    Being European, it is often hard for me to find bread that I really like. I like bread with a heavily charred, crisp crust and a light, pillowy inside with big air pockets. She Wolf Bakery make just that type of bread: Their Bâtard, which I find at greenmarkets at Domino Park and at the McCarren Park, is a naturally leavened bread, with no commercial yeast, and a slightly sour crust.     You know how there are places that seemingly come out of no where and explode, and you ask yourself "self, I am a real NYer and a full time carbnivour, how did a this get past my radar for so long!" Well this is one of those places. The bread has a uniquely wonderful char on blistered edges that walk the line of being unacceptably burnt while maintaining a chewy moist interior (similar to NY'ers themselves) You can taste the nutty freshness of real flour that contains more nutrients than simple carp laden imposters. These are top end ingredients placed in hands of masters of technique. If you don't like what is being rolled out here you should stop searching and confine yourself to the white bread isle in your local Key food. Check out their website for their location, it will be at a farmers market, so far no brick and mortar that I know of.

The space is relatively small, with a line inside and outside and a few tables outside. The length of the line and wait time varies based on the time of day and if you go on a weekday vs weekend. Go early if you don't want them to sell out of anything or purposely go a little later if you want one of their lunch sandwiches on focaccia. I have had the tomato and garlic focaccia twice now and each time it has been exceptional. Minor critique, the slices of garlic could be a bit smaller. I also had the shakshuka focaccia which is divine and I would absolutely recommend both. I need to come back to try their sandwiches as well. I am not a sweets person, but everyone I know loves their pastries. Getting someone a gif tcard here makes for a great gift.

I'm usually more of a savory girlie but all the sweet items we tried were great, especially the rhubarb croissant and the earl grey morning bun. I really enjoyed the focaccia sandwiches (smoked salmon and pea/mint/feta were elite) and the artichoke green garlic slice. The flavor of the sesame stirato was excellent but the bread itself was a tad too chewy for the filling we got with it (tuna salad), so that style probably works better with the jambon beurre. Will definitely be on the rotation whenever I'm in the city -- would love to try some of their seasonal/limited edition items one day, though not sure if I have it in me to brave the lines that can form on the weekends, lol! We'll see :)

It is so clear that they use incredibly high-quality ingredients and carefully curate each component, which is exactly why everything comes together in such an elevated way. The tomatoes reminded me of the ones I grew in my garden during California summers as a teenager. Perfectly salted, layered over soft, not-too-tart feta. The focaccia was made with beautiful olive oil and, while a bit chewier than I usually prefer, gave the sandwich a satisfying bite. I had to close my eyes while eating it just to savor it. The chocolate cherry almond croissant... wow. Such a creative combination, and it did not disappoint. Soft, buttery, and filled with a sour cherry compote that reminded me of a cherry cordial from a box of chocolates. 5/5. Hainsley, who helped me, was exceptionally lovely. Everyone even in line was very nice, the vibes were awesome. I'll definitely be back to try the spicy tofu sandwich and the heirloom tomato tart!

While they didn't have their full selection available, there were still plenty of pastries to choose from. We ended up getting the vanilla kouign amann and the chocolate PB&J croissant. The kouign amann was flaky, buttery, and beautifully caramelized. The chocolate PB&J croissant was easily our favorite. It was filled with rich, decadent chocolate and a layer of jelly that balanced everything out without making it overly sweet. My significant other hasn't stopped talking about it since! We're already looking forward to coming back to try more.
