We went in for dinner while visiting from out of town and this place was slammed. Luckily we were able to sit and eat at the bar top. Despite the packed house, servers were friendly and reasonably attentive, and while the food came out slow, that's to be expected. I wouldn't say it was unreasonable at all considering the volume, AND they were churning out a ton of to-go orders. No televisions in here, which I loved, and a great vibe. Tons of people just having a great time. Great non-alcoholic drink menu. About to celebrate three years of sobriety, and I truly appreciate that. The food was good-great, depending. My wife got a salad with pulled pork and I got the brisket. Both were just "fine" and the meats desperately needed sauce. The brisket was pretty dry, which was disappointing. We also split a side of the smoked mushrooms, which we thought were good, and the pasta salad, which was unfortunately quite bland and not very noteworthy at all despite using pasta from the acclaimed Gallus. Now here's the sleeper: the dry rub wings were incredible. Some of the best I've ever had! Don't miss out on these just because they're on the appetizer menú. It's a good restaurant and one of the best spirit programs I have seen. Getting a flight is one of the best things you get can here and the food is pretty good. It's worth it when you can get a seat and eat there. Let me give you the reasons why I knocked it down to 4 stars: 1. Getting a table for dinner here can be difficult especially during the weekend. Yes, even when it's below freezing point. They are that popular and not being able to make a reservation doesn't help. 2. The only dish I found out off many occasions and many items is the sausages. The food was great - easily some of the best BBQ in the area. Despite it being a busy Saturday, we were seated quickly and our food arrived timely as well. We ordered the ribs and brisket plates and split both dishes, which turned out to be a great choice. Each plate was delicious and flavorful in its own way. The brisket was cooked perfectly- tender and flaky, while the ribs were even more flavorful thanks to the BBQ sauce and fell right off the bone. At $26 and $29 per dish, we were hoping for slightly larger portions of coleslaw or sides. The interior was a bit dark, though it fit the overall vibe very well. Our last summer trip to Vermont was our first time stopping at Pro Pig, and now we'll have to visit each trip! We ate in the restaurant side - they don't take reservations, but we were seated right away when we arrived (early dining times with a toddler FTW, iykyk.) Our server was friendly and knowledgeable about the various options on the draft beer list and cocktail menu and gave us great recommendations. We started with the duck fat fries, you can't go wrong with these whenever they're on a menu. The cornbread was moist and very flavorful, my kiddo ate it up! The 1/2 pound plate of chopped pork was BOMB - the meat is so tender, and pre-doused in their Eastern North Carolina BBQ sauce which is very vinegary which I loved. Stopped in for dinner on a Friday evening and had a nice meal! We were able to get street parking a little bit down the road. We were able to get a spot at the bar which was nice. Bartender was nice and able to give good recommendations. We started with the roasted carrot salad and loved it! The carrots with the Greek yogurt and chili crisp were delicious! A very unique dish. I don't often leave restaurant reviews on any platform. Everyone has a different palette, and places can have an "off night". I get it. But sometimes, a place just misses on so many levels that you want to caution folks about what might have once been good but has now become a "tourist trap" so they don't waste their last dinner on vacation on a sub-par experience, especially with other choices a block or less away. There were several spots recommend to me in-person by real humans, but I went with the Reddit choice that Food Network commented on (a long time ago). I'll go in order or the events of the evening. Table - easy to get on a Friday night (should have been a warning) Drinks - I read about a Pro Pig Swizzle - "A refreshing mix of silver rum, house-made ginger beer, and fresh lime." Server said "we don't make that". She asked where I saw it. When I explained I saw it on reddit and it sounded interesting she said "must be something old". I asked if the bartender could put something together like it ... after all how hard can it be? Use whatever ginger beer you have. There's a fully stocked bar back there ... their claim to fame is all the various whiskeys and such ... any bartender can "get close" to "something they used to make" ... or so I thought. Server didn't seem to want to ask, but she came back latter and said it would be like a "rum mule" and "not the same" and I'd be happier choosing off the menu. Ordered their Pro Pig 'Waterbury Club' American Lager in a can. Not great. Didn't finish it. App - ordered the famous Duck Fries ... they were, well fries at least ... both of us thought they were over-cooked, too dark brown compared to the pics on line. Server