked in, it was a full house with people eating and waiting to be seated. I think they should have one or two more employees because I only saw 2 main guys taking orders, cleaning and whatnot. Service seem a bit slow but it's understandable since they were extremely busy. Anyways I just finished eating my Vermecrlli noodles and it was fresh, and delicious. My mom had the spring rolls and she said that too was very fresh like it was made on the spot today. The Thai tea is also made fresh, not pre-made unlike a lot of pho restaurants I've been to before. Overall, I loved everything and this is now my go-to fave vietnamese food spot in Encinitas. I have been wanting to check out the location in Encinitas. I have been making trips to the location in Vista and it's nice to now have them walking distance from my home. I had a great experience. I stopped in for lunch with my brother and sister-in-law. We were able to get a seat right away although the restaurant was close to full at lunch hour. The staff was excellent promptly getting drink orders, delivering food and seeing we had everything we needed. I felt well cared for and enjoyed the sincere smiles. I think the food here was slightly better than I have had in Vista. I got the Bun vermicelli bowl with barbecue pork and eggroll. It was delicious with lots of flavor and contrast. The greens were leafier than I have had at other restaurants which I really liked. They now stand as my favorite Vietnamese restaurant in Encinitas and I will be back soon. read more

We live near Pho-Ever so we were excited to have a pho place near us. The food remains consistently good but the service continues to lack in many areas. There are lots of young men working but rather than checking the tables for orders, water, or service, they just stand around the back counter and talk. We had to wave them down several times just to get water, to get chopsticks, to get an extra bowl, even to get our bill! We did notice that there was hardly anyone in the restaurant on Saturday at 5:30pm. Maybe it's because the service is so bad. read more

Pay with cash. Before I go further into that first sentence, let me say the food was very delicious. Portions are pretty big and the price is definitely decent. The fried Calamari alone could get you full if you're eating by yourself, so if you're in a group, find dishes you can all share. I got some pho that had beef and pork. I go a bit spicy with a 7 out of 10 level. The beautiful girlfriend got vegetable stir fried chow mein with fried tofu. In the pics you can see how huge the portions are. For the food itself, I would of given at least 4 stars. My biggest issue is the service. This would of been a 1 if Andy (host who helped us at the end of it all) wasn't so helpful. When we went in and got serviced, it was early in the day. Very timid lady host took our orders and gave us our check at the end. Paid some in cash with the rest in a card. After running errands all day, we look at our bank statements when get home. We got charged 3 times with the first charge full price, second charge of 0 and third charge with the total after the cash was used. We called and Andy offered to reverse the partial card payment. Also said since the rest was in cash, they could give us credit for our next visit. Overall, foods great for the price, but pay in cash to avoid the issue of multiple drafts. read more

We were looking for a casual place for dinner on a Friday night that was on the cheaper side and stopped in at Pho-Ever. Some thoughts: - Huge menu...took a while to decide what we wanted. - We ordered the Chicken Noodle Soup Pho, the Rice Vermicelli with Char-Broiled Shrimps, and the special Vietnamese Lo Mein. All were really really good. They didn't seem to know how to enable us to split the soup between three people as it took them a while to find a ladle for us to scoop it out into three small bowls. Once we had the ladle though we were good. The Vermicelli could have used a little more shrimp, but overall it was very fresh tasting. The Lo Mein was incredible, and the broth of the Pho was definitely a highlight. - Atmosphere in the place is a bit cold feeling, but not a big issue for us overall. The fact that we could get a booth was a plus. - Reasonable prices for the amount of food provided. Bottom line: We have a new Friday night option and will try ordering take-out next time. I keep wishing this place was better, but they seem to disappoint everything time. After giving them a few opportunities, I think it's best to call it quits. Today I decided to give them another shot tried their lemon pepper wings since they had good reviews on Yelp. I called to order to go and someone finally picked up after having the phone ring about five times or more, but then I was asked to be put on hold. They didn't put me on hold properly, so I could hear them in the back talking about having to cancel an order. A minute or so later, I'm picked back up and I place my order. I'm informed to give them 20-25min since "this will take a while". I arrive and pick up my order 25min later ($8.95 plus tax, came out to under $10). The customer service seemed lacking, so I was glad I took my order to go. The wings were cooked decently, but they were sitting in a pool of their own oil. The lemon pepper sauce came on the side in a container that for some reason was placed upside down in my bag so it was leaking out. I did think the fried slivers of green onion on top was a nice touch though. Overall, I think the wings would be okay if the presentation was better, but dealing with wings that have just been sitting in their own fry oil isn't acceptable. 20+ minutes is more than enough time to fry the wings and let the excess oil come off before boxing them. I believe it's time to stop giving this establishment money for mediocre dishes, which is a shame to say since I liked having a nearby Asian restaurant that I could go to while at work. read more

Starting from the smiles and friendly greetings as soon as you walk through the door, straight to the beautiful ambiance they just recently put together during their remodel. Don't even get me started on the wonderful, charming and attentive servers!! They're all amazing! Seems like they're all family and it reflects on the service. They look like they all truly enjoy working there. That alone made my wife and I want to become regulars here. AND WE HAVEN'T EVEN GOTTEN TO THE CUISINE YET!! OMG!! The chefs in that kitchen are superb! Ive yet to be disappointed. I have somewhat of an eclectic palate, so being able to go to one restaurant and be able to pick from a wide variety of dishes like the filet mignon pho soup or the shaking beef rice plate. OH! Went here last night and was very pleased! I live in Orange County near a few areas where Vietnamese food has a large presence. I can definitely say this place is better than many of them. First, the service was excellent. We first called & asked if it was ok if we came in 20 minutes before closing & they were very kind about it and said of course. We got there and we weren't rushed. The servers were very welcoming and friendly, we even had other servers check in on us to see if we were okay. I always judge a good Vietnamese restaurant by their Pho broth. Their broth was very good & authentic. My only complaint was the noodles were a little overcooked and soft. We also ordered the chicken wings which is a MUST order! One of the best Asian style wings I've had. We also had the rice plate with BBQ beef & pork which were good as well. It comes with this tasty sauce that really complimented the meat. We even tried the strawberry milkshake which was delicious and not too heavy - it did taste more like a smoothie but I prefer that than a thick filling shake.
