Before this bad review, I will say the manager was very nice and took off one order of ribs and gave me a discount on the 2nd rack because they were horrible, along with the rest of the meal. All of the sides were a disaster. Potatoes au gratin was the worst, while the watery Mac and cheese was a close 2nd. The ribs were burnt and dry and the blue cheese tasted like all mayonaise. I never got a birthday cake and we were seated in a terrible place before having to move. Also, don't sweep the floor while I'm eating your fancy dinner. Not a good experience. Disappointing. Filet was "roast" like. I love filets but this was not a normal meat consistency. Very stringy. Our waitress had a large party so we didn't get much service attention. My drink glass was empty most the meal. No refill ever offered. Manager in red shirt walked right by, looked down, saw it, then continued to the hostess stand to chat with the hostess girls. We had to go to hostess stand to ask for the bill after waiting. I wish we went to outback instead. The ribs were cooked very well, but they slapped on a ketchup based barbecue sauce, which really took away from the taste of the ribs. I really wanted to like this place, but it was just not good. They drown the salads in dressing. The blue cheese house dressing taste like mayo. (most of their cream house sauces taste like mayo.) They are always out of the fish options. I do believe the steak options are good. I had the salmon on my last visit and I had to scape off the topping bc it was way too salty. They need a chef to come in for the BOH and they need someone to train the staff FOH. It feels like a local bar, but they want it to appear as if they have "elevated service", but it falls flat. As crazy as this sounds, they should try modeling their service after Texas Roadhouse bc it's always consistent no matter where you go. ( I've dined in all types of places all over the world- from Michelin top rated restaurants to quaint Parisan bistros.) Final thoughts... This is NOT an upscale restaurant. PERIOD. It's more like a Chilli's meets Texas Road House (TRH is way better IMO) who wants to be like an old school 1980's vibe Red Lobster. It's a casual place to grab food. I think they want to be a high end establishment, but they have a long ways to go and I recommend management go to Denver, Dallas, Miami, Chicago, or San Francisco to try out the top rated restaurants to mimic this vibe. Management needs to train the staff better, food inconsistencies need to be addressed, and do order your sauces and dressing on the side. Definitely not the place to go if you want to impress a business client, for a work dinner, or potential employee recruitment dinner. What once was a primer steak house isn't even average. The turnover on management and lack of experience in the kitchen has definitely added to the down fall of Cheyenne's Rib and Chop. Visiting Cheyenne and we had to stop by this steakhouse n downtown Cheyenne. Our server, Ray, was wonderful and very attentive - huge props to her! They have TVs everywhere at the bar and plenty of open seating. We got some wine (Malbec and a Pinot Noir) and the mandarin mule; the mule was very good. We ordered Caesar salads as the starter and the 36 oz Côte de Boeuf French cut ribeye and the chicken Marsala for our meals. Don't come here if you have a big party or want good food. We had a farewell party at this place. We were limited to a 3 item menu (steak, chicken Marsala and Salmon) and were told we could not order anything outside of this limited menu. Apparently this is the new general managers decision. The party arrived at 6pm, they started taking our order at 6:30 and we did not get our food until 8:30 even though we only had THREE entrees to choose from! I ordered the chicken Marsala and the chicken was so dry I couldn't even eat it. Immediately after getting my food I asked for a box to which they told me I had to wait till the end. My husband was wearing a heated jacket and was freezing. We were relocated to the fireplace which was nice but still cold. I can understand the heating issue but that was the least of the problems. No bread, our salads came out with rotten lettuce and tasted like fish. Our son never did get salad. We waited a very long time to order and even longer for the salads, finally the steaks came which were just ok. They were pretty dry. The sides were flavorless. The turf and turf was supposed to be 1/2 slab of ribs and a 6 oz steak, we got 3 ribs and a sliver of steak. The waitress left all of our dishes & glasses on the table until after she brought the dessert. 