The staff here is amazing. I tend to always start there because they set the mood for what comes next. Well, I decided to try the breakfast buffet. I have to say that the food was unexpectedly fresh and delicious. I have to admit that I ate too much. From scrambled eggs and sausage to biscuits and gravy and omelets to fruit. All delicious. I will be eating here again. The fruit was fresh and sweet. The made to order omelet was made with care and savory. As well, the sausage was slightly spicy. The biscuits were buttery and flaky too. Had the pleasure of dining here for a week while we were here on vacation. This was so convenient for us for breakfast each morning. There were four of us and the buffet provided something that each person wanted. I didn't dine in the restaurant for dinner, however had it sent to my room. I ordered bruschetta, salad, and a crab cake and it was delicious and plentiful. It came within 20 minutes of ordering and the two gentlemen that brought it were fantastic! The atmosphere was casual but kinda intimate, which was perfect for dinner for two after traveling all day! The hostess and wait staff were great. Our waitress knew all the beers available and made an extra effort to get Tim the beer he wanted. We appreciated the attention. The menu isn't extensive but it is varied. Tim had the seafood pasta with lemon sauce. I have the Mediterranean flatbread. Both were delicious! And it was actually a lot of food! We also had the fried calamari. The pasta had a good amount of seafood and the sauce was very well flavored. The flatbread toppings were fantastic. The only part that wasn't great was the bread itself got soggy and flimsy. All the toppings fell off! The calamari was good. The maranara sauce was a little thin and I had mixed feelings on the other sauce. Salt Restaurant-Cocoa Beach, FL- 2 Stars There, just up ahead, half buried in the sand. Do you see it? It looks like an old bottle, maybe thousands of years old. I wonder, if I rub it, will a djinni pop out? I am, after all, in Cocoa Beach. The same beach Capt. Tony Nelson, USAF Astronaut, was walking on when he found his Jeannie in the bottle. If I do rub this bottle and she materializes, maybe I can order her to help with the food in the Hilton restaurants, after eating in both, magic appears to be their only salvation. I should have known better after my horrid experience at Longboard's, but after growing up a bit south of here and watching, "I Dream of Jeannie," I couldn't give up. I had to go back and try the other restaurant located in the Cocoa Beach Hilton, Salt. They are run by the same restaurant group, though I was hoping that, Salt, presented as their "upscale" joint, would be better than their casual dining hell, aka Longboard's Tiki Beach Grill. As my server, Amy, approached to take my order, I recalled my said experience at Longboard's and thought I should start with something strong, yet simple to concoct from the bar, so I ordered a Bullitt Rye Manhatten. I am guessing on how my drink was mixed that they shared the bartender with Longboard's. Even if it was a bit heavy on the vermouth, at least this time I could tell what I was drinking (maybe someone slipped them a copy of the cocktail jockey's bible, "Mr. Boston Official Bartenders Guide"). Now that my head was taken care of and my soul soothed, I turned my attention to my palate. After perusing the menu at length, I decided on the New York Strip Steak with a Morel mushroom reduced demi-glace glaze. I felt sorry for my server, Amy. She was on point and obviously dedicated to the task at hand, but not even her excellent service could save this meal. The steak came with a side of mixed summer squash and zucchini along with an order of fingerling potatoes. The Steak was undoubtedly a low-grade choice cut, not prime as it had the consistency of soft leather and while the demi-glace glaze was serviceable, it wasn't extraordinary, or even ordinary and it tasted as no steak should ever taste...bland. The Patty Pan squash duo was executed so improperly that I am still not sure what dish the chef was trying to fabricate. Somehow, he had sauteed all the flavor out of one of my favorite summer side dishes. This brings us to the final item on my plate, the order of fingerling potatoes. Obviously microwaved and grossly undercooked, they had to be the most wretched potatoes I have ever had the displeasure of trying. I would say "eating," but they were so raw it was almost impossible to do so without running the risk of chipping a tooth. To top off this wonderful gastronomical experience of mine, the hostess sat a family with three extremely tired, cranky, loudly whining children behind me. If Jeannie was around, I sure could have used her to turn those kids into potted palms, or something as serenely peaceful. Then I would order her to the kitchen as they are in sore need of some arm crossing, head nodding, eye blinking magic (or maybe just a completely new staff)! As Hilton Honors "Gold," my wife and I received complimentary breakfast in Salt Restaurant & Lounge each morning. We took advantage of the freshly brewed, delicious coffee; the juice included with the buffet; and, the selection of hot and cold dishes provided. On one morning, my wife had an exceptional, cooked-to-order omelet; and, I had to go up to the room to get some cash to leave a tip for the chef - yes, it was that good. I tried the do-it-yourself waffles one day, with butter, peanut butter, and maple syrup - which is my favorite! Another day, I had the oatmeal, with some granola on top, which was superb. We had terrific service each day; and, provided a 20% tip on the value of the meals and beverages. read more

