I drove out to Lewisville trying to eat at another Ramen joint. They close down in the middle of the day, and even though I showed up an hour before closing, they were not taking anyone else for lunch. Thoroughly disappointed, yelp came to the rescue. In no time, I had a LARGE bowl of spice miso sitting in front of me. They come in two sizes and assumed they brought me the larger option. I was not charged more, so I am assuming it was the regular, which was substantial. The noodles were firm, which I enjoy. The broth was thick and satisfying, sticking to the noodles. There were sprouts, corn, woodear mushrooms, green onion, half an egg, chashu, and chili paste. They don't have an option to add bok choy, but I was happy to have the mushrooms and the chashu was cooked perfectly. My only complaint with the food was it was not spicy. It looked like a lot of chili paste, but it didn't bring the heat. I added pepper and togarashi, and it was still very mild. I may have a good tolerance for heat, but this was MILD. It was tasty though. The service was a BIT too attentive. I was asked no less than 5 times by three different people if I was doing alright, and I wasn't there long.
