My husband and I found a last minute reservation for Valentine's Day here. We read about the owners and were optimistic that is would be a great meal. WE WERE NOT DISAPPOINTED! We had a delicious prix fixe VDay menu that was hands-down one of the best meals we've had in years. We are transplants from the city and felt like we were back in Brooklyn. Every bite was mouth-watering, from the salted butter and warm bread to the perfectly dressed beet and bitter green salad...to the delicious steak, halibut, and pots de creme and olive oil cake for dessert. What an absolute treat, made only better by the attentive and congenial waitstaff that made you feel like a regular. Oh, and the drinks - the mixologist at the bar created a perfect drink every time! And thanks for coming to say hello, Kaitlyn! Cannot recommend this place enough - do not let the strip mall locale deter you - this place is worth it in every way! It was our first time at Rye Republic, and we would definitely go back. The Cucumber Mule was tasty and refreshing - the perfect summertime drink. Hot wings are buffalo-style, simple and delicious, served with ranch or blue cheese, a dozen good-sized pieces per order. Smashburgers come piled high with two patties plus fixins. The porchetta sandwich was wonderful, with the fattiness of the meat balanced by the tangy pickled onions. Fries were nicely crispy, and the portions were generous. Service was friendly and attentive without being overbearing. The only thing that keeps this from being a five-star review is the chicken sandwich, which was disappointingly under-seasoned. We love this place. You'd never know this place is here, as it's in an unassuming strip mall, but once you go inside.. you won't be sorry. Cocktails are superb and well-crafted- and change seasonally. Everything we've eaten here is done so well. Specializing in burgers, elegant and unique fried chicken, and they usually have a pasta special that is delicious and light. Seriously try this place. Bartenders and wait staff are all great. Drinks were all VERY well made. Previously both couples had the caesar salads and found them SOOO good - very lemony....but this time we got 4 and there was no lemon flavor and very little dressing. It was the reason we went there and we were pretty disappointed. The wings were very good though. I hope they change the dressing back to the original. Worth the 40 min drive but not now. read more

THE PLACE we didn't know we needed in Brewster. This bar is exactly the place you can go to with your friends to hang out, have a drink (or two) and eat a burger (or not). This bar is so unassuming especially since it's located in this little random plaza - which has now been taken to the next level. When you walk in, you don't really realize where you're at since it's a full vibe change and you feel like you just walked into something you'd find in the city or, being honest, the cousin bar of Uncle Cheef. Totally could be related! Either way, it's a long narrow space with a pretty big bar and plenty of seating for smaller parties. You can call ahead and reserve the big table on the left for larger ones. It's a super inviting, chill, hang out spot where you'll eat incredible food and can grab a beer, choose from their cocktails or even request your own. They have it all. Come for a quick date night, happy hour, with your family, or just to hang out, everyone's invited. The food can take a little on the longer side but who cares when you're enjoying your apps and drinks. If you're here to hang out and have a good time there's plenty of reason to not care how long it takes. We ordered the smash burger with impossible meat and the chickpea sandwich. Our friends had wings, burgers and all kinds of things and there was not one thing left on our table. I was in shock how that impossible patty was clocked to perfection and had to do a double take each time I bit into it since you really almost couldn't believe it was. Both were absolutely incredible and loved having these vegetarian options (and plenty more things on the menu). Huge shout out to the chef, CJ, he's absolutely amazing! I'm so happy this place is here, can't believe it took us this long to check them out but huge welcome to the biz and owners! People: be nice, be gentle, be patient. These folks are husband and wife and are here to serve us and let us have a great time. They've only been open since November! Date night out? Girl dinner? Let's go. This is the perfect cocktail bar in Brewster. The drinks are unique and well made. This was our second time visiting The Rye Republic and I can see it becoming one of our regular visits. The first time we enjoyed the specials. This time we stuck to the main menu and tried their burgers. From the tables, You can see the kitchen crew making everything fresh. Nice restaurant in an easy to access plaza with lots of parking. Staff were very kind and attentive. I tried the kiwi fizz mocktail and really enjoyed it. Food was delicious and very filling. The bacon egg and cheese sandwich was unique, as it was opened faced. The aioli they put on it was delicious and so creamy. Nice long bar to the side of the restaurant with ample seating on the other side. Prices were reasonable as well. Would stop by again! read more