I had breakfast here during my stay at Cocoa Beach Hilton. It is very standard bread fare. Nothing to write home about. However, the break fast potatoes were cold, bacon was greasy, and my made to order omelet didn't have much taste despite adding several ingredients. The server was great though! Always fresh. Lunch At the tiki bar is fun and good. Peal and eat shrimp and sandwiches and wraps as well. Dinner entrees include variety of fresh seafood. With good sauces and always hot. Not sure where the other reviewers ate. But it simply can't be the same place. We ate here as a convenience given all the negative reviews so we weren't expecting much. As a foodie, I treasure a delightful meal. And this was OFF the charts! My husband had the filet with pea purée and pancetta and it was perfection. I had the pork belly and I can't fathom how they made it so consistently crispy and juicy simultaneously. I've been trying to make pork belly this flawless for years and can't do it. And the fruit sauce with the pork belly cut the richness in perfect balance. Even the sides were executed impressively. The asparagus was cooked but crisp and had a wonderful smoky grill char. And our server gave us terrific attention. I honestly would whole heartedly recommend this place and hope this drop in the bucket review will convince some hotel guests to stay when they might otherwise have ventured out mistakenly. Some friends and myself made reservations at this restaurant going by the menu they have on their website. When we arrived they had a special menu for Christmas. The problem was they had no vegetarian entrees on the special menu. When we asked about vegetarian meals they said they had to cut the menu down because they were so busy (which makes sense) BUT they should of at least left one vegetarian/vegan entree on the special menu. They only had bread and salad. The waitress was very nice but this was very frustrating as there were not many places to eat on Christmas. We would have made sure we went somewhere to accommodate our eating needs had we of known. They need to do better read more

We had a very pleasant stay at the Hilton Cocoa Beach! This morning my family dined at the Salt Restaurant for breakfast! I loved that there were so many options for our family - our young kids had waffles and fruit and fruit loops. My husband and I both got omelets which were made on the spot with our choice of fillings - mushroom, ham and cheese for me and ham and cheese for him. Adam makes an incredible omelet and the salsa is exceptionally good and fresh. Our coffee mugs never went empty and the host and hostess had crayons and placemats ready for the kids upon seating. I was so impressed with this breakfast, the selections, and the wonderful service. The buffet had everything from potatoes, sausage, bacon, muffins, fruit, yogurt, and juices to diy waffles! We had breakfast here before a long day at Kennedy Space Center. This is much nicer than say, a Marriot buffet. And the price REALLY reflects that. We decided it was worth it to eat a big breakfast so we could skip lunch. BTW, it isnt worth it. Just lower the prices. Omelette bar is nice, juices are blah. Coffee could really be improved. In fact at this price they should include a starbucks coffee from just down the hall. We had our wedding reception dinner here. The food was absolutely delicious! We had the whole place to ourselves since this was before Salt recently opened up to the public once again. If my horrible room accomodations at the Hilton weren't bad enough, the Salt Restaurant there was even worse. Now, the food wasn't bad, and the server was very good, but the female manager was awful. Restaurant closes at 10pm on Saturday nights, we show up at 9:35, manager says" ,You know we close in 20-25 minutes, right"? She actually tried to run is off and NOT eat there! Who does this? Apparently she had something better to do, than her JOB... We stayed at the Cocoa Beach Hilton on New Years Eve with another couple. We decided to have a nice dinner inside the hotel rather than venturing out of hotel. Our server was a sweetheart. She recently moved from up north & was very good at her job. Everything about the dinner was very mediocre. My husbands salad with chicken was filled with chips of chicken. My tomato soup was good but a small serving. My appetizer with crab meat, avocado & mango was totally tasteless. It wasn't served with dressing, the server suggested it. Our calamari was HORRIBLE. Tasted nothing like calamari. Very small serving. Over cooked, small pieces of fried "what".The sauces served with calamari were good. Our friends ordered a Cesar salad. There was no complaint. They also ordered the pasta with fish. Egg noodles & small amount of fish was nothing to praise about. It was also tasteless! Too bad our final dinner of 2019 sucked. $120 later, Yes.....we could have sent everything back, but we didn't want to make a scene. Bottom line........I would suggest eating at Tiki Bar & eat a hamburger! Next mornings buffet breakfast was excellent. Only had the breakfast buffet here, but the selection is really quite good: a steal for a hotel in this class. Hash browns are sliced roasted potatoes that are deliciously seasoned. If you like crunchy bacon like I do, you'll be in hog heaven here. Omelet station needs more veg variety but overall not bad. Four plus pastries to choose from, make your own waffles, six fruits, regular and Greek yogurt, steel cut oatmeal with the usual trimmings, bagels and croissants, sausage and scrambled eggs. Everything is consistent and refilled frequently. Glad they haven't started serving "Char-bucks", which is available in the hotel lobby... that would ruin my experience. read more

