    GUTS was a last minute reservation for us last night. We had spend the day at the Rijksmuseum, so we wanted an experience where we could just sit back and let the chef make all the decisions...and boy did this chef make all the right ones! We were seated at their intimate bar seats upstairs and while we looked over the restaurant's two prix fixe offerings, we ordered two signature cocktails: a negoni, complete with spicy slushy on top and a vodka + chamapage cocktail called the Twinkle. Both delicious. We made the decision to go the Deluxe route with the prix fixe and the wine pairing, which nets out to about 5-6 dishes and 5 wines. We were blown away. From the razor clams and mushroom soup, to the ceviche and their lamb with romesco, each dish was superbly crafted. My boyfriend mentioned during our meal that the romesco on the lamb was one of the best he's ever had! Truly masterful. Additionally, their wine selections during the meal were wonderfully complementing to the dishes. A wonderful meal. Overall, GUTS provided a fantastic meal with great service and guidance.     Another Amsterdam gourmet restaurant and another tasting menu for us. But first let's start with the free "welcome" bread and accompanying spreads. Honestly we would come back just for that (they brought us a second plate once we quickly finished off the first). In general we had a very good experience with our dishes here which apparently change nightly based on a certain culinary theme. Our theme was "French" food, which, while not as exciting, suited us just fine. Actually I might've rated this place lower given the lack of excitement around most of the dishes we had (a course of leeks- come on), but loved the ambiance here and friendly service. We actually had a really pleasant chat with one of our fellow patrons- something I usually would never do. But for some reason in this restaurant it felt just right. Also, that last course of squab was just freakin' awesome. Four stars it is... we'd certainly go back, if not just for the good company.

    We were visiting from NY and Dan proposed to me in the day and we went to GUTS for dinner to celebrate our engagement! It's a small restaurant but it has an upstairs so it's very spacious. And trendy! We got a great corner table, nice and intimate. We ordered the pre fixed courses with different wine pairings for each course. Amazing experience!

    I visited during the "Best Of" Chapter. With no reservation, I was able to eat at the bar, which was great - I got a direct view into the kitchen. You order the number of courses, that's all the information you're going to get. So every course was a surprise. Being the best of - my five courses (plus an amuse bouche and pre-dessert) took me all over the globe. There was a ceviche with granita, ramen, lamb, gaspacho....each dish thoughtfully selected and artfully plated. The staff was warm and welcoming. Since I was seated at the bar so close to the kitchen, one of the chefs would come out with my dish and explain it. As a solo traveler, it was nice to feel so welcome and engaged during a meal alone. The menu changes every three months. I'll definitely be back - with a friend, and I'll get all the courses! It was a really special and unique experience. I left full and happy.

    After coming from another Michelin restaurant the other evening and spending over 350 Euros, we decided to visit a less pricier establishment. Surprisingly, the food and 6 course dinner menu we choose with the wine pairing was half the amount we spent yesterday and was equal in food quality and presentation as of that yesterday. I thought we needed a 6 course dinner to be satisfied, we were in a food coma by the 4th serving and keep in mind that there are 2 items like bread and another appetizer served before your first course begins. We got lucky on a same date reservation and got the bar and able to watch them prepare in a small kitchen, it was amazing to see how each dish was creatively presented over and over again to each patron with the same passion over and over. Each dish is a surprise, that's the best part. Definitely must visit when your in Amsterdam!

    This place is unique in an ingenious way. They rotate menus as "chapters" of different places in the world in order to explore that location's cuisine. I lucked out and went while they were doing a special menu, the "Best of" menu, where they served one dish from each chapter they had done so far. Ramen from the Japan chapter, ceviche from Latin America, pizza from Italy, and so on. We arrived and were seated at a cute little table outside. The restaurant is on the smaller side, but they do have indoor and outdoor seating. A waiter immediately came by with the wine selection, from which we chose a rosé, and then we were off! Touring the world through food at our little table for two. I'd like to first compliment the portion sizes. We went through about nine courses in all and, with that much food, you really have to pace yourself! They did a great job with serving small dishes and timing them well. The food was, on the whole, delicious, creative, and inspired. We started with some focaccia and olive butter, which was followed by little appetizers: pizza, a fried sushi rice bite, and some sort of gazpacho. The gazpacho stole the show. It was divine! Next, we had ceviche with a frozen version of a popular Latin American drink served on top. Which is just so clever, considering the theme! And the flavor paired perfectly with the fish. After the ceviche, we had white asparagus served with a type of egg whip, I believe. It was a little on the sour side, but the asparagus had a nice crunch to it. Following that, we had a cooked white fish served warm with crispy bread. The fish was nice and flaky and went well with the sauce. The next dish was my absolute favorite, it was beef ramen with peanuts and it was amazing. So much flavor in the broth and such a great combination of ingredients! I couldn't get enough. After the ramen came the lamb with sweet onions, which was super tender and not too heavy. They followed this with what I believe they called a "pre-dessert" of eggplant ice cream, and then the actual dessert, which was a lemon meringue over lemon sorbet. You're probably feeling a little overwhelmed reading all of this, but I think that their normal chapters are set up a little differently and only focus on one place instead of squeezing in multiple places. I'm very glad we went when we did and got to try so much! But their chapters do look great, too. And, if our visit was any indication, I have no doubt their food will be incredible no matter what chapter they're on. Please go if you're looking for something a little out of the ordinary in Amsterdam! This place is one of a kind.

