We went in for dinner while visiting from out of town and this place was slammed. Luckily we were able to sit and eat at the bar top. Despite the packed house, servers were friendly and reasonably attentive, and while the food came out slow, that's to be expected. I wouldn't say it was unreasonable at all considering the volume, AND they were churning out a ton of to-go orders. No televisions in here, which I loved, and a great vibe. Tons of people just having a great time. Great non-alcoholic drink menu. About to celebrate three years of sobriety, and I truly appreciate that. The food was good-great, depending. My wife got a salad with pulled pork and I got the brisket. Both were just "fine" and the meats desperately needed sauce. The brisket was pretty dry, which was disappointing. We also split a side of the smoked mushrooms, which we thought were good, and the pasta salad, which was unfortunately quite bland and not very noteworthy at all despite using pasta from the acclaimed Gallus. Now here's the sleeper: the dry rub wings were incredible. Some of the best I've ever had! Don't miss out on these just because they're on the appetizer menú. If I came back I'd just get a double order of these bad boys. Sweet and smoky and cooked to perfection. Absolute 10/10. read more

It's a good restaurant and one of the best spirit programs I have seen. Getting a flight is one of the best things you get can here and the food is pretty good. It's worth it when you can get a seat and eat there. Let me give you the reasons why I knocked it down to 4 stars: 1. Getting a table for dinner here can be difficult especially during the weekend. Yes, even when it's below freezing point. They are that popular and not being able to make a reservation doesn't help. 2. The only dish I found out off many occasions and many items is the sausages. It's a bit more grainy in texture that as off putting for me. Because it's grainy, I can imagine that this was made by hand instead of mass produced. read more

The food was great - easily some of the best BBQ in the area. Despite it being a busy Saturday, we were seated quickly and our food arrived timely as well. We ordered the ribs and brisket plates and split both dishes, which turned out to be a great choice. Each plate was delicious and flavorful in its own way. The brisket was cooked perfectly- tender and flaky, while the ribs were even more flavorful thanks to the BBQ sauce and fell right off the bone. At $26 and $29 per dish, we were hoping for slightly larger portions of coleslaw or sides. The interior was a bit dark, though it fit the overall vibe very well. Stopped in for dinner on a Friday evening and had a nice meal! We were able to get street parking a little bit down the road. We were able to get a spot at the bar which was nice. Bartender was nice and able to give good recommendations. We started with the roasted carrot salad and loved it! The carrots with the Greek yogurt and chili crisp were delicious! A very unique dish. I then ordered the Mac and cheese and added chopped pork. The Mac and cheese was warm, creamy, with a great contrast with the crunch breadcrumbs. Pork was great add on. Our last summer trip to Vermont was our first time stopping at Pro Pig, and now we'll have to visit each trip! We ate in the restaurant side - they don't take reservations, but we were seated right away when we arrived (early dining times with a toddler FTW, iykyk.) Our server was friendly and knowledgeable about the various options on the draft beer list and cocktail menu and gave us great recommendations. We started with the duck fat fries, you can't go wrong with these whenever they're on a menu. The cornbread was moist and very flavorful, my kiddo ate it up! The 1/2 pound plate of chopped pork was BOMB - the meat is so tender, and pre-doused in their Eastern North Carolina BBQ sauce which is very vinegary which I loved. The sliced brisket plate was also top notch - the brisket was smoked very well and the portion was a hefty thick cut. Great atmosphere, great people, great food! read more

Our first meal in Vermont, the last thing I expected was life-changing wings, but that's what happened! The dry rub wings were maple/sweet, spicy, and crunchy, and incredible in every way. This is the kind of top-tier food that induces food dreams. Everything else was so satisfying too. The coleslaw was full of flavor, the cornbread was soft and sweet (no dry, bland cornbread here!), we loved the marinated carrots (so tart and crunchy), and the meats were perfectly seasoned. The only meal I've ever eaten in Vermont, so I can't compare it to other local options. Good beers. Good BBQ. Interesting sauces. Sweet was good, the other two were pretty vinegar-y, so those are what I stuck with. My wife reports the sweet was good, too. Great cornbread churros! Entering before a long line formed was a BIG plus. Friendly staff asked if it was my first time before guiding me through their menu and highlighting local favorites. Ordering was seamless and I headed over to one of the open tables in the back. It was a very chill and friendly place. Lots of banter among patrons, drinks poured nonstop and the kitchen worked together like clockwork. The ribs and brisket were great. Definitely something I'd totally order again. However, the nachos and the pickles were nothing spectacular - if not, actually quite boring. Just as excellent as my last trip here. The fried ribs are one of the greatest foods I have ever eaten. Everything on the buy the farm is so good too. Other than the fried ribs the sausage was probably my favorite. The potato salad is also great. The duck fat fries are soooooo good. The house made barbecue sauce is also amazing. We did a one day/night trip out to Stowe, VT. We found Prohibition Pig on yelp and was able to put our name on waitlist. Waited out reservation at our room and dropped in as our seat got closer. We checked in and had a drinks to wait at the bar. Shout out to Patty who made us feel at home. Toki Santory and Negroni were great starters. We also opened with the smoked wings with homemade ranch which we ate right up! For mains we had the pig mac burger and brisket sandwich. A definite must visit if you're in town. Cheers! read more