Sign said to wait to be seated by maitre d'. No such person appears for 10 minutes. Then a man dressed as a waiter appears to motion us to follow him. We do. But maybe we weren't swift enough. He disappears and/or we lose him. So we head back to the sign in wonderment. Then a waiter with pleasant presence takes us to a table for 2 and provides outstanding service. Delicious meals. The bisque soup was yummy. Large chunks of lobster. The shrimp cocktail = . The roast chicken was incredibly flavorful and cooked to perfection. The mixed seafood dinner was enjoyable. Asparagus was out of this world! The service was very good as well. We had Valentina as our waitress. She was very pleasant & attentive. The only thing that almost had us turn around & leave was the hostess & her attitude. Seemingly put out because we were there at 5pm (she said 4:59pm). Restaurant opens at 5pm. So, we had to stand at the hostess station while she fills out paperwork & assigns her staff. She had to take our name & room number for what reason I do not know. We paid for our meal in cash. Worst holiday dinner ever. We had a 7:00 reservation for 7 people. When we arrived they took us past the beautiful atmosphere tables to a conference type room that was cold and disappointing. The table wasn't even set for the number of people in our party. I spoke to the hostess and was told there are no other tables. I asked for the manager and she told me she was the only one to talk to. They did have a table outside by the pool/bar that was available. Not the candlelight $60 a steak dinner we were expecting this had burgers and fish tacos. There was loud music and TVs. We ordered drink and food. Drinks came fast, but food never came. 1 1/2 hours latter I was the only one who got a plate of foods. Cold fish tacos! I sent it back and only mine came back 1/2 hour latter. I picked up the taco and it fell apart. So did I. That was it!!! We told the waiter (who was trying his best) to Just forget it we're leaving. We gave him a $20 tip and left. NEVER AGAIN! read more

You honestly couldn't pay me to come back here. I may be just a bit biased as I was visiting from Washington, DC which is an East Coast restaurant mecca and where some of your top restaurants are located in hotels, but I don't think so... this was just horrible all around. I was staying at the Holiday Inn on 1/5/18 and didn't feel like leaving to eat, so decided to check out the hotel restaurant (outside bar was closed due to weather). The service was almost as cold as the bland and sketchy food they decided to serve us. The two star rating is only being given because out of the three dishes we were served-- one was actually quite good (the corn chowder). The lobster bisque had clearly been sitting in the bottom of the pot and the mushroom ravioli left way too much to be desired. Central Floridians, is this how you dine? A shame really. read more

Really wish I would have went to Florida's Fresh Grill (close by and great reviews). Lobster bisque was eh. I think there were three pieces of lobster in there and pretty feeble. Grouper was not that fresh (small portions) and drinks were really expensive. Hilton corporate needs to understand their competition down here and provide more value. Only 13 reviews? Really? I'm tired and just wanted to stay in, but I learned my lesson. Always go hit the good spots if they're close by. read more

The waiter took excellent care of us and told us all about what to do in the area. We started out with local beer and delicious bread. I got the citrus-infused salmon-delicious with asparagus and carrots plus sweet potatoes. My husband got a fish pasta dish with beautiful noodles that he said was delicious. Terrible service, waited 20 minutes to be seated in an empty restaraunt. Bartender was unaware how to make a Moscow mule, but claimed to know. Waitress friendly, but our apps never came after waiting 40 minutes our food arrived so finally they say oh you never got the apps? Everything is relative for sure. As a decent couple we were staying at the Hilton and decided that the Hotel Restaurant would be a good accommodation for dinner. We got to the hostess station and waited for someone for a few minutes. When she arrived she pretty much shunned us away by blatantly saying that it was going to be a very, very long wait, even though there were half the tables vacant in the restaurant. When we asked about the bar service, she said, "you can try it if you want". We got to the bar and waited more minutes before a bartender even showed up, and then got more of the same rude treatment with,"are you sure you want to order anything, because you are going to have to wait a very long time." At that point, we got the message that they did not care to serve us, or treat us kindly.