    It was Friday date night with my husband and we were able to get a ressie at Guts and Glory which we were excited about since we've heard good things - and they did not disappoint! Food: They change their menu every three months and we were able to experience their Italian themed menu which was fabulous! We chose the five course menu (they also have a seven and a nine). Every course was absolutely delicious and full of flavor, but the osso buco with risotto was the winner! Drinks: We ordered three glasses of wine, one bottle of still water and an espresso macchiato. Price: €128.50 Service: Very friendly! Everyone was very nice and service oriented. Ambiance: Super casual. You walk into the restaurant which has a small bar and the kitchen. The main dining room upstairs is not big, but cozy with tables of two, four, or six. They also have outdoor seating when the weather is nice. Would I go back? Most definitely! We may go back again for Italian because it was so good and we want to know what other courses they will serve if you order the seven or nine courses.

    AMAZING! Every dish, every taste was outstanding. It's a 4 course fixed menu (with an amuse bouche as an addition). Then you can add some "glory" from a limited a la carte menu. We added the razor clams and langoustines. We licked the plate of every dish. Wow. Service was superb. Amazing wine pairing knowledge from the servers. This is a definite must go in Amsterdam!

    AMAZING PLACE! I went with a friend for a nice dinner and we were very happy! The place is very modern and well decorated. The staff is also very friendly. You just choose how many dishes on the theme you want 4, 5, 6 or 7 and all the dishes will be a surprise! The theme was BEEF. We got 5 courses + truffles. You can add truffle to your order, special Japonese beef, cheese platter for a little extra. Amuse Bouche with dried beef and little potato fried buns. 1st cod fish in a bone marrow broth with celery and caviar. Very fresh, light and delicious. 2nd Beef tartare. Honestly, I didn't like this dish. The tartare could've been more seasoned, it was kind of bland, and this was the dish the added the black truffles and we couldn't real feel the truffles. 3rd Little beef sandwich. Delicious!!! It was my favorite dish. Soft bun, with very well seasoned meet in the middle, very well presented also. 4th beef and broccoli. Tender meet, very delicious cooked medium rare with a reduction of soy sauce and balsamic. 5th Dessert - ice cream!!!! Delicious pairing on yogourt ice cream and fruits. I would recommend this place to everyone!

    Last night I had an amazing meal here. We did the 5 course tasting menu and the theme was beef. But don't be fooled to think it'll be a heavy beef menu.. The clever uses of the ingredients made this tasting perfect. The pretty plating made all the dishes look simple and elegant. The taste is what blew me away. I highly recommend you check this place out, I added a photo of the bone marrow fish dish.. And although I photographed every dish.. I want to leave that for you to experience. Only comment is if you buy a bottle of wine, the server may not have tasted it and the description isn't the same as if you buy by the glass which they have tasted... Regardless Great selection. Great service and the passion from the chefs here shine in their dishes. I will def go back the next time I'm in Amsterdam

    Amazing place. It is all about pork. I had lunch at the bar and was able to watch the kitchen movement which I love. They just offer close menu. We choose from 2 course to 7 course during dinner time and 2 to 4 at lunch time. It is possible adding Joselito Ham as start option. Of course all courses are based on pork meat. Wine list offers wines from several countries.

The staircase leading down is very steep, and I'm not sure if there's an elevator. That said, this is pretty common in Amsterdam's historic buildings and didn't take away from the overall experience. All things considered, I would definitely return to Van Speyk. Great food, great service, and a warm, cozy setting make it a restaurant worth visiting.
