But y'all... we got catfished Every burger that came out was insanely salty. Like... did the ocean apply for a job in the kitchen?? The patties were dry, flat, and looked like someone stepped on them before sending them out. ZERO love went into these burgers--none. Not even a sprinkle. Now I will say, the staff was super sweet--shoutout to the girl taking a shot with a customer at the bar, she was living her best life and honestly, I respect it But as for the food... yeah, probably won't be back. Unless every other restaurant in Waco shuts down--and even then, I might just make myself a PB&J first.

An immediate friendly greeting was offered at the door and I was surprised by the quaint setting. There were only a few tables near the bar, but there was a covered patio attached and even more seating outside. The menu offered most of the traditional Cajun dishes at a modest price, but I already knew what I wanted. I ordered the Atchafalaya Catfish, a catfish filet over a bed of rice smothered in crawfish Étouffée. It was amazing. The Étouffée was rich and hearty, with the perfect spice level, maybe the best I have had west of Baton Rouge. The catfish was crisp and golden, giving a great balance to the creamy Étouffée. If you are ever in the Waco area and have a craving for some authentic Cajun cuisine, you must give Cajun Crafts a visit.

My partner ordered the sausage po boy, while I ordered the fried chicken plate, wish mashed potatoes & gravy + green beans. The wait was rather long, which can be attributed towards the chicken's cook time - which might be front scratch. After we got our plates, I certainly couldn't complain. The chicken was decently sized and decadent with flavor. Consistent, strong Cajun spicing littered the tray and chicken, while its interior was extremely juicy and filled with flavor; additionally, it still maintained structure and provided a nice crunch on the surface. The mashed potatoes were equally as enjoyable. The gravy complemented the potatoes well, and established an equilibrium through texture. The green beans however, were not my favorite. They initially appeared fine on the surface, but became watered down and lacking in flavor the farther down the bowl you went. I would not be surprised if these beans were canned. I would certainly find myself eating here again. Its biggest appeals are the prices, genuine quality of food, and disposition. It is not perfect, but it is more than satisfactory. If you cannot get over the minor inconveniences that you may run into here, then you probably shouldn't be eating Cajun anyways.

The manager assured me that this was $15.50 worth of food because "there's chips and a pickle." The sandwich, while delicious, was a mess. It's a Reuben, to be expected. Do they give you napkins? Obviously poured from a large bag arbitrarily into the Togo container. Nothing to note of the pickle. This was not a $15.50 meal. The place was empty, and now I know why. Rather than being seen as an alternative to a chain deli restaurant right down the street this place is viewed as a more expensive option. And in today's economy that's not a winning strategy. This business could learn something from the recent pricing scenario that Doritos went through. They raised prices, likely to keep their margin as high as possible while production costs rise, and instead of taking in the profits they saw consumers leave their chips on the shelf in search of cheaper options. Are they still the best flavored chips on the market, arguable but likely. But what they did after the backlash was to lower prices and therefore gain volume sales, which makes the margin less relevant. This business is likely failing. No deli should be empty at 11am. That's lunch time, and deli sandwiches are a staple meal for lunch in America. This business will be gone, sadly, and in its place a 5 guys burgers will eventually take its place. At least they'll avoid putting a sticker on the Togo container and likely give you a napkin or two. The cost difference is probably staggering. Tl:Dr overpriced little sandwich.
