    ""Welcome back my friends, to the show that never ends We're so glad you could attend, come inside, come inside?" (Emerson, Lake and Palmer) The menu served at Saults' popular outdoor food truck has moved inside and found a home inside the Dudleytown Brewing Company in Windsor, CT. Saults now serves as the one and only official food vendor at Dudleytown. The brewery built out a kitchen and huge pizza oven on the far-right side of the tasting room for Saults. The construction and "new look" is gorgeous. Eight of us had dinner there a few days ago, and their menu was excellent- bao sandwiches, tacos, pizza, apps, pasta, steak, chicken and more. The chicken tacos were a popular choice -three of us ordered them, including me. They were flavorful, tender, and packed plenty of chicken, beans, corn, and guacamole on fresh tortillas. Three of them per order was $12. Two of my buddies went with the Spaghetti and meatballs ($18) and it looked great. It was a ridiculously large portion, so each took a good chunk of the food home. From what I could see (and taste) Saults will do a well-deserved fabulous business at Dudleytown.

    Saults Eclectic Cuisine is a New American restaurant that opened at Dudleytown Brewing Company in Windsor, Connecticut in April 2025. It was founded by husband and wife Stephen and Ashley Lundgren. Stephen has been in the food industry for over 15 years. He worked as a chef for the Hartford-based Max Hospitality Group for a decade. Stephen started off as a line cook for Max a Mia, then moved on to a Sous Chef position at Trumbull Kitchen, and then returned to Max a Mia as an Executive Chef: a position that he thrived in. He eventually left the Max Group and decided to serve as the Head Chef at Camille's Wood Fired Pizza in Tolland. Over the years, Stephen won numerous accolades at the various restaurants that he worked for. He and his wife Ashley eventually decided to invest $150,000 of their savings into a food truck which they dubbed "Saults". Featuring an eclectic mix of multiethnic cuisine, the truck had its first event in Tolland in November 2023. It was a hit at several breweries, wineries, farmers markets, and private events throughout Connecticut. Eventually it became part of the food truck rotation at Dudleytown Brewing in Windsor. Before long, it was the ONLY food truck that came to the brewery. The owners at the brewery had hoped to bring an on-site restaurant to the space. A deal with Square Peg Pizzeria had fallen through and they eventually offered the Lundgrens a chance to make a brick & mortar version of their food truck. The menu features wood-fired pizza, pasta dishes, burgers, tacos, bao buns, salads, and various appetizers. I recently visited Dudleytown Brewing for the first time with a large group of friends. We were exciting to try the beer but we were equally excited to try food from Saults too! We decided to order multiple plates and share them. The Saults kitchen staff brought out plate after plate for all of us to enjoy. We started off with small plates such as tacos (chicken and pork), bao buns (Nashville hot chicken, pork belly, Korean BBQ, Miso), wings (buffalo, bourbon honey BBQ, Thai chili), and meatballs. Next we tried some entrees such as the "DTB Burger", "White Bolognese, "Chicken Parmigiana", "Grilled Marinated Flank Steak", and even a caesar salad. The highlight of the meal was the wood-fired pizza with varieties such as "Buffalo Chicken", "Pork Belly", "Truff Mushroom", and "Great Balls of Fire". Every single dish that we tried was fantastic! It was a truly memorable tasting experience and I look forward to returning with my family!

    Formagio pizza is BOMB, and so is everything else on the menu- great food and awesome atmosphere. Everyone working is very nice!

If the thought of tropical Caribbean cuisine interests you, zip on over for some very good jerk chicken, beef or chicken patties, empanadas, plantains, mac and cheese, Spanish rice, a slew of sandwiches, tropical juices and frozen coladas. Your hosts will be Mike and Dee and I'll bet you a nickel they'll be the sweetest people you've meet all month. Mike is the front counter gent, Dee does the cooking and we had such a wonderful time shooting the breeze with them. We split a terrific chicken empanada as a starter (just $4) and it was flaky and juicy and just freaking great. My wife went for a Grilled Chicken Sandwich ($10) -a huge portion of chicken on a roll with tomato and field greens. I went for a Caribbean Platter (meat and Spanish Rice and four Sweet Plantains). I got the large size ($17) with spicy jerk pork. It was awesome! The rice was very good served with Jamaican style peas and olives, the four sweet plantains were excellent, and so was the shredded jerk pork. Half the portion was plenty for me. So, when I consider the quality, the value, and the customer service, it's hard to find any faults at all. Thanks Mike and Dee for a great meal that served nicely to kick off our pre-Hurricane Henri weekend. Do yourself a favor, get over your thing about trucks and head to the Dogger. Shuckin Truck was an absolute hit! They set up the outdoor raw bar...clams (littlenecks), oysters, and shrimp on ice, in a very attractive manner. The table was manned by a charming "shucker". There were an assortment of passed hors d'oeuvres which included lobster grilled cheese lobster triangles...these were indescribably delicious. Everyone was oohing and aahing over these. I also loved the smoked salmon on toast and the small cups of really tasty clam chowder. All the appetizers were incredibly delicious although I would say the lobster grilled cheese was the biggest hit. All of the staff were polite and friendly. After the appetizer round, the lobster rolls came out and they were simply spectacular. They were true New England lobster rolls on toasted square edged (this is key) frankfurter buns, and absolutely stuffed with chunks of delicious lobster meat that had been lightly dressed with mayo. Those rolls were out of this world, deliciously prepared and very generously filled with sweet lobster meat. They also served fabulous fish tacos. For the non-seafood eaters of which there were none at this party, they served a pulled pork taco which was spicy and delicious. The portions were generous and the food just kept on coming out. While there was plenty of additional food at this party from other vendors as well as some homemade additions, Shuckin' Truck was my favorite part of the overall feast. Great job! I would not hesitate to hire them for a party or to seek out the food truck wherever it was parked!

They were playing reggae music, the fire was going, beers/cider/wine were flowing; a fun and chill afternoon. They offer so many beers from all different breweries! I didn't really know what to expect before going and this place was on my "to check out" list. I was pleasantly surprised. I was happy they were kid friendly because we brought our two little ones. I saw some people eating pretzels and we got some delicious buttered popcorn to snack on. The kitchen offers wings, chips/salsas, lobster rolls, bratwurst/kielbasa, burgers, etc. They have food trucks onsite, but when we were there (early afternoon) I didn't see one yet. I can't wait to go back during the summer/fall because their yard looked fantastic. They had a small stage, picnic tables, and fire pits. For recreation, they have disc golf, Cornhole, etc. In the summer, they also serve ice cream. This place will definitely be one of my go to spots to chill!

They have seating inside and outside, lots of picnic tables, and a lot of places for small children to run around. Dogs are welcome outside and of the three or so there, were all well behaved. I didn't try the food because the kitchen opened at like four in the afternoon. There was also a food truck outside. It looked like typical bar food but the small children loved it.
