The best thing going for this new restaurant is the atmosphere! The decor and lighting are spot on and its definitely got that Whiskey Bar/SpeakEasy type vibe. With that said, the food was okay, nothing superb. Not good: pork belly lollipops (overcooked), Caesar dressing (bland, watery) Good: Charleston Perlau, Beef Bibimbap, Peanut Butter Unicorn (too much cookie, needs more mousse) Best: Wok charred Brussels Sprouts, Frie Sampler, Short Smoked Salmon Service: We had a reservation and got seated half hour late. This didn't bother us, we took it in stride. However, they knew they were running behind but didn't tell us. We would have gone to the bar for a drink. You actually would think they would want you to go the bar and spend money. After 25 mins, we had perused the shop long enough, I asked if we should go get a drink. This was when they said they were running behind and still had reservations ahead of us to be seated. They said the bar was standing room, so absolutely go have a drink. But, it's not standing room. There are only seats all the way around which were all occupied and no place to squeeze in to order Yep, you guessed it...no drink ordered. The good news our table was ready. Our waiter was okay, he attempted some sarcasm but honestly wasn't very pleasant. The other thing we noticed was that there were too many "hostesses/managers" standing around, hoovering to see if tables were gonna finish up and in one case grabbed empties off the table in a hurry. They obviously have stuff to work on. This will be a place to linger. They need to build in more time for patrons to enjoy there drinks and food. They need to fine tune some of their dishes. We will try again in 6 months or so. There are many food items to try and we hope we can find some delicious options. We were so excited for this restaurant to open and look forward to better things ahead. read more

Was sooo excited to try this spot! Menu looked amazing. Made reservations. After standing around for 30 mins with no niceties or apologies from the hosts, decided to go get drinks for our group of 4 from the bar while we waited. Worst vodka martini I've ever had... ever. Patrons at the bar were amazingly friendly! Bartenders not so much. Finally after 40 minutes and bad drinks, we left. Very disappointed. Oh, and worst part of it - my husband saw a booth/table open - but we weren't seated at it. Crap service. Don't think I'll try it again. read more

Just left Proof. The service was good. It's very cozy inside with leather seating and dim lighting. We sat at the bar as we didn't have reservations. Bar seats are not usually comfy but these were plush leather and had foot rests so that was nice. The Pull Apart Monkey Bread was a little dry but the Boursin cheese topped with a chili crisp was incredible! My Gimlet was tasty if not a touch on the sour side, his Old Fashioned was really good with Luxardo style cherries and NOT maraschino so that's always a plus! He ordered the Thank Ya Verymuch burger which he LOVED. Said it was really tasty and original. I had the Proof Chopper which sadly was very soggy and drowning in a bland dressing, and the She Crab Soup which was very thin, had almost no crab and definitely no caviar on top. We only took a picture of the drink because the food was so yummy that it was gone before I thought to take a picture. We were a party of 8 and all of our food came out at the same time and everything was correct which is very unusual when you're a large party. The bartenders were awesome and gave us good advice on what food and drinks to get. We had the Parmesan monkey bread, brussels sprouts and Reuben eggrolls has appetizers. All were delicious. Some of us have burgers, we had the prime rib, the shepherds pie, and the Beef Bibimbap. All were awesome. We had the banana pudding, trace Leche, and peanut butter, desserts, and they were also very good. We will be back. read more

Loved the atmosphere although a bit small and crowded. The food was ok but nothing special. The service is where it really went downhill for us. Our waiter left us with no drinks most of the night and ignored requests for refills. We didn't get our first round of drinks until half way through the appetizers and my husband never got his second drink even with multiple requests. While the service was 5 stars the food served lagged well behind. My pork chop was tough to the chew and ladened with an incredibly salty demi glaze. The crab dip contained no visible signs of actual crab of any kind. I`m grateful none of my out of town guests tasted this travesty of a local favorite. The fried pickles were far too much coating for the pieces of pickle . Why not simply use slices of pickle instead of micro pickle pieces ? MY guests enjoyed their prime rib which saved the day. Portions were ample and the service was enjoyable. Hopefully the back of the house can be as worthy as the front of the house someday. read more

