You're going to get a tasting menu and it's going to take you a minimum of two hours to get through it, but you'll love it. The space reminds me of a dreamscape carousel, with the curves and showlights on the ceiling (which occasionally move in choreographed patterns). The staff all seem ecstatic to be there, and are impeccably versed in the menu and cooking methods. We did the Bazaar Tasting Menu ($215), which lists 14 items. These come as three sets of three one-to-two bite samples to begin, then the main event, which is the spectacular ribeye (Australian Wagyu when we were there) with three sides. There's also a flan for dessert. Particular standouts of the small bites for me were the jamon iberico taco (the pork is sliced tableside from its own cart, which has a glamour ringlight) and the "beefsteak" tomato tartare, which is like salsa as candy. The steak is expertly cooked "Jose's way", arrives sliced for you, and served with three sides -- a potato course, Brussels sprout petals, and piquillo peppers. By the time we got to this point, I couldn't possibly do justice to the sides, though I would love to have a jar of those peppers in my pantry. Bazaar Meat is a proper Vegas dining event, and if you're game for a big carnivore meal, you shouldn't hesitate to book your night.

My boyfriend and I used to come to the Sahara location almost weekly, and most of the staff knew us there. They are seriously an A+ crew, especially Sunday. Five stars to the amazing Bazaar team. That said, this review is really about my disappointment with some of the menu changes. First, they removed the oxtail consommé, and I'm not exaggerating when I say I still dream about that soup. Second, the caprese salad used to be my favorite bite in all of Vegas, and I eat at all kinds of restaurants around town, so that's saying something. But they no longer make it with dehydrated tomatoes. Now they just slice cherry tomatoes in half, and it's lost that perfectly blended flavor. The tomato taste is way too overpowering now. The A5 Philly cheesesteak has also changed. There's noticeably more cheese than before, which is a bit much for my taste. All that said, the service is still top notch and the food is still good overall. I'm just genuinely sad that, with these changes, it's no longer my favorite restaurant in town.

Despite the looser consistency, it is absolutely packed with a variety of delicious smoked meats in every single bite. Mac and Cheese (5/5): An exceptional side dish and a clear favorite of the meal. It's incredibly rich, creamy, and distinctively flavored with sharp cheddar, which gives it a much bolder and more satisfying punch than standard restaurant mac and cheese. Corn Bread (5/5): This side functions almost like a dessert, boasting an incredibly sweet, vanilla cake like taste. The high level of sweetness provides a nice contrast to the intense salt, smoke, and savory flavors of the massive meat plate. Logistics Tip: Parking is limited but manageable between the two adjacent lots, and there is a clean restroom on site. The sides held their own too, which always matters. We even stopped in the meat market before leaving and grabbed some chicken and beef links, some frog legs, and a few bones for the dogs The live music was a nice touch and really added to the vibe, and even though they were busy, the wait time honestly wasn't bad at all. Only thing I wasn't really feeling were the sauces, they just weren't my favorite. But everything else hit, so it didn't even matter much. Definitely worth checking out if you're in the mood for some solid BBQ

The sides were also better than expected. The potato salad was especially good, and the mashed potatoes had a lot of flavor and paired well with the meats. My only disappointment was the smoke profile. I was hoping for a stronger smoke presence across the meats, and they definitely benefited from the sauces. Thankfully, the sauces were excellent, especially the mustard-based sauce, which added a great tangy kick and complemented the BBQ perfectly. Overall, I enjoyed the meal. The quality was there, the flavors were good, and it's a strong BBQ option in a city where great barbecue can be hard to find.

Once I stepped foot inside and saw a completely packed house with an hour and a half wait and barely standing room at the bar, I knew it was worth whatever wait or process I had to go through. Ultimately I lucked out as an individual. I was able to snag a bar top seat pretty quickly and had I known then I was sitting down to what was going to be one of the best meals of my life, I would have been visibly more excited. Not only was the service absolutely top notch, the people and the regulars there were extremely friendly and outgoing. The vibe was perfect, a strange mix of a place that felt like it had been there for 200 years yet was somehow high energy and vibey. From a killer cocktail recommendation to one of the best steaks I've had in my life and coming from Oklahoma City, where I work a mile away from the stockyards and can get great quality fresh beef six ways from Sunday, that's saying a lot. I usually despise most things truffle but if I was forced to eat that truffle mac and cheese every day for the rest of my life I would consider it a life well lived. While I would have never ordered it on my own, a customer next to me recommended the porn star cocktail and I have to say it was also one of the most delicious things I've ever had in my life. Ten out of ten, top notch experience. Would recommend. Will be back every time I'm in Vegas, no questions asked.
