I'd give Sebby's a 3.5, rounding up to a 4! I had dinner around 8/9pm on Valentine's Day so the menu I got was a little more pared down than their usual. What worked: -- servers and staff were all very kind -- there's decent menu variety and something for everyone to enjoy -- the music and vibe inside was a nice mix of busy yet intimate, it's a great place for a date or fancy night out What didn't work: -- I think this is likely due to it being Valentines Day, but the service was pretty spotty. Servers almost gave us someone else's food twice and it took a while for our food to get to our table. -- my dish (shrimp primavera) could have had a little more going for it! The pasta and veggies could have been a little more seasoned (and I would have loved more veggies), and the shrimp was waaaaay too salty, it was difficult to eat it all. It definitely wasn't a bad dish but a few small tweaks could have made it really wonderful Overall, I'd come here again! I think this might have just been an off night and I'd love to return to try some of their other dishes. The food wasn't the greatest but the drinks were good. The happy hour deals were enticing and the covered menu included a variety of appetizers and beverages. Unfortunately their specialty cocktails weren't included but they were reasonably priced regardless. *Artichoke, Spinach, and Cheese Dip: had a grainy, chunky texture made predominantly from the artichoke. There needed a better mixer and creamy element. The flavors resembled a thick pesto. The toasted bread was the best part. *Spicy Calamari: nicely fried but a tad too salty. Would have appreciated a lemony component to cut through the grease. *Garlic Fries: thicker cut with slight crisp. They were garlicky but the Parmesan left a strange aftertaste. *Green Tea Shot: pleasantly fruity and the pour was generous. The service was friendly and we look forward to when they'll hold music nights again. Ultimately the drinks tasted better than the food. Food was very good. I will would return to this restaurant though it seems like they were struggling a bit with making everything flow smoothly. I will break down the good and the bad. We ordered 3 different cuts of steak and all were cooked as ordered and quite delicious. Highly recommend the NY strip with bacon crust. Catch of the day and rack of lamb also quite good. Service was quite pleasant. Seems like it needs fine tuning and everything was a bit slow but there were a lot of things going on prom and Mother's Day weekend. The calamari appetizer wasn't that great, a bit rubbery. The wedge salads were generous and beautiful. I would prefer less tang and more bacon for better balance. The cocktails were subpar. Either weak or too sweet and not much creativity. There's a renaissance in the cocktail scene right now and they definitely seem behind. The ambiance is not bad. The redesign is clean over the previous 2 restaurants in that location. The classic jazz and crooner music was very nice for the scene. Bottom line, I had heard some iffy things from my friends but I think they must be finding their footing and improving. So I'll check back on a non holiday weekend. read more

Summary Review: The food and the service were next level. Top notch compared to everything else in Visalia. I'd choose Sebby's over V,P. any day and at half the cost. The only reason its a 4 star was some other issues that can easily be fixed. Longer Review: My dinning experience with my wife last Friday night was a wild ride. I want to say the first 30 minutes of the experience this place was a 3 star, if not a 2. But the last 30 minutes, oh man, it was 5 stars at least. So I'm settling on 4 stars but I completely understand the 5 star reviews. When we first walked in at 7pm on a Friday night and it was DEAD inside. There was only one other couple in the whole place. I thought, uh ohhhh. We Stood by the host spot waiting to see anyone that works there and we wait way longer than you would expect to see anyone that worked there, literal minutes of just looking around the restaurant trying to spot someone to acknowledge we were there. Once we were greeted we had the pick of whatever table we wanted as no one was in there, so we chose by the window so we could people watch. The restaurant, or maybe just the area where we sat, had a on odor to it, I couldn't place it, but it was off putting a little. Another "uh ohhhh". The complimentary bread they give you is decent, but don't fill up on it b/c you'll want to room for the food. We talked to our waiter and he was a great guy and and friendly and knowledge able to the point we thought he was the owner. He also explained that he thinks they are slow b/c its Lent and they primarily sell beef. We ordered the spicy calamari for our appetizer and when it came I was pretty disappointed. Most of the breading was mushy and it didn't stick to the calamari. It's also central valley spicy, so don't expect anything other than a little kick at the end. Yet again, another red flag. Then my wife noticed there we a couple little gnats bouncing off the window which is just not a good sign. So given all of that, I'm thinking, ehhhhh, I'll never be here again. But then let me tell you, things turned around quickly. Our server came back with some drinks and the little smoky bubble thing they do is a MUST experience. It looks so cool. On top of it, the drinks we fantastic. We got to know the server a little better and he was telling how me actually made all the drink recipes himself and some other cool things. I ordered the Rack of Lamb and My wife ordered the New York. When the food came out, it was the manager who brought it out to us and he asked my wife to cut it open to make sure it was cooked to her liking. The chefs nailed it. Same with my Lamb. My wife loved, loved, loved the steak and the char on it was spot on. Same with the lamb, the char was incredible. On top of that the Lamb comes with an amazing sauce on top of it. The garlic fries were delicious and well cooked and over all our meals were a 10 out of 10 and really just hit the mark. When we were finishing up one of the owners came over to talk to us to see how our meals were and we gave glowing reviews. They told us to check their Instagram account b/c they are planning on having a couple events coming up, such as possibly a Frank Sinatra night for dinners and drinks and a show, so that seems cool. Phew, that was long, I know, but like I said, it was a roller coaster of a dinning experience. We really wanted to try this place. This location serves a tomahawk steak and we wanted to try what else they had to offer prior to actually going to order it the next time. Place wasn't too busy they weekday we went. Our server started off fantastic. He got our drink orders to us quickly. Appetizers came out on time. We waited a bit for the entrees, as my husband did order the lamb chops. After finishing our entrees we wait almost 20 to 30 minutes before our server returned. No idea where he or any of the other staff disappeared to. Drinks were good. Food presentation was bad, but food tasted fine. The bruschetta just didn't look amazing but all the elements were there. The crab cakes were good but why did it have beans as a topping? My pasta dish was good, but the server asked if I wanted parmesan on top I said just a little and he literally dumped a spoonful of grated cheese on top of the pasta. It was fine, but for the amount you were paying this isn't it. Been to better places with better food and service at that price point. Won't be returning for the tomahawk. read more

