So, basically, it is a Subway/Chipotle serving style assembly line pizzeria. You walk in and stand behind a glass that prevents your spit from landing in the pizza ingredients. You tell your pizza maker (loudly) what ingredients you want from their selection. You can either choose from their pizza combos or create your own custom pizza. Choice of sauce, veggies, proteins, and afterthoughts like pesto or red bell peppers. The wait for the bake was pretty short. It is more like a flatbread pizza than a deep dish pizza and is larger than the personal pan pizza from Pizza Hut which is nice because you don't feel so guilty after having just a couple of slices. I ordered the #3 and added jalapeño and pineapple. The other pizza was custom: with red sauce, herb butter, Parmesan, ricotta, pepperoni and meatball, onion, tomato, mushroom, basil, cilantro, artichoke, and pesto. Both were pretty good for fast pizza and they weren't soggy or burnt or oily. Not the best pizza I've had but a good go-to spot when you want a quick pizza fix (as long as the line isn't too long). Fresh, wholesome, and very yummy pizzas custom made for you. Just like a car assembly line, they make your pizza custom built to your needs. You have to like thin crust pizzas. No thick crust here. But then why fill your belly with fattening thick dough ? I like just about everything on it but I am glad they carry ricotta cheese which is my favorite in lieu of the gooey stuff. They bring your order out in about 5 minutes which is awesome service! Just as new businesses have a rough opening, I went in on the first day and had a disaster where they lost my first pizza, redid the second pizza wrong, and then finally did the 3rd pizza right after 30 minutes during my precious lunch hour. They made it right by comping me a free pizza coupon and free dessert pizza to go. Obviously those reviews that talk about mistakes on the first week of opening should re do their reviews because when I returned the next week, my order came out perfectly and on time. Bruh. Chipotle of pizza is right. For just $7.95 you get a WHOLE PIZZA to yourself...better yet, you get to choose your own sauce, veggies, meat, and everything in between. Line is similar to chipotle design and so is the ordering style. You first select the sauce (I recommend red sauce and herb butter combo), then the cheese, then all the veggies and toppings to your desire. Spicy chicken over plain chicken and the sausage is a must! They have all kinds of veggies from mushrooms to olives to jalapeños to onions to tomatoes and on and on. The only criticism I have for this place is that their toppings are not labeled; it would be so much easier and just plain considerate if they labeled all the topping options on the glass so you can decide without asking too many questions and holding up the line. At first, I hated on Pieology. "This pizza is aiight", I said. Then I came to my senses as well as realized it's probably the best pizza in my area soooo now I'm a fan. The key to pieology is not to load your toppings with pizza. I know it's tempting- one price, all the toppings you want - how could you not? I'm telling you that you must refrain! The pizza becomes too heavy & weighed down and gets kinda soggy if you do that. Also, I'm not a huge fan of the "make your own" type of stuff. I feel overwhelmed with choices & normally screw it up so I generally stick to the preselected options and maybe get crazy and add a few extras. So far my favorite pizza here is the Hawaiian one (I forget the real name). My least favorite is probably the buffalo chicken. I've had better & I can make better at home actually so I was disappointed when trying this one. I also like that you can get dipping sauces after & recommend the pesto - so good! The wait can get pretty long especially at night. I always seem to come on a Sunday night for some reason and it's normally pretty busy particularly close to closing. We have not been to this Pieology in over two years since we moved to another area. WOW! Items have gone downhill since we were last there. The customer service 'DOES NOT' exist at this establishment. You are not greeted and are met by very rude people. The person making the pizza gave me the look of death, like 'what the heck do you want on your pizza'. Cold as ice and a really pissed off look. The next person who finished up the pizza was equally as cold but not mean. However, the cashier, NEVER made any eye contact to make sure all was ordered correctly and all was good. She was the dictionary example of 'The Ice Princess'. She made it very obvious that she did not want to be there and wanted everyone to know it. Once we got our food, we were equally disappointed. How can you cook a thin crust pizza and have the entire middle section, soggy, and still raw?? I can tell, no QC and no give a darn if it was done properly or not. Needless to say, this was a hot mess. We also tried their pizza cookie. PLEASE, save yourself money and 'DO NOT' order this dry, paper thin, tough as taffy to chew, tasteless waste of space. One of the worst items I have ever had at a restaurant. There was not one redeeming factor about this dish nor was there anything about this visit I can even remotely say was basically ok at the lowest level. QA/QC and customer service needs to be looked at at all levels at this establishment as it is one of the worst experiences I have had at a food establishment. Shameful! read more

But since that fateful day I started breaking out in hives after ingesting heavy and greasy food... It was easier to just maintain a healthier style of eating) Pieology offers healthier options for people who prefer a lighter version of a pizza. FOOD: I normally order a gluten-free crust ($1.50) with no cheese, light dab of olive oil and marinara sauce, chicken for protein, extra mushrooms, tomatoes, and basil. It's always my to-go option and they haven't disappointed me yet. The flavors are all there and it smells wonderful coming out, and the gluten-free crust is a lot more delicious than you would think. ;) Comes out extra crispy. I may or may not have a slight addiction to this place. SERVICE: Overall very friendly and always makes sure that I'm not allergic to anything and asks if I need them to change gloves if I am. The only thing I've noticed if that their portion has shrunk since grand opening day, their 'extra' mushrooms used to be a handful and half now it's just half a handful ripped into shreds. :-/ ATMOSPHERE: You'll have more of a chance looking for outdoor seating when it's their lunch time rush, because it's like a gladiator fight for indoor seating. I was pretty amazed it was the same price even if you add more onto it! Although don't go crazy as the pizza might be too heavy then get soggy on the bottom so just add what