The sushi was much better than expected for the middle of nowhere Utah. The fish was pretty fresh, and the Spider (roll) and Delicate Arch (roll) were very tasty. My boyfriend ordered Castleton (roll) and The Sunshine Roll, and they were just okay. For the roll size and price, it'd easily take $40 per person to fill up without even being hungry beforehand. If they had specials, or even a Groupon/LivingSocial deal, I probably would have been probably 4 stars. The service was mediocre. They didn't check on us frequently enough and we ran out water twice for over 5 minutes each time. They also took 15-20 minutes to make our drinks and it wasn't packed as we went in December. My boyfriend and I, along with the table next to us, weren't fans of the atmosphere. It had more of a bar (and not a fancy one) feel. For the prices, I would except chic restaurant decor. WARNING: You should call ahead of time for their hours. They were closed for 3 or 4 days a week during the off-season. They also do not have set closing hours. We had a surprisingly good sushi meal here, went against my motto of not eating fish in the desert. It seems to be one of the few places in Moab you can make a reservation, we had a 7:30 PM reservation on a Tuesday, in late October, the place was packed inside, (maybe a bit too crowded for our comfort COVID wise) but as it turns out there was a small heated patio that we were able to eat in (when I made the reservation it said "indoors" so I was glad we had this option). This is the sort of place that it is good to have patience, even with a reservation we had to wait a bit, and the service as others have said is slow. We placed a couple of appetizers, shrimp tempura which were small but tasty, and a green salad. We had a couple of the rolls, that were very good. What a wonderful surprise and find, a restaurant who truly understands what Gluten Free and preventing cross contamination means to someone with Celiac Disease. My husband and I ate there tonight and only have praises for this little restaurant. Everything was top notch. The service was excellent. Our waitress was able to explain various entrees and offer suggestions. We ordered the Surf and Turf Roll, the Boogie Roll, the Sunshine Roll, Shrimp Tempura plate, Miso Soup, Tempura Bananas(Dessert) and Ginger Tea. Everything was delicious. If you like sushi you must visit Sabaku Sushi!! This cozy sushi bar in the middle of downtown Moab is a pleasant surprise! Unfortunately, due to an exhausting day of hiking we were not able to eat in and placed our order to go. We sat at the bar having a drink while our rolls were being made, be aware in Utah you have to eat while drinking so we ordered edamame which was very refreshing for after our hike. The Fiery Furnace was delicious and I highly recommend!! Spicy tuna with Sriracha and eel sauce...Yes please!! The White Rim was refreshing with a lot of flavor. Delicate Arch was a riceless roll with crab, tuna and salmon in a cucumber roll and a nice palate change. Devil's Garden which lived up to its name, had a nice sweet taste with the mango but the pineapple habanero sauce balanced the sweet perfectly. I always try the spider roll of every sushi place I visit and Sabaku did not disappoint! We then asked for a recommended roll from the staff which was the La Sal Roll, I really like the asparagus and salmon mixture with a lemon and Black Sea salt finish. Overall, the atmosphere, wait staff, and chefs were excellent! I will definitely go back here on our next visit (eating in this time) and if I lived in Moab I would be a regular at the Sabaku Sushi Bar!!! read more