3 different tables were so cold they came to warm their hands by the fire. Another group said they couldn't remove their babies snow suit because it was so cold in the restaurant. No hot water in the bathrooms-not hygienic at all for the staff to be using the bathroom and not properly cleaning their hands. The manager kept walking into the bar, appeared he was checking the stats of the game that was on? Our daughter lemonade refill tasted strongly like soap. The desserts were as sad comparison to the previous ones. The waitress was relatively rude when we tried to express our issues and made more excuses for the poor environment and service. Came here late on a Monday evening as we had a long journey from Utah to Cheyenne, so we were glad they still served food after 9pm. James was our server and was absolutely wonderful. We ordered the ribeye which came with two sides and the baby back ribs with two sides. While the ribeye was delicious, the baby back ribs were disappointing. I would definitely order the ribeye again but not the Ribs. Out of the sides, we throughly enjoyed were the carrot souffle, mashed potatoes and the Mac and cheese. She said, "It has the same ingredients as the wedge, except that it is not a wedge," We asked politely to switch to a house salad, and that's when Lani stepped in and said no, you ordered the wedge salad, and you shall get that. We knew the restaurant was closing at 10 pm, so we didn't want to be complicated. But what Lani did made us feel super special. We did get the wedge salad at the end, and it was delicious. We were passing through and were told by the hotel front desk that this place was good. Not at all. We were seated and waited a long time for a server. When our server finally arrived we place a wine order and an appetizer of crab stuffed mushrooms in a "gravy." Our first red flag was when our server came back and asked us "what was the wine you wanted again." We told her again. The wine never came and we saw her taking care of other tables. Then a runner came out with our appetizer and asked if we need anything else. We said "yes how about our wine order?" He disappeared and we saw our server finally get our bottle of wine which had been sitting at the bar the whole time. She brought it over and did not know how to open a bottle of wine. She had to go and have the bar tender open it. Now we tasted the appetizer and immediately we could taste something was wrong with them. To be honest, the food was absolutely mid. My husband makes a better steak and unfortunately he was out of town. It was medium rare, but the steak was a low quality. My wife and I come here once in a while for late date nights and we've never been disappointed until today 4/1/26... we came in around 8pm, our server was "shaye" (not sure how to correctly spell it). The service was not the best as it usually is. We never got refills and our waitress seemed to get upset with us while we were trying to decide what cocktails to order. We ordered two appetizers and a ribeye with mash potatoes. The first thing that was brought out to us was the mash potatoes............. Wtf? About 15 minutes later we got our fried green tomatoes, which are always amazing; however, tonight they just didn't have the same great taste, something was off with them. The hot honey goat cheese appetizer came out cold, which is always normally really good. Our ribeye came out hot, which was good, but we asked for medium rare and we got medium well. I called on my way into Cheyenne en route to Denver. I was 30 minutes out and thought that would be plenty of time. I was on hold for 10 minutes so thought ok they must be busy. I ordered and repeated it when asked and the person in the phone repeated it perfectly. When I got there I had to wait but again, assumed they were busy. When the order came out I started to check the bag and the woman said "it's all there." I asked if she was sure and she said "well I'm not your waitress but I checked." I tipped generously and left. We were visiting friends to hunt for a week and we took them to dinner to show our appreciation. White paper on the table we kind of strange as it is a little bit of an upscale place. We made a reservation through the website and it did not reserve our table. Thankfully they were not busy and we were seated anyway. My friend ordered the fish of the day, which was rainbow trout, probably the biggest single serving of fish I have ever seen. Parmesan crusted and served with 2 sides. His wife had a baseball cut sirloin, we are still not sure what this cut is but she thought it was just another sirloin. My wife and I shared a Cote de Boeuf. This is a 36 oz ribeye, served presliced. Table side a skillet heated to 500 degrees is prepared with olive oil, rosemary and garlic. The meat was seared in this mixture and served in the center of us. It was really good but since it was designed to share, I felt the sides should have been for 2. We paid extra for my wife to get her own sides. The mocha ice cream cake was the best part of the meal. It was perfect. I thought this was more in the fine dining class, while it was priced in that category the level of service and did quality was less than expected.