Went there for lunch. Overall everyone really liked their cocktails and food, and service was great! Blackberry sage smash and Fall spritz cocktails were enjoyed and great presentation. She crab and French onion soup were both good. Twice baked pierogis were real bad. Tiny and dry. Don't get them. The smothered chicken, the Rachel sandwich and spiced pear salad looked and tasted good. Pear salad could use more goat cheese but was still tasty. The service was very slow. We went there on a Thursday afternoon, the place was not very busy at all and we still had to wait for about 15 min for a table. I think they do that so you will shop in the gift store. Once we were seated it took about 6 to 7 minutes to get water. Once our waitress came over she said is there anything else I can get you. The restaurant is nicely decorated but small. It was extremely loud and alittle difficult to socialize without screaming. The menu is limited and the food is okay. The fries were superb with that bit of ole bay. The deserts small which is okay but not that good just extremely sweet with very little distinctive taste. We ordered Pinot noir and they came back and said they did not have any by the glass so we ordered a bottle and then was told they were out of that as well. All in all it was simply okay. My wife and absolutely enjoyed our experience at Proof! Very attentive service in a cozy space. Tried the Parmesan monkey bread and the twice baked pierogies and they were excellent!! Went with the proof burgers, and they were super juicy and delicious. I did a Flight of their bourbons, but unfortunately they were not selling bottles yet. After waiting a month to get Reservations at this HOT and super popular restaurant on a Friday night at a normal dinner hour (6ish), the wait was worth it. Smallish restaurant w/Trendy decor. It was very packed with patrons so a bit loud. If you're looking for a more quiet vibe perhaps not so loud during the week. Various couch seating in center. Comfortable for cocktails and starters but did see diners juggle actually eating main courses from small couch tables. Glad we had a table and service was great. Mularkey's Birthright and Heritage cocktails, Pork Belly "Lollipops" and Ruben Egg Rolls appetizers YUM. The Pork fat could have been trimmed more but had great smoky flavor. Outstanding "Queen" Prime Rib served w/Onion Rings and Large Fries and Ceasar Salad on side. Definitely a hefty portion meal. The Shepherd's Pie was Amazing. Made w/Bison, the sauce binding was excellent. Too stuffed for dessert but we will definitely be coming back. read more

Excellent!!! Tasty food and drinks. Friendly service and great ambiance! Bourbon glazed pork belly appetizer was tasty. Pirogies with bacon jam also a great app. Proof burger with whiskey pickles and Pastrami sandwich house smoked pastrami loaded with flavor. U can substitute jalapeño tater tots for fries - highly recommended. Finished with S'mores dessert! Every part of this experience was outstanding. Managers even checked in on us during the meal. I came in with my sister and we Sat at the bar, which is beautiful and the seats were comfortable. The bartenders were very friendly, funny, and knowledgeable. We started with lavender lemon drop martinis, which were very good. The lavender is not overwhelming at all and has a great lemon taste. We split the pirogies. They were good. My sister liked them better. I loved the horseradish sauce that was on the plate to give it a little kick. We also had the Crab Rangoon dip. They came with these tasty chips. They were not tortilla chips, and had some seasoning on them. This was delicious. I think we needed more chips for the amount of dip, but it was a great dish overall. We then had the pineapple ranch water drinks. The bartender asked if we liked spice, yes we do! So she made them extra spicy. It was very refreshing and something that would be great for a hot summer day! We then split the Truffle Mushroom, not so flatbread. This was my favorite. It definitely was more like pizza than flatbread, which we were not mad at. I believe the bartender told us they made the bread in house. It was fantastic! The toppings, sauce, everything really complemented each other. We finished the meal with a banana pudding jar which was very good. My sister had some other jar dessert with a butter cake. I wish Yelp allowed two separate ratings: one for the food and one for the service. We called and secured reservations for one of the long high top tables that seats 8. We were seated immediately on a Tuesday night at 5:30. The ambiance of the restaurant was very cool. But then the trouble started and continued throughout our dinner. The service was horrible! Huge gaps between ordering and getting whatever we ordered be it drinks, apps or mains-even the bill took 20 min from when we asked for it! No one checked to see how our apps came out or our food. We had to hunt down someone to refill a water glass at one point because our server appeared to also be a bartender. Getting the servers (another server said she'd be helping out and we never saw her again) attention was almost impossible and drinks remained empty throughout the last half of our dinner. We enjoyed the food and paid our bill before walking to the entry and asking to speak to the manager. As a Villagio establishment, we thought they would appreciate our feedback for improvement. The manager completely brushed us off, saying I hope you will try us again. My friend said she had had such a good time her last visit she had brought all of us. Again the manager said I hope you'll come back. I was shocked she didn't seem more concerned or ask for specifics, so I added that we would have ordered more drinks but never saw the server or nor could get his attention. Her response to that was she would relay that information to the servers. That was the extent of her concern. Honestly, we all walked out thinking she couldn't have cared less what we thought. We didn't want a reduction in our bill or to make a scene, but I did expect a manager to care more about what the patrons thought and act a little concerned to improve the experience for the next set of diners. She asked no questions about what our concerns, just wanted us gone. I may go back but after reading lots of the reviews, this seems to be a complaint voiced fairly often. Perhaps the Villagio group has bitten off a little too much too soon with Proof. It's a good thing the drinks are good and the interior is pretty. read more