Staff are super attentive and friendly. Space is dim yet stylish and brings a new age speak easy air to the room. The food was wonderful and the open kitchen window concept was great as I enjoy watching the chefs prepare the meals. Enjoy the low tables at the back of the restaurant. There was only one issue I had and that was the biscuit for the porchetta which was also used in the strawberry shortcake. The biscuit is too dense and I ended up not eating it for my sandwich and for the dessert one side was a bit burnt/overcooked, while the sauce helped loosen it up it was crunchy. Drinks were wonderful and overall the food tasted very well. That biscuit needs work! read more

Best meal my husband and I have had in ages - and we eat out a lot. It is now our favorite place.

To start the place is inviting, a long bar and hightop tables all along the right side. The staff friendly and eager to please. The beer list and cocktail list is extensive. The food menu is not long, but the selections varied enough. The Caesar salad was fresh, crisp, well dressed and split in half plentiful. The grilled vegetables sandwich came with outstanding French Fries. There are other items, sandwiches and plates, we would like to try next time. I write this review with the hopes that this place will get better. As Brewster is a dry land for restaurants. The pictures definitely make this place feel nicer than it is. The ambience itself could use a little work as the underlying root of this place is a dive bar yet they're trying to reinvent themselves as a fancy cocktail bar. The water in Brewster is disgusting iykyk. Because of that, the water here is gross and the ice as a result has an off putting taste which flavors the cocktails in not a good way. They were also $16. Which for NY/City prices is somewhat standard. But down the street at McKinney and Doyle or Rebellion they're cheaper...and dare I say better. While food wasn't the top of the priority this evening we did decide to get a chicken sandwich with fries. The chicken was not fully cooked and the fries were a little salty. Not saying this is the standard, just our experience. Service was great, everyone was friendly. I do hope this place survives as the location is not the most conventional. read more

Food price / quality (value) rating 8.5. The atmosphere is what I'd call "clean contemporary", functional and tasteful. I had the American Burger, a cheeseburger with pickles, lettuce, and tomato, and house-cut skin-on fries. The wife had a special pasta and boneless rib entree. Both dinners were of high quality ingredients and were prepared properly. There was no salad or bread offered along with either entree, however. They have a limited menu with a few specials. Be sure to ask the cost of any specials you may order. A small, but well chosen, rotating draught beer selection is available. Service by "Mark" was excellent. The owner is typically on the premises which is always good. We'll definitely come again. read more

Just wow! This is our second visit, this one was for brunch, and obviously didn't disappointed. Service was outstanding, Rev was our server/bartender, he made us one of the best cocktails we ever had. Spritz are a must and the infused fruit cocktails ( Summer of '76,) were amazing. Food was delicious, took a while but totally worth every bite. One of the best fried chicken we ever had, and we had many! Eggs were delicious, soft but buttery and the most important part, food was perfectly balanced, because wasn't salty like many other places. We had the pancakes and fried chicken and the Cacio e Pepe eggs. This will be our new spot, and can wait for the fall season and come with friends, because I bet they will surprise us with amazing food and cocktails again. read more

Stopped in on a (very) rainy night. Friendly, efficient service, nice atmosphere, good music (and decibel level). At $16 per cocktail the price point is high, but the two we ordered (kiwi marg/special manhattan) were both good. Mussels app, well done if a bit light on the serving. We enjoyed our delicious (and enormous) entrees and the staff was super pleasant. This is a nice surprise in Brewster. The only ding- a little too long a wait for the entrees but knowing that, we'll plan for it next time. You can see that everything is made from scratch and it's not your traditional tavern. I had a steak special, my husband had the smash burger, and we had the chips and dip app, all of which were amazing. You could tell all dishes were crafted from quality foods, so your money is well spent.
