Not a huge fan. I get that it's not really a restaurant. It's a bar that serves food. I really get it, but if an establishment is going to serve food it might be a good idea to have food servers. Our nephew brought us here for the chili. If you are hungry for chili this is the place. The chili coke rated in degrees of heat. I understand the draw for the chili. The burger, sandwiches and other items are just standard nothing special. People have to go to the bar to order food and to get drinks. There is no table served except to bring food from the kitchen and someone cleans off the table when people leave. The live music was....just background noise. I guess it was just open mic night or something. Great selection of beer on tap. Three solid bartenders who seemed to keep the place going. I have come to this place for years and absolutely LOVED the chili dogs. The last two times I have come it has been horrible!!! The last time they had no hot dogs. We tried again today and the service was less than stellar, after waiting half an hour (only 2 other patrons present) our chili dogs arrived and were store bought regular wieners and a sesame seed bun with 6 fries on the side. This is not at all what The Phoenix used to be like. When we complained the server was annoyed and had them remade with the correct bun/wiener then dropped them off at our table without ever even acknowledging us. As much as we used to love this place, we will not be coming back in the future. I'm not sure if management has changed or is simply unaware of the poor performance of the wait staff and food but I hate how terrible this place is now! read more

Unless you eat there for lunch...save your money. Been to this place three times. Fri, Sat and Sun nights. Drafts are $4.50 and up and in 12 oz glasses. They have a kitchen until 9pm. food OK, chili, burgers, sandwiches etc. Music is over-hyped on their page and on ReverbNation...bands are nothing special, sometime a cover, mostly patrons are over 40 and there to 2-step with younger gals. Bartender could care less, waited over 5 mins. to be greeted and the place was dead ! New Braunfels isn't San Antonio or Austin folks, not much of a night life here unless your 20-30 and hang at the Pour House up the street with the bikers and the "beautiful people" of New Braunfels. This place was a real treat for the history, ambiance and tasty food. I had the bacon and blue burger and the xx chili. Loved the chunks of sirloin in the chili, which is heavy on the famous Phoenix chili powder. We got a side of the ring of fire and used for an xtra kick. The only thing is one waiter worked the bar and the whole place--5 tables and 10 individuals at the bar. Not sure how he is managing but he is! Save the trouble & money and go to the Mobil gas station for a lunch instead of this travesty. I have seen this place a ton on the food network. So it was on my bucket list. The building itself is awesome.... but that is where it stops. The chili that is supposed to be legendary tasted like they dropped the small bottle of McCormick chili powder in it- that was all you could taste. But at least it had a flavor. The cornbread was dry and bland. The hamburger tasted like it came from Sam's Club frozen section. It needed 2 tbsp of ketchup to add some pizzazz to it. It gets worse. The 6 millenials behind the counter of this slow Saturday were busy talking & texting to be bothered to take an order. I have visited this establishment twice, once 2 years ago for a concert, and drinking, and just the other day, specifically for a burger, after seeing them reviewed, and awarded on a TX specific, "Foodie" show. I knew, based off of the tv show, what I was going to order, before I got there, a Chili Cheeseburger. It was a Monday, so I figured they would be slow, but I guess everyone else saw the show too! They had two bartenders, and 1 cook working. No table service available. I waited at the end of the ordering line for 20min, then the second bartender announced to the people in line behind me, that he was now taking orders. So they got to order ahead of me, and after only waiting less than 5 min. This also split our party of fives order, and messed up the timing significantly. The first two of our party got there order after 35 minutes, the last three got our after an hour, and 15 min. They were done way before we got ours. All five of our sodas were flat. I almost cancelled my order, and wish I would have after we ate. It was okay. Nothing special. I might order something there, if attending a show in the future, but wouldn't ever go there just to eat. Under-staffed, under-trained, under-friendly, over-rated. read more

