Even though it was a 15 minute drive up the freeway from where I was, it was worth every minute. The downtown area this shop is in was really cool, plenty of parking, and the moment you walked into this coffee shop you could tell it was going to be good. Lots of space, people sitting and having conversations, and a greeting from the Barista the second I walked through the door. I went with my standard iced oat milk latte with honey and a triple shot and it was perfect. I wish I could have drank it there because the inside of the shop seemed like a place you could hang out for a while. Unfortunately, I had to take it on the road, but that is a shop (if I lived in that area) I would drive out of my way to get to. Well done guys!

Even so, I wasn't asked if my order was for here or to go, and I also wasn't asked if I'd like my coffee cake warmed. Everything was automatically served in a to-go cup with a cold slice of coffee cake. After sitting outside, I noticed other customers enjoying their drinks in ceramic mugs, which would have made the experience feel much more like the cozy coffee shop I was hoping for. It's a small detail, but those little touches can make a big difference, especially for first-time visitors. The quality of the coffee is worth stopping in for, but a little more attentiveness and hospitality would make the experience even better.

Luckily, this place absolutely nailed it. Their mocha is hands down one of the best I've had. In fact, I've been working in the area for the last four days, and I've stopped in for a mocha three of those four mornings. That's how good it is. The staff deserves just as much praise as the coffee. Every barista I've interacted with has been friendly, welcoming, and consistently on point. They genuinely make you feel appreciated and are a huge asset to this coffee shop. If you're anywhere nearby and love a great mocha, do yourself a favor and stop by H. Cheval Coffee. The first thing that hit as we entered the store was the smell of waffle cones! Wife immediately said we need to get waffle cones. Friendly young folks helped with samples and order. Got a cone to share with salted brown sugar & wife always chooses coffee. Both were delicious, creamy, superb quality, and very easy to digest, lol! Even my kid who usually doesn't eat regular ice cream went for the waffle cone with a cookie flavor and he ate it all by himself and loved it! He did not eat any other ice cream during spring break, and he still wants to have this sheep milk ice cream again. Something about sheep milk is just gentler on the body. Should have bought the kid Negranti again on the way down from Paso, when passing thru SLO. Oh well, if don't come back to Paso, maybe will have to get him if we ever go to Phoenix, AZ since I found a location there of all places! The bacon was extremely overdone, the avocado was elusive under the arugula and not plentiful. Parking can be a challenge as the parking lot is rather small.