said "they're always crispy like that". Couldn't really taste duck fat. To those who don't know - once duck fat gets to that bitter "dark brown" stage, the delicate, rich, savory note of the duck fat gets completely lost in the scorch on the potato flavor. Dark brown "regular fries" can be awesome. These were not. PORK Ribs - no dedicated BBQ sauce for the PORK ribs. They have a thin, super spicy something, an Eastern Carolina vinegar base (great for pork sandwiches, IMHO, but my dining companion ordered pork RIBS ... thin vinegar sauce on ribs? They do not do that in Eastern NC. I know, I've spent a LOT of time there), and a "Texas BBQ sauce". Vinegar mops are historically meant to slice through coarse, fatty chopped whole-hog pork, not to glaze over a rack of ribs. Serving ribs with a thin vinegar sauce or a tangy Texas brisket sauce completely misses the mark on regional BBQ profiles. .... Server said - "there is nothing else". Now I have to take her at her word, but if that's all they have ... PORK ribs shouldn't be on the menu. Cole slaw side - It was warm. Not cold. Not room temp. Warm. This is definitely a major kitchen red flag, especially for a summer side that relies on being crisp and cold to balance out heavy barbecue. No second drinks. No desert. Exit stage left. Suggest you try Reservoir or Blackback Pub or stop in at The Old Stagecoach B&B and check out the owner's whiteboard list of suggestions instead of choosing Prohibition Pig. Won't be back. read more

Our first meal in Vermont, the last thing I expected was life-changing wings, but that's what happened! The dry rub wings were maple/sweet, spicy, and crunchy, and incredible in every way. This is the kind of top-tier food that induces food dreams. Everything else was so satisfying too. The coleslaw was full of flavor, the cornbread was soft and sweet (no dry, bland cornbread here!), we loved the marinated carrots (so tart and crunchy), and the meats were perfectly seasoned. We did a one day/night trip out to Stowe, VT. We found Prohibition Pig on yelp and was able to put our name on waitlist. Waited out reservation at our room and dropped in as our seat got closer. We checked in and had a drinks to wait at the bar. Shout out to Patty who made us feel at home. Toki Santory and Negroni were great starters. Just as excellent as my last trip here. The fried ribs are one of the greatest foods I have ever eaten. Everything on the buy the farm is so good too. Pro Pig is SO GOOD!! It's been on my list for a while and I'm so happy my husband and I tried it. I got the Pig Mac burger and while the bacon sounded not super inviting for what I was in the mood for I'm so glad I got it as is. It was PERFECTION. Stopped by on our way to Stowe for a late lunch. The ambiance and smell of the bbq is very inviting. We were seated almost right away for a larger group. The staff are friendly and helpful. We were shocked how small their menu was and seemed to be more alcohol but gave it a try because we were starving. We ordered wings for the table as an appetizer. The wings were juicy and flavorful, I highly recommend. We ordered the brisket sandwiches and pro pig burgers. For the hefty price tag of $16 we assumed that some type of side would be coming with the sandwich. It did not. And when our food came out we asked our server where our fries or sides were and she said oh you have to order those separate. It would've been nice to know this upon our initial ordering. The food was good, a bit disappointed on how much food was priced and it was just a smaller sandwich. The brisket sandwich needed way more meat on it. The burgers were great except for I asked for no mayo and it came out with mayo. Make sure you fine street parking and don't pay across the street in the lot. Maybe we are going to try it again. The noise level was energetic, but we could still have a nice conversation without shouting. We came here early on New Year's Eve for dinner. We were seated right away and our wait staff was extremely patient and attentive. I tried almost all of their house draft beer, my favorite was the Little Fluffy Cloud, followed by Llamapalooza. I concluded that I still favorite IPA then ale. Czech Yourself was like a Coors Light, save the stomach and try either the Green Dragon or Bantam. I also loved that they let me tried the diff varieties in 8oz instead of a 16oz glass, so I was able to walk out of there on my own. Food you asked? Get the smoked wings, soup Du Jour, briskets of course, Duck Fat Fries, skip the Fish Dip (just a spread with crackers), wish there was more options with the salad (need one with nuts and raisins) to offset the selections of pork. Overall had a great time. I'd recommend Pro Pig over Reservoir if you were on a date, or if your party is not large, a little more mature (30 and over). In comparison, Reservoir (down the street) has a traditional bar area in the back would be more popular among colleges kids or larger groups. read more

This was a fun spot in the cute town of Waterbury. I loved that we were able to join the waitlist from the website, which is such a convenient option.
