Phoenix is still the best place to get a burger and beer in New Braunfels. After 3 years, I still usually get the blue burger, though the frito pie is delicious as well (double shot chili, because I usually go for lunch and the ring of fire can leave me unsuitable to be around other people.) If you're hungry, get the sweet potato fries and blue cheese dipping sauce with your burgers. Best sweet potato fries anywhere. The bartenders here are awesome. There are no servers, so you order drinks and food at the bar. Today, the place was packed and there was only 1 person to take care of the entire saloon, yet she kept up with everyone's order and managed to keep everyone happy. Lots of local/Texas beers on tap, including 3 of Texas' best IPAs (I just close my eyes and point.) Be warned - it can get crowded, especially on a cold Friday afternoon when everyone wants good chili. read more

After a long day floating the river the Phoenix is the best place to relax. We visited on a Saturday evening expecting it to be packed but we had no problem ordering and getting our food fast. One of the first things I look for in a saloon is the beer selection and this place does it right. We were pleased to find lots of good local microbrew choices along with the usual standbys. The bartenders are very friendly and helpful in steering us towards the right level of hot...and Hot chili is right! We met a local while we were perusing the menu who was eating the 'Ring of Fire' chili and sweating! He also told us that interesting enough we were eating Chili in the same building that chili powder was invented! The hubs said that his Frito Pie with 'Ring of Fire' on it which he said was nice and fiery but still had lots of flavor. He was supremely satisfied and out of the blue will still randomly say, "man that Frito Pie!". I had the veggie chili and was surprised how good it was considering the rest of the chili options are all steak meat. We lived in New Braunfels and Canyon Lake for about three years and recently relocated back to Northeast Texas. I can honestly say that Phoenix is one of the places I really miss about the Hill Country. Great food, good beer and a cool, Texas-casual atmosphere made this one of my favorite haunts when we lived there. The great, spicy chili will leave you crying in your beer...for MORE! And, there is that cool leg lamp over the bar at Christmastime! Great place to cool off with a cold one and sample some really great chili! The owners have done a great job in capturing and creating a slice of Texas. Nestled in the heart of downtown New Braunfels, the Phoenix Saloon is a great place to watch a band, have a cup of chili, and grab a beer on tap (or two)--- all moderately priced. The interior is nicely done from the long bar, to the buffalo head on the wall, and tiled ceiling. Moreover, the bathrooms are very clean with a long sink. There are two stages: a smaller on upfront and one hidden behind a larger projection screen. I'd like to see Phoenix utilize the big stage, but I think that will be when a well-known artist plays. Lastly, they have some seating outside and smoking is not permitted inside--- big plus!!! Phoenix Saloon is now a favorite! Next time, I am going to ask that I get a tour of the entire building and especially the basement (not that they do that), but I am just curious from a Texas history and architecture perspective. read more

Worst service ever - more accurately - no service. Sat down on a Saturday night at 6 - pretty empty - not even half full. Sat at a table for 20 minutes and finally left. While the rest of my group tubed, I decided to hit the Natural Bridges Caverns (a must see and be prepared to work!), an antique store and then stopped in this gem. Granted that the fries green tomatoes advertised outside caught me, the bartenders kept me and brought me back with some of my friends. The only reason I don't give it a 5, the fried green tomatoes. Tomato slices were too thin & not firm so they really didn't hold up the the batter which while flavorful, was too thick for the slices. Bar service was spot on - down right neighborly and didn't miss a beat when customers started to come in in droves. I used to love to come to this bar. Tonight was Wassailfest and of course, there were people everywhere. Instead of the bartenders watching the line and making sure that everyone was served as they were in line, people were breaking in line and they were being served. I called it to their attention and then they were rude. Won't be going back there any time soon! I waited in line for twenty minutes and this guy who appeared to be a friend of the tiny little bartender attempted to be served first and then had the audacity to justify his behavior. read more

