We had a great experience here! We went with our 2 kids for dinner and sat outside in mid-March. The inside is small and cozy and there are plenty of tables outside with heat lamps. If you get there before 6pm definitely hit the Happy Hour drinks and food. We lived their margaritas and taco selection. It's a super nice small business with great food and service! read more

Dang!! You guys make awesome tacos and we really enjoyed our dining experience the other evening. We were ready to double-dip within the week for a return visit, but were disappointed to discover you were closed on Sundays, (one of the two days each week where we can go out and enjoy an afternoon dining experience). This is about par for the course here in Longmont. Weather's turning nice and there's lots of business to be had on a beautiful Sunday afternoon, when everyone's off work and available to dine & drink your amazing margaritas. My friends and I ate a late lunch at Summit Tacos yesterday and it was the best meal I've had in a long time. Also, Summit severed me the best tacos I've had since moving to Colorado four years ago. The space was cute and clean and the shaded outdoor seating was a real bonus. I think one of the owners took our food order and he was very knowledgeable about the food and clearly cared a lot about ingredients and preparation. He was also able to guide me to gluten-free menu options and was knowledgable about cross contamination (something that I worry about with Celiac disease). I had three tacos ( the Cochinita- Yucatan style pulled pork with achiote/topped with pickled red onions, the Barbacoa -Slowly braised beef/topped with pico de gallo, and the Nopalitos -Cactus plant sautéed with onions/topped with pico de gallo) and two sides (charro beans and guacamole). The Cochinita is maybe the best pork taco I have ever had. Trust me, that is saying A LOT. The seasoning was interesting and well balanced and the house-made pickled onions and cucumber were perfect. The Barbacoa was delicious as well and the pico de gallo was fresh. The Nopalitos taco was light and refreshing after two meat tacos and a great vegan option. The guacamole was fresh and perfect, as were the freshly fried chips. Ok, the charro beans. I get charro beans as a side whenever possible. These are the best I've ever had. Hands down. I think they maybe had bacon in them or another similar pork product. I'm not positive. They were smokey and meaty without being heavy or too sweet. I had a natural apple soda called Sidral Mundet that I'm now obsessed with as well. They serve Jarritos sodas, sparkling water and I think local beer as well. I was just in Longmont to run errands with friends and stopped by here for lunch but I will now be making the trip from Boulder just to eat here. Great truck with friendly staff and tasty semi modern tacos. On the smaller side but super flavorful with excellent homemade chipotle and verde hot sauces. Carnitas are awesome. For lunch they sometimes have Pambazo, a grilled sandwich where the roll is soaked in a mild smoky sauce. Definitely worth trying. read more

We've lived in Longmont for 13 years , and have eaten at almost every Mexican restaurant in town. Ordered the chilaquiles, Mexican Street corn, and a variety of tacos. Everything was phenomenal!!