you want in moderation. You just need to wait a bit for them to bake your pizza but wow fresh pizza is delicious. The staff here is friendly and extremely helpful. There are red pepper flakes, parmesan cheese and some kind of herb seasoning for you to add on after as well. I always share a pizza with my husband: half meat for him and half veggie for me :) Half a pizza is plenty for one person! It's a great place to eat with friends and hang out. And everyone gets exactly what they want! The staff is always nice and friendly when I come here. The environment is very open with lots of windows and they keep the restaurant very clean. I could also count the number of pepperonis on two hands for each pie. To top it off, we were issued exactly two packets of Parmesan cheese - or a maximum of one per pie - per the pizza Nazi. I've finally made my round of Pieology, Pizza Studio, and Blaze. They all do the same "make your pizza" but pieology still has the magic. Their marinara sauce is slightly spicy (oh yes) and has the most flavor to me. It's also the only of the three restaurants with spicy chicken which is a little too sour/overpowering for me but my friends always ask for more on their pizzas.. The crust is not too thin that the workers incinerate your pizzas, it's chewy enough so you don't feel like you're eating a cracker with toppings. No matter how I make my pizza here, pieology satisfies my pizza cravings every time. They're quick and always have every ingredient even when it's nearing closing. Much love. Much love... The herb butter and cinnamon pizza are a must have. I love that their crust are thin and crispy!! Too much crust takes away from the toppings. I prefer making my own pizza rather than selecting from the pre-made selection. Accidentally came across this new location in Walnut. I've been hearing about Pieology for forever so I was excited to see what the hype was about. Sadly it was a bit over-hyped IMO. Be prepared to wait in a line that goes out the door, especially during the lunch hour! I think they are related to Chipotle since it's exactly the same "build your own" concept (even the font is the same). They do have pre-made options that you can pick and add to as well. Service is super friendly here, and I even got a free dessert cinnamon pizza for checking in in Yelp! The food however was not my favorite...keep in mind I always like Asian food over American food so its a preference thing. That being said it was definitely not the best pizza I ever had, but it was not the worst. We got the number 3 bbq chicken (mozzarella, gorgonzola, red sauce, red onions, chicken, cilantro and bbqsauce) and we added mushrooms, it was ok. Kind of reminds me of the CPK version but cheaper and not as good. Wasn't a fan of the cinnamon pizza either so good thing it was free. This is my second time at Pieology and I will continue to support the grand openings if I'm in the area because I love the idea of endless toppings for such a great price. This Walnut location can get crowded and very noisy (to the point that it can be difficult to be heard as you place your order as you move down the pizza assembly line). The parking lot can be difficult to find spaces in at peak hours for lunch and dinner. I prefer the City of Industry location a little bit better over this Walnut location; City of Industry location has a better parking situation, is larger inside, and has a quieter/calmer ambiance. Like everyone is saying before, this is basically a Quiznos/Subway/Chipotle style of make-it-your-own food except it's for pizza. Let's start off with the choices to chose from for your customized pizza(s). Sauces - Marinara Sauce, Herb Butter, Olive Oil Cheeses - Mozzarella, Ricotta, Parmesan, Gorgonzola Toppings - Pepperoni, Sausage, Meatball, Chicken, Ham, Bacon, Black Olives, Mushrooms, Red Onions, Green Peppers, Artichokes, Sun Dried Tomato, Pineapple, Jalapeños, Basil,Cilantro, Garlic, Roasted Red Peppers, Black Pepper, Extra Virgin Olive Oil, Pesto, and BBQ Sauce All the ingredients seem very fresh and are in terms of good quality. The pace here for customizing the pizza was a bit slow, but maybe that's because I came about 30 minutes after it opened. The lines weren't very long though. Just a tip, come here early when it opens before noon to avoid the huge crowds later in the afternoon! The seating arrangement is very open with lots of windows and the restaurant is very clean. Now onto the cost and texture of the pizza. I ordered a pepperoni, parmesan cheese with mushrooms pizza for about $8. The pizza was placed to order and after about 4 minutes, my name was called which notified that my pizza was ready. The pizza looked and smelled good. The dimensions of the pizza itself was only about 10 inches in diameter (I'm used to much larger pizzas like from Costco). As I got home to open the box and have my first taste, I could feel that the pizza was very juicy from the sun-dried tomatoes. However, I also could taste the "doughiness" of the pizza which meant it was a bit under-cooked. Therefore, perhaps the cooking time is a bit too fast and whoever is managing should leave the pizza in the oven a bit longer. The pepperoni, parmesan cheese, and mushrooms tasted fine like most good pizza places I've tried in the past. Now for the customer service. Most of the people working at this Pieology are high school/college students nearby the area. I know this because I recognize some of the workers and there are usually friends which stop by to greet and chat. The employees aren't the most attentive and amicable, but it's not something that can be easily fixed with something like "Hello, welcome to Pieology! How may I help you today?" Final Verdict: Overall, I still like being able to add whichever ingredients desired. However, I'll most likely just order from Costco because the pizza is much bigger and not that much more expensive. He was rudely making side unneeded remarks "I would leave but that's just me though" then a couple minutes passed and he kicked everyone out that was placing a new order because of "technical" difficulties due to a lot of online orders. This place is F***ing disgusting! If I could give negative stars. I would! All of the toppings are mixed up, there's toppings all over the edge of the counter. The wooden carriers they use to put the pizzas on are full of toppings and sauces from precious pizzas and they just throw it on there! Parking is a b*%#! sometimes or maybe it's just cause I'm lazy and want to find the closest parking .. Haven't figured it out yet. This location looks smaller than others with less seating. Everything seems clumped together but there are some outdoor seats as well. All kustom pizzas are $7.50 as well as full sized salads. The price for rabbit food is a little steep but it was good.