I had the double shot white - shirt chili burger and I have to say that it's the best burger I've had in a long time! For those who love spicy food, this is the place to go. The saloon gives your three options of hotness: single shot, double shot and ring of fire. I love spicy food and the double shot kept my mouth on fire! Well the way we found this place was like three weekends ago whike I was flipping through chanels and saw this place in the travel chanel. We were both hungry for chilli, so we decided to check it out. The deep fried green tomatos are awesome Bowl of chilli is pretty decent. So I've been here many times and always loved the food. Today not so much. Don't know if they changed how they make things or just someone new in the kitchen. Ordered a simple BLT and sweet potato fries. Came out, bread looked stale and not even toasted. The bacon was a woopin two slices. The sweet potato fries for the most part were good but the larger ones were under cooked. I would stick with the burgers and the chili they have never disappointed. The positives.... The Phoenix is ALWAYS a great time! I used to live in New Braunfels and it starts to be a local hang out where they know you when you walk in, which is nice. Finally tried these digs on the advice of a friend, and was quite disappointed. Granted, it was a Sunday afternoon, but there were countless children shrieking and whizzing about with wreckless abandon like free radicals in a science experiment. Distracting - parents and manager all absent. But after a few close calls, we carefully navigated ourselves to a safe table, as there was no door host present and then after a couple minutes, sneeked over to the bar after no wait staff emerged. No problem, but it was almost a combat situation. Had the Bleu burger and the Frito Pie. Both fell a little short. Burger meat was overdone and the bun was cold and doughy. And C'mon, a few measly small morsels of spiced sirloin on my chips was an insult to the old "Frito Bandito" within me. But the beer was frosty and the environs were cool, although this joint needs a little more taxidermy or some type of additional nostalgia on the walls. The impressive but lonely buffalo head needs some company. Concluding, a place of this historical proportion can do better. And I'd say, with a little fine tuning, ya just might look up one day and see Anthony Bourdain, Alton Brown and Guy Fieri all sitting at the same table next to you. Here's hoping... Had the double shot chili burger, the chili is infused into the meat, not poured over it. Double shot spices it up with serano pepers. My wife had a cheese burger. Both had excellent flavor, however, both were a little dry from over cooking, maybe ask for medium? Also ordered the sweet potato fries, these are fresh potato wedges and were flavored and cooked to perfection. The atmosphere is New Braunfels, laid back and casual. I'm not normally a big fan of chili, mainly because the folks who make chili tend to focus on how hot or spicy they can make it (which I don't mind) and they generally tend to add beans, which I do mind. This place not only makes a good burger and even a good chicken sandwich (I've had both so far), but they also make a mean chili! You get the choice of how hot you want it and whether you want beans (default is no-beans), but you can also add to it from a handful of choices. The best thing for me is that the meat is not a scarce ingredient. They use nice big chunks of sirloin! Warning, they do have a very hot option that you will need to sign a waiver to get it! read more

This place has 2 of my favorite things, food & alcohol. Live band on the weekend was cool. You order food and drinks at the bar, it did take quite awhile for them to serve food BUT it was SO worth it. Got the blue burger (bison meat) and sweet potatoe fries. This doesn't even deserve the one star I have to give it. It's a Tuesday night & my best friend and I decided to do something different and try the Phoenix Saloon. According to Yelp, it was a good place to try. Well that was so so so wrong. As someone who has spent a few years in the food industry I am ABSOLUTELY appalled by the lack of customer service we received. There were maybe a whole 6 people sitting at the bar, and we chose a table. Not one employee welcomed us in, said a single word, or even acknowledged that we were sitting there for at least 15 minutes. We were finally so angry (and super hungry) that we marched on out. So I really hope this review gets some attention and that the employees of the Phoenix Saloon have some sort of scolding on their lack customer service skills. Good old fashioned Texas chili and burgers. Cornbread scores high also. Located in a hundred year old building/bar/saloon with wooden floors and brick walls. Large tap selection. Family friendly during the day and a bar at night, kitchen closes at 9. Be ready to yell and not hear your neighbor during live music nights.
