We sat and immediately were brought waters and dishes. The team is designed to be a brigade, with everyone participating in the service. This led to very quick service and easy access to a server. We got two ramens and a dumplings to share. The food took a couple minutes but we quickly had dumplings and soup and we took our pics and dug in. The dumplings were freshly made, loose but flavorful filling with a pool of sauce on the bottom for dipping. The wrapper was delightfully thin and the garnishes added little pops of texture and flavor which changed the flavor profile of the filling. Those were very good dumplings I got a truffle shoyu ramen. The noodles were freshly made, springy and a little chewy but a great sauce vessel. the toppings were plentiful, the shoyu pork wasn't the most tender but the pieces were nicely charred and sauces to be distinct in the dish. The broth started off as straight seafood broth, lots of briny umami but little depth. Once I mixed the truffle scoop in, the flavor really bloomed. Now the broth had an earthy, mellow base note which made the broth a surf and turf umami bomb. It was very tasty, and the best ramen I've had in ct. Price is not bad, $55 for two bowls, add on wontons for the missus's soup and the appetizer. For the quality, the price is really good for what you get.