Chicken sandwich is OFF THE CHAIN. Seriously, GET IT. The burgers are meh, dry, and the chili burger is deceiving (lol, I know, this is ridiculous). Anyway, forget about the burgers. Chili is good, but no comparison to the chicken sandwich. It has mango chutney that's just amazing. If they made more food like this I'd go all the damn time. Their wide selection of beers on tap are great and most of the bartenders are awesome and informative and will give you as many samples as you want. Except one, who was seriously rude and served my sister chardonnay in a water cup. (black hair, hispanic looking) The girl bartender, though, is awesome, super nice, and very helpful. As undying as my love is for the phoenix, they have been slipping lately. Service has been slow, and our chicken sandwiches were burnt to the max the last time we went there. Although we waited an hour and 20 for our takout last week, the cool blondish bartender dude gave us free drafts, so I can't complain there, at least he wanted to make it up to us, and I know they were short a cook, so I don't hold it against them. I know sometimes owners and managers check these, though, so I want them to know. One other minor complaint, is that they always have someone playing live music there, which is awesome, but it's always too damn loud. This is an amazing bar. We came here to pre game before a concert and the staff was super friendly, quick service, nice selection of draft beer and their Phoenix colada was awesome. They started me a tab and just asked for my name not asking to hold a credit card or anything. We got a small bowl of chili to try since it was featured on the travel Chanel and food network we had to see what it was about and it did not disappoint very good food. Was in New Braunfels today and wanted to eat lunch at a place that had some history behind it. Since the weather was getting cooler, I wanted to get a bowl of chili. Ordered the Texas Red Chili and couldn't have been more pleased with my choice. The chili is made with real chunks of sirloin, no beans, and had just the right amount of spice to it. Also served with a healthy piece of homemade cornbread. The entertainment today was a group of senior ladies doing a little line dancing. Neat place to visit. Met there with friends on Sunday evening, July 28th. The kitchen was not fully functioning that evening, and that can be understandable as things do malfunction. But we wouldn't have stayed to eat anyway as the music was so loud you couldn't even hear yourself think, let alone have a conversation with the people at your table. I simply adore the Phoenix and will jump at any chance to drive down from Austin for a show. The place is clean, the staff is awesome (owner is a doll, bartenders are so much fun), acoustics are WONDERFUL, and they have vegan chili! It's located just off the roundabout on a very charming little side street lined with brick buildings housing stores and pubs. The cover is very reasonable given the level of talent, which tends to vary in style/genre on any given night, so you're sure to find something you like. I cannot speak more highly of how much I love this place. I come every single time I go tubing or any time I am in the NEW Braunfels! The staff is friendly and the place is filled with nice locals who are always down to strike up a conversation. The place is home to some amazing live bands, both small names and big. As a bar, I could really care less about Phoenix. They have a nice beer selection but New Braunfels needs another bar that books mainly Americana bands like Schlitterbahn needs another water slide. I do, however, find myself going for lunch when it isn't crowded. The food here is pretty exceptional. Burgers? Likely the best in town. Chili, excellent. Be forewarned the "Ring of Fire" really refers to what will happen to your nether regions after you eat it. I enjoy spicy, and I do like this chili, but even spice lovers will find the double shot adequate. You absolutely must get the sweet potato fries with the blue cheese sauce. Do what everyone tells you and try their chili! I had the "Double Shot" chili and it was pretty hot, but if you really like it hot you still have 2 more levels of burn you can try. I really liked mine, it was hot but not too hot that it covered up all the delicious flavor! My husband had their Blue Burger and he swears it's the best burger in Texas so far! Great live music bar, in fact it's THE live music venue in the river region. There are lots of clubs in the area that have bands. If you want to go a place to see a show and feel like you're in a music club, this is your bar. They have a full bar (including 30 beers on tap), a friendly staff, and an excellent sound system. Our evening was open so we decided to come back and listen to live music that night. Sat at a dirty table that no one ever came to clean, had a draft beer that had something else in the class prior to my beer, could not drink it but it worked out ok because the music was so BAD it drove me out of the place anyway. We elected to dodge the crowds at Gruene Hall and go here after the rodeo. Beautiful bar. I was surprised at the big selection of beers on tap. Kaitlin the bartender was very knowledgeable and enthusiastic about the beers, and encouraged to try samples, even though it was late on a Saturday night and somewhat crowded. The live music was good. Most of the floor area is taken up by low tables, where people sit and watch the band, so no one was dancing. Not much opportunity for mingling, unless you can squeeze in at the bar. They should get some high tops. read more

After a full day at Schlitterbahn, my wife and I were starving for a burger and a beer. Surprisingly, this was one of the few places open on Saturday night that wasn't just a bar and relatively smoke-free. We ordered some local beers and burgers (which came with our choice of buns and chips) and were totally satisfied. The burgers were really good (but then again we were starving so maybe anything would've tasted good!). The Phoenix Saloon has much to offer for lovers of music, chili, and/or history. The saloon was lovingly well renovated in 2010, and has been standing in New Braunfels since it was established in 1871. Back then it was well known to be the first bar to serve women, it's live music, and for the chili powder it's proprietor invented. All but the basement closed in 1918 as a result of the Prohibition, and in 1922 it became a department store. I had the pleasure to watch the Blue Water Highway Band here one evening, while sipping the house secret recipe Sangria (which was surprisingly OK). I unfortunately didn't get a chance to try the chili, but the menu looked tasty (I will definitely be back for a try). I found the venue to be quiet enjoyable for live music. The acoustics were good, the seating was open comfortable community style, and there was some room to dance upfront. The staff were also very friendly. Four stars for a great historic music venue just a short drive outside Austin. read more

This place is known for their chili so it's definitely what you should order. It's my absolute favorite and basically I can no longer eat chili from anywhere else now. It's made the RIGHT way with chunks of beef (not ground beef), no beans, and a deep dark brick red color. Naturally, the frito chili pie and chili cheeseburger are also fantastic! My 2nd favorite thing is the sangria, it's wonderful!! Need to know: -There's no table service. Order at the bar and a runner will bring your food. Drink refills also at the bar. -It's a bar, but it is kid friendly if you go during the day. Don't bring your kids here for supper. -You can personalize the spiciness of your chili by adding "shots". -You can personalize your chili by adding a number of toppings (cheese, sour cream, fresh jalapeño, onions, roasted garlic, and I can't remember what else) -There are a few outside tables but I find that these are generally used for the "smoking section". Hubby and I decided that we must go try the famous chili while in New Braunfels for the weekend. I am more than disappointed and frustrated now. We both ordered the single shot (mild) chili. It came out and we started to eat. I almost cried because it was so over the top spicy. My husband, who eats spicy food all the time, was struggling to even eat his. We asked the server if the mild chili was supposed to be that hot or could we have been served the wrong chili. He said the jalapeños may have been hotter than usual. My husband tried politely to explain that there was absolutely no way that was mild. Server asked if I wanted sour cream. Never would check if we had possibly gotten the wrong chili. I have a super hard time believing that was the mild. I understand and enjoy the fact that chili is meant to be spicy, but this was absolutely way too much.