Sebby's has a bit of everything and the quality is amazing. We were quickly seated without reservations on a Friday at 5:30, very friendly server. We were told that appetizers and cocktails were 50% off before 6 so we ordered the pork belly and a couple cocktails. Tasty pork belly with some chili flakes on the side to make them as spicy as you like, and I love spicy! Ordered the filet Diane and the steak had a nice crust and the sauce was delicious. The interior has been fixed up since Nash's was here, much more classy now. They have two bars but I was told the back bar may become a quality wine cellar in the future. I like this place! Was here for work and decided to pop into Sebby's for dinner. It was a slow evening, so I got all the attention from the friendly staff. The restaurant is intimate, but the music was a little loud for my taste. It's dimly lit in the dining area, but the bar area was nice and bright. Menu is small, but I went with a steak and salad. Steak was perfectly cooked and the generous sized salad was crisp and fresh. They did have some very interesting cocktails that I didn't get to try, but would check it out next time when I am not traveling on company's dime. read more

I ordered the braised short ribs, which were phenomenal. tender, richly flavored, and melt-in-your-mouth delicious. The veggies on the side were spot on, cooked perfectly, not too soft or too firm, just the right balance that let their natural flavors shine through. My guest had the steak, and it was cooked to absolute perfection. What impressed us most was that the waiter even asked us to cut into it right away to ensure it was exactly how we wanted, so we could keep it hot and enjoy it at its best. We also tried their special cocktail, the Blue Fog, a wild creation topped with a bubble filled with smoke. It turned heads all around us; everyone was asking what it was. New owners!! It's not Nash's anymore... that's the first question I asked haha. These owners are from little Italy and brought some of their dishes over from that menu if you miss the Italian YUM. Immediately upon walking in we noticed the decor was just gorgeous, no more rickety set up tables & chairs, plus bad food! Sebbys GM, Jason, happened to be there & showed us how they completely remodeled the bars, seating, and decor. It feels upscale and classy now. My husband and I sat at the bar and had a couple of drinks . If you like watermelon, you need to try the watermelon lemon drop! Kennedy scored with this one. I asked her for a tahin rim and it tasted just like a delicious Mexican candy shot, but more lemony. I came here recently with my grandfather and husband. My husband and I had the filet and the ribeye, and my grandfather had the chicken masala. Out of all the dishes, I would definitely go with the steak, it seems to be their specialty. Steaks were cookedperfectly. We were also impressed with their crabcakes and the fresh baked bread. The only thing that I think that they could improve upon would be introducing a homemade noodles. However, I am a pasta snob and lived in Italy. My husband and I recently went to Sebbys to try their steaks. I had been there several times for happy hour and it was always awesome. Getting back to the steaks, I had the Steak au Poivre. It was the best tasting, most tender filet I think I have ever had! The side said seasonal vegetable, I was expecting zucchini and squash. I was very impressed with roasted carrots and asparagus that were cooked to perfection. The 2nd side was garlic whipped potatoes that were also very flavorful. My husband had the NY strip which he said was very good but next time we go, he also is getting the Steak au Poivre. The owner was our server and he was fantastic. They also have a nice wine list. As someone that is quite picky with my filet mignon, Sebby's cooked it to perfection! Every bite was consistent, and juicy; the sauce was delicious and the whipped mashed potatoes were scrumptious! I've traveled to Italy and I must say I felt like I was back. From the waiter's European accent to his impecable service, and not feeling rushed, I loved the overall service and ambiance. The Italian music was my favorite. I had the Italian Lemon drop and I must also say I felt like I was again back in Italy, the best I've had in town. My husband had the lamb rack and he also expressed they were cooked to perfection, every bite consistent. The Bruschetta was also delicious! The Atmosphere of the restaurant was very dark and gloomy. The waiter was overwhelmed with our party of 12 people. Which was very concerning considering we were the only customers in the whole restaurant. When ordering hors d'oeuvres they told us they they ran out of salad, for this being such a high rated Yelp restaurant, I strongly don't agree with that and would give it a rating if a 2. We ended up only having our hors d'oeuvres and drinks and left the restaurant to go to another restaurant.