I have to say I'm pleasantly surprised. We decided to give it a try after reading other Yelp reviews. I will agree that the food was very good. I'm a sushi snob (being from so cal). I also knew I was in a good place when several regulars/locals were already there or came in while we were there. They also accommodated my husband with a modified version of food from the kitchen. Lucked out it was not busy at the bar. Giving your order directly to the sushi chef made it so welcoming and I felt like a VIP. I thank Jeff how fast he was to introduce and offered to take my orders while I was still waited for the waitress for a drink order. To her credit, waitress very sweet and was handling tables inside and outside. My rolls came out very good and in honor of a long day/night at ANP, Delicate Arch and Fiery Furnace! Yummy sushi! The only complaint we had was the hostess and her attitude toward my mom & I not having a reservation. She asked and when we said no she scoffed and walked away. When she returned she said all I have is "there" and pointed to the corner. FYI we called in advance 3 times to make one but the phone was not answered so we decided to walk in. This used to be one of our favorite places in Moab, but the last three visits we've been disappointed. The tempura is limp and soggy and never crisp, my go-to spider roll keeps shrinking in size, my wife's favorite udon soup is poor, and a featured roll now costs you almost $2 a slice! Surf and Turf roll was my husbands fav, I loved the Fiery Furnace and we both devoured the Colorado roll. Nice and spicy but worth it! Not badly priced for sushi in our opinion. The sushi here was good!! I was very impressed with the quality of fish being that we are in a desert. They're definitely making a good effort trying to be with the trend of current sushi places you'd see in a big city. The wait staff was decent, I was turned off by the lack of being able to properly split a check to the point of being asked to just number 1 or 2 what was mine or my friends. Even then she still messed up, and was annoyed we asked her to split it. The sushi chefs made up for this as they were very pleasant and fun to talk with. The rolls were creative and really tasty! The soup and salad were fresh and delicious too. Even the water was tasty (had cucumber in it!). The atmosphere is funky and lively. Tried this place having very low expectations and were very impressed! We live on the road, love sushi and are always looking for good sushi. We really didn't expect to find good sushi in Moab. Loved the modern and relaxed decor, the music, and the very friendly staff. The prices were reasonable. I was afraid the sushi would not be good, after reading Mary C.'s review. But it was actually very good! We ordered our usual: philly roll, unagi rolls, spicy tuna, and shrimp tempura. They were all very tasty. The sauce was good but not overpowering as is so often the case. You could actually taste the fish. The philly roll was melt in your mouth good, the shrimp tempura still a little warm from the fryer. The temperature of the sushi is something I really notice, and this restaurant got it just right. The rolls were cut perfectly, nice and small. My 6 year old gobbled them down with no problems. It took about 15 minutes to get our food. We were starving but I didn't feel this was an unreasonable wait. The second roll we ordered did take a little longer but there were two tables ahead of us that hadn't been served yet, so, understandable. Everyone around us was enjoying their meal it seemed. I tried to understand how a different reviewer could have had a bad experience here, but I have to say I just don't get it. We came at dinner time and there were several other people. When entering this establishment, one will be surprised to find that not one employee is of Japanese ethnicity. The two owners are from Salt Lake City, UT and Colorado who have supposedly worked for, and been trained by, Japanese sushi masters. Where you would most likely expect to see the sushi masters dressed in typical white garb denoting their ability; t-shirts, jeans and baseball caps are more their style. Upon being seated, the waitress took our drink orders; and the listing of alcoholic beverages available is longer than the sushi menu itself. We opted for tea which was lukewarm and tasteless. We chose to have salads with our lunch order, and this was a wise choice...if you were a cow and didn't mind chewing your fiber for a long while. The salad consisted of half a bag of spinach leaves with a drizzle of ginger dressing. From my vantage point, I was able see what was taking place behind the preparation station. Lots and lots of cleaning by the owners, and it concerned us a bit when this continued for the full hour and half we were there. Little plates of plastic covered fish were on a shelf, and were kept moving around during the cleaning process. To say service was slow is an understatement. A third man was attempting to prepare our specialty rolls; he kept referring to the order ticket, looking very confused, and his hands shook while trying to prepare the rolls. When we received our order, the pieces were cut unevenly, the rice surrounding the filling was thick, and the filling itself was very sparse. If the fish was as fresh as they claim, we couldn't really tell, since there was very little of it. Questioning the waitress, she would refer to the owners if an answer was not known by her. Now the owners themselves never came over to talk with us, nor introduce themselves; and this was after an hour of being the only diners there. As I stated before, they were quite busy cleaning the preparation area. Sabaku Sushi crosses a cultural borderline that the owners should never have tried to cross...their passports should be revoked. If you enjoy Japanese cuisine, avoid this place, or get ready for a great disappointment. read more

WOW! Was not expecting this kind of GEM in Moab- Everything was SO fresh! Our party of 4 sat at the sushi bar and both of our sushi chefs were unbelievably knowledgable, personable and artistic with our food. We started with some edamame, seaweed salad, crispy wontons with tuna, and sake/beer. Everything was absolutely delicious. From the sushi bar, we ordered a sashimi sampler, salmon and avocado rolls, California rolls, arches roll, and a ahi tuna roll with elk on top. Wow. The sashimi was more fresh than most of what we get in California, the salmon avocado rolls had fresh crushed sesame seeds, the arches roll was delicious-- rolled in cucumber, and the tuna roll was incredibly good with buttery elk on top!!! Ps-- even the daikon was freshly grated and the stone ground wasabi was better than any I've ever had!!! Couldn't rave more about this amazing find! read more

Well... not sure how it got 4 star. Food really doesn't taste that impressive. The miso soup appetizer is too diluted and not too many miso in it. We ordered Colorado, which is way too spicy. You can only taste out jalapeno. Other than that it has some veggie in it I guess. We also ordered the Arch. Wel.. there's no rice in it. Only has some cucumber wrapping. It tastes kinda good, which has sashimi in it. But the overall environment is good and the service is pretty good. read more