Pro Pig is SO GOOD!! It's been on my list for a while and I'm so happy my husband and I tried it. I got the Pig Mac burger and while the bacon sounded not super inviting for what I was in the mood for I'm so glad I got it as is. It was PERFECTION. We came here early on New Year's Eve for dinner. We were seated right away and our wait staff was extremely patient and attentive. I tried almost all of their house draft beer, my favorite was the Little Fluffy Cloud, followed by Llamapalooza. I concluded that I still favorite IPA then ale. Czech Yourself was like a Coors Light, save the stomach and try either the Green Dragon or Bantam. I also loved that they let me tried the diff varieties in 8oz instead of a 16oz glass, so I was able to walk out of there on my own. Food you asked? Get the smoked wings, soup Du Jour, briskets of course, Duck Fat Fries, skip the Fish Dip (just a spread with crackers), wish there was more options with the salad (need one with nuts and raisins) to offset the selections of pork. Overall had a great time. I'd recommend Pro Pig over Reservoir if you were on a date, or if your party is not large, a little more mature (30 and over). In comparison, Reservoir (down the street) has a traditional bar area in the back would be more popular among colleges kids or larger groups. read more

Service was great--attentive, but not rushed. It was a busy Friday night, but our server made sure we were well cared for during our entire visit. The burnt ends with grits was absolutely delicious. The noise level was energetic, but we could still have a nice conversation without shouting. The only negative was that the espresso martini was more espresso than martini and lacked the signature coffee bean garnish. Ribs were excellent - tasty, tender so it falls off the bone when eating. Brisket was ok. Pass on the mushrooms. Burger was solid. And we all tucked into eating the Mac & Cheese and Duck Fat Fries - these were both a must order. 2 pieces of cornbread $8 - when did this trend of charging for bread start - didn't we used to get this for free? We had first tried ProPig back in Dec2021. It had been a horrific wait and the food mostly unmemorable. Stopped by on our way to Stowe for a late lunch. The ambiance and smell of the bbq is very inviting. We were seated almost right away for a larger group. The staff are friendly and helpful. We were shocked how small their menu was and seemed to be more alcohol but gave it a try because we were starving. We ordered wings for the table as an appetizer. The wings were juicy and flavorful, I highly recommend. We ordered the brisket sandwiches and pro pig burgers. For the hefty price tag of $16 we assumed that some type of side would be coming with the sandwich. It did not. And when our food came out we asked our server where our fries or sides were and she said oh you have to order those separate. It would've been nice to know this upon our initial ordering. The food was good, a bit disappointed on how much food was priced and it was just a smaller sandwich. The brisket sandwich needed way more meat on it. The burgers were great except for I asked for no mayo and it came out with mayo. Make sure you fine street parking and don't pay across the street in the lot. Maybe we are going to try it again. This was a fun spot in the cute town of Waterbury. I loved that we were able to join the waitlist from the website, which is such a convenient option. This is definitely a popular spot so you should plan ahead. The dining area is not too big so it fills up quickly. Our server was nice and the food came out pretty quickly. We stopped into the Brewery for a drink and dinner. Overall, the was good and service was fast. My husband and I both ordered the brewery bowl. My wife and I are from the South, and came to see the foliage that we've always heard about. We stopped in this quaint little town to visit. We barely made it out of the car when we smelled the meat smoking. We walked the town and the smell was intoxicating. We made it to the door and realized they didn't open until 4:00 pm. I was truly bummed out. We saw the pit master at the pit and I told him how sorry we were that we were not going to be able to try the food. He told us that the bar opened in about five minutes and that food would be available. We walked behind the building just as she had put the sandwich board out and we walked right in. We sat at the bar and were quickly greeted and given menus. Everything looked delicious, but first we ordered a hot buttered rum and a craft beer. We saw the pit master bring the brisket to the bar area to the chef. It looked amazing and the chef talked to us as she started prepping the food. The bartender was very nice and answered several questions for us. We wanted to try a lot of different items and ordered the brisket chili, one jalapeño sausage, a brisket plate, and cornbread. It was all amazing. The brisket is by far the VERY BEST brisket that we've ever eaten. It was complete perfection. They also have a cool thing there called a "high five" which a patron can add on for the all the workers in the background that no one sees. It's just a way to give the workers a little extra tip ($5) that hourly workers wouldn't normally share in. The quality of the food is worth the price. We hope to find our way back to this gem of a restaurant/bar. Our trip included Boston to Vermont and this was by far the best meal of our trip. 5 stars! read more
