Overheard some folks talking about how great this place is so we decided to check it out. The food was absolutely delicious and the restaurant itself is so nice. The countertop is much roomier than other handroll places, as is the seating - so much more comfortable. You really can't beat the lunch special pricing. Went last night with my wife after IG feed me a video. I don't really ever say this, but thank you to the algorithm. Parking wasn't terrible, especially for Culver City after 8. Walked in no reservation and was immediately seated. We ordered the special for $75. Food comes out timely and enough time between each round to savor each item. I'm not a big fan of jalapeños, BUT the jalapeño yellowtail hand roll blew my mind. Will definitely be coming back. Wow wow wow. This place is amazing. We went on opening night and were blown away. The interior is set up like an elevated Kazu Nori, yet also very warm and welcoming. We tried a couple of the 4x4's and added a few extra items on the side. The fish was absolutely incredible, very high quality, and the skewers - that was my favorite part. The chicken meatball and the wagyu skewers stuck out as the highlights for me. And on top of that - service was amazing. Tried the omakase and taste of Saijo set and the food was amazing. I especially loved the smoked selection in the Saijo set. I knock off one star because the pacing was way too fast. When there's handrolls, you want to enjoy it while the seaweed is crispy. When there's kushiyaki, you want to enjoy it while it's hot. The food was coming one after the other when I hadn't even finished my first bite of the one that came before. My partner and I felt too rushed to finish each dish and properly enjoy the next. If Saijo just fixed the pacing, this could easily be one of the best restaurants in the area. read more

Great food and great service. The server said this place has been open only 2 weeks now. Hand rolls were better than KazuNori. They roast the seaweed before making the roll, so it stays crispy to the last bite, whereas at KazuNori I'm always stressfully trying to shove the hand roll in my mouth or else I won't even be able to break the seaweed on my second bite. The fish was good quality as well, and the hand rolls are packed very generously. Their lunch sets are a great deal--$22 for miso soup, 3 handrolls, and a skewer, OR miso soup, 1 handroll, and 5 skewers. It was a really nice experience. It felt like the food kept coming. Very tasty. The only thing was the edamame was on the salty side and I couldn't even finish them even though I like to try to eat all my veggies. When I mentioned this to the server, it took her awhile to say"I'll let the chef know" and I'm not even sure she did. Wonderful west-side haunt. I happened upon Saito for their Dine LA lunch menu. I'm eager to work my way around their menu at experience the dinner vibe. The hand rolls were exquisite. I was never in want of soy, even for un-sauced rolls, speaking to the freshness and pride they have in it. It's a step above without pretentiousness. The chefs were friendly, if too busy to engage. The staff was very friendly and really know the menu. The setup is cool. I'm fond of the u-shaped bar seating, creating a kind of communal and theatrical experience, while the stools aren't so close that intimate conversation is impossible. Recommend! Tried Saijo for the first time during Dine L.A., here are my thoughts: Ambiance- very Kazunori vibe, small, efficient, modern Service- efficient, friendly, the person making the handroll was so polite and patiently answered my questions, 5 stars for service Food- Overall, the handrolls are better than the kushiyaki (grilled) dishes; wish they provided rice to go with the kushiyaki because most skewers were oversauced and salty Dine L.A. Menu: Miso soup-delicious, has fried tofu pieces which are my favorites! Edamame- served cold, unsalted One Bite Hand Rolls (albacore jalapeno, bluefin tuna, salmon with escargot butter)- these will be offered on a rotating basis as specials, the best part of the meal, especially the seared salmon with escargot butter! I got an extra order of the salmon. Will definitely trying these one bite hand rolls! Handroll (bluefin tuna and Signature)- they mix a tart radish with the bluefin tuna in the handroll which is not to my liking---makes the fish taste "old" and the tartness overwhelms the taste of the fish; the Signature handroll, on the other hand, is delicious and would recommend getting it Kushiyaki (Tsukune-chicken meatballs)- completely over-sauced and extremely salty, definitely need white rice with it My husband got the 3x3: 3 Handrolls: nothing special, bluefin tuna is the same as in the Dine L.A. menu so can't really appreciate the tuna at all, blue crab and salmon were same as any other handrolls 3 kushiyaki (shrimp, tsukune, negi-chicken thigh with green onion): shrimp was delicious, the best of the skewers, tsukune- see above, chicken thigh with green onion-again, over-sauced and extremely salty We also added the sugimono (chicken gizzard)- overcooked and this skewer was tasteless and could have used LITTLE BIT of the sauce that was was on the other skewers Overall- very reasonable price point, will stick with the one-bite hand rolls and signature handroll and pass on most of the skewers, except the shrimp; they really should add white rice or saboro rice (chicken rice) to their menu like most other yakitori places read more

Saijo was a good experience. The food was good. The wait staff attentive. It is a loud environment due to fake hardwood ceiling and concrete floors. My only complaint is the drink costs. $14 for a Sapporo light seems a bit excessive. read more

I asked if they did anything "more filling (read more rice)" and they said sorry, no we don't really do that any more".... Ok so I got another hand roll that they double wrap or use hand wrap paper that makes the third bite on both of my hand rolls fall apart. Like come on. I had to ask and my server mentioned it was the owners first attempt at this type of venue coming from ramen. It shows. read more

The setup is a wrap around bar for a quick and casual feast on handrolls and grilled skewers- We got the 4x4 Handrolls and Skewers - and added a couple a la carte skewers - my favorites were Chicken Tsukune Japanese meatball and the Butter & Potato skewers.
