Hey Yelp friends! If you get a chance to eat at Ruby's food truck Do it!!! Yum! I just had dinner with my fam and everyone is still raving about how good it is. They stuff the tacos. We tried the steak, birria, el pastor, the el pastor combo, and I ordered the Queso Birria combo. My combo was Amazing. It comes fresh and hot with 3 delish tacos and the dipping juices with fresh lemon. The pintos have great flavor, too. They have a lot of options. The staff was friendly and fast. We did not wait long at all. They also offer churros. They were yummy, my only thought was, they could use a bit more sugar. For drinks they had sprite and coke in the can. It was pretty convenient that they came as a community dinner night for my daughter's apartment community. We were heading to the pool and decided to try the tacos. It was supper convenient and delish. We hope the community will invite Ruby's again. The sun was going down and the sunset was gorgeous. It was the perfect time to sit for a few minutes and while they prepared our order. Prices were reasonable and we were very pleased. We recommend. Check them out. read more

Love the owner/cook. He's always friendly and welcoming every time I come in. You can tell he really cares about the food and the customers. The tacos are some of the best I've had--always fresh, flavorful, and made right. The service is quick and the atmosphere is great. This place will always hold a special place in my heart. One time I remember coming here after my son was born and being tired and honestly just on auto pilot, I had ordered food and didn't have enough on me to complete, I want to say the owner of the truck, took whatever I had and still made me the food I ordered. Honestly I was so grateful and I promised myself every time I came back, to tip decent no matter what I ordered. The people here are always friendly and seem happy to do what they do. The burrito and the pastor taco were good but the carnitas in the taco is probably the best I've had from any taco place or food truck , would go back just for those. Ruby's is our go to! My daughter and I frequent here at least once per week. We have tried several items on the menu and though everything is delicious, we often order the cheesy Birria and crispy tacos. But like I said, everything is good. The carne asada is marinated and juicy not dry. The crispy tacos are larger in size and you get your money's worth! We have brought lots of family and friends here to support Ruben's business. I was finally able to try Ruby's for the first time tonight. We decided to try the cheesy birria tacos with consume and the regular birria tacos and consume. Both meals were $10 and it was really good I wish I took pictures before I devoured them lol. It would be really great if you could order like a bowl of birria that's what the hubby wants. We saw the food truck as we passed by and decided to stop. We ordered several different items on the menu for our bookclub potluck. Everything was very good! Tacos al pastor and Carne asada. I have been wanting to try this place since I drove by it back in 2021! Attempted a few times to try it in January but it was closed? Was so excited when I saw it finally open again! We were coming back from Tropical Sno and the hubs was hungry so we decided to give this place a try. We drove past it on Grand ALL the time and so glad we stopped. They have a small but great menu. We decided on an order of hard tacos, a shredded beef street taco, chicken street taco and 2 churros. You walk up to the truck and they take your order. They do accept MasterCard and Visa and charge .25 per card charge which is very reasonable for a small business. I don't mind a small business to pass the card charge to me for the convenience of using a card. I usually don't have cash on me but the other half did. It was $14 for all which isn't bad. There are 4 large tables and a few chairs at each table. The food was done within 5 minutes or so and they called us to the window to grab the food. They put green and red sauce on the tray as well. That green sauce was bomb!! So good. The kids doused the taco in it and loved it. The churros were filled and one kid liked it and the other didn't care for it. The food is where it's at here. If you want some authentic street tacos and fresh Mexican food definitely give this place a go! You won't be disappointed!! read more

Tried out this food truck last night. We have driven by so many times and finally decided to stop. We tried the chicken quesadilla, three street tacos (chorizo, pollo asado & pastor) and the Burrito Loco w/ adobada. Our favorite was the pastor taco with pineapple. So good! Food truck done right! So many food trucks aren't friendly or accommodating, and many of them just don't care about customer service or their product. This was a VERY pleasant change of scenery! We ordered carne asada tacos, chicken tacos, green chile chicken enchiladas, and a quesadilla. Our friend ordered a taco salad, no sour cream, on a separate tab. Food was prepared rather quickly and man was it delicious! Chicken tacos were seasoned well, my son said the enchiladas tasted just like grandpa Horacio's, and my younger son, the picky eater, loved the quesadilla. They accidentally made our friend's taco salad with sour cream so they were super nice and remade it for him. Then, instead of letting the extra taco salad go to waste, they offered it to us for no charge! Ruby himself was doing all the cooking and he's a very sweet man. Good food. I'm not sure of their times because I came when Yelp said it was opened.. around 8pm on Sunday but they weren't there. Anyway this is a food truck in a non-shady area so that's good. The steak and adobaba pork tacos are great. The tacos are small but you can get 4 of them for 6 dollars so that can fill you up. The chimichangas are huge and would be the thing to get if you're really hungry. Burritos would be for inbetweens :) The seating is pretty good and more importantly, the area is well lit so feel free to stay to eat. It's barely getting chilly outside at night so it's nice outside. Look for that neon "Open" sign when you are near! read more
