In the winter its a pretty cozy place with only a few tables. Still my favorite Mexican food in Colorado. Completely legit. They got amazing Pambazo and Pozole. Their tacos are top tier. Now they got a restaurant!!! I loved the food truck, and the restaurant is just as good. The pambazo is perfectly executed. Service was attentive and kind while having some personable friendliness, they nailed the casual and high execution perfectly. The Pozole is excellent as expected. Food ok. Host/order taker at front VERY rude. Not going back because of the service. Went to see a band. After having difficulty finding a parking space on the surrounding busy street, my friend and I had just arrived and started to stand in line. Walked in door to assess what we needed to do having never been there before. Small area to order in. There were also other customers in line so we stood close to where we came in, out of way if someome were to need to get by, in the very small room which meant part way in the entrance. As we started to review the menu, it was less than 10 seconds before we were rather harshly and equally as rude, told to "get out of the doorway and quit blocking the entrance". What? Ok. Sure. Sorry! Geez. Already angry at the service within 30 seconds of arriving, we squeezed ourselves into line behind the people already occupying the very small space. When we got to the front and started to order, we were again RUDELY addresses, as well as being interrupted, and abrasively asked, " are you here for band or eating somewhere else in establishment?" We said we were there for band...His response was to advise us that it would be better if we got out of line, even though we were at the main ordering spot for the place and had waited in line already and were ready to order NOW, to go around back to order because it would "take longer ordering up front AND that it would take too long for them to find us and bring our order" if we ordered right where we were. What? After waiting in line, you tell us to go in back to stand in another LONGER line. In a yard with less than 10-15 tables? Some of which were empty and others seating only 2 people? You wouldnt be able to find us to serve us with 20 people and a buzzer??? So, we shifted to back to stand in line. We are here to support the band and the cause, after all. Again. Waited another 10-15 min in line to order, get a buzzer, and proceed to wait more! I ordered two street tacos, mind you. Seemed like 20 minutes before got our order. For two of us. Small plates. SUPER SLOW service. Small beer selection. With such a bad taste for way was treated at front, made to wait 2x in line, and poorly setup process if they cant find you among the 10 tables in the yard, the food could not make up for it. Not going back. Or at least not until they make some MAJOR improvements on their service side. We have friends in bands we like to support so hope Summit Tacos chooses to make a better impression if I ever decide to cross their threshold again! read more

I have been to Summit Tacos 3 times before submitting this review. I have enjoyed every taco on the menu at this point as well as some pozole. My favorites are the cochinita and the nopalito. I recently purchased a large bottle of horchata to go for my kids. Everyone commented was the best horchata, not as sweet as other places. I have eaten there inside and sat on the patio enjoying trivia. This place is, above all, consistent in both food and service and the atmosphere is really charming down to it looking like you are walking into your abuela or tia's house. They are friendly and professional every single time. When you approach the counter to order they smile and interact with their customers instead of treating you or your order transactionally. Taken all together, this place is charming and authentic on every account. Love that we can see San Pascual blessing your kitchen along with all of the beautiful Mexican art work hanging throughout. I have traveled extensively through Mexico as well as taken lots of cooking classes there. This place is worth a stop even if you are a bit outside of the Longmont area. The ingredients taste fresh and stay true to what you would expect to taste regionally in Mexico. I will definitely continue to support this small business. read more

This place is a gem. We only tried them because they had a family taco meal special but we were pleasantly surprised. Really good carnitas, and cochinitas! The sauces add some really good depth of flavor and the portions are good for street tacos. Order 3 to be safe! Also a wonderful find were the tamales! Great tacos in a cool setting. Counter staff however are generally unfriendly and very rude.I'm generally very relaxed and OK with a lot of behaviors but this was over the top. Not a friendly smile, apparently pissed off we walked in the door. What should have been a super enjoyable meal was marred by an individual who put a harsh on our attempt at a good mellow. Summit is the best place in Town! I love to support small, local, businesses. This restaurant serves extremely authentic cuisine with thoughtful touches, and has excellent prices. They say you can only have two: fast, cheap, good quality...WELL YOU GET ALL THREE here! Truly a lovely experience every time. My partner and I are vegan and the chefs and owners are all extremely knowledgeable and willing to whip up special items to fit our restrictions. Excellent margaritas as well, and we love their outdoor seating. Costra...my mouth waters just saying this. Cheese is literally grilled with Chorizo or vegetarian option too. The flavors are simple yet very flavorful. All of the Street Tacos are full of flavor and exceptional. The Mole Relleno I could live on forever. Roasted Poblano stuffed with picadillo, rice and escabeche with Mole on top. Tacos Dorados is my favorite plate if 4 griddled tacos stuffed with chorizo and potatos. Brilliant! Our first time here. OMG, just go!!! The food is all prepared fresh, the chips are perfectly crunchy and not stale or greasy, the Margaritas (on the rocks) are also perfect (great balance between sweet and sour) and the tacos and guacamole were all fresh and delicious as could be!! My friend and I were both raving about the place several minutes after we left. Stopped here while we were in this part of town. A family member had seen it but never been so we figured we'd try it. Located in a small house that is wheelchair accessible dining is inside or outside. We ate outside. We ordered the Rajitas taco, the Nopalito taco and loved them. They are small street size tacos stuffed with the filling of your choice. Casual dining and a great stop for lunch. Parking is more difficult to find - mostly street parking. read more

By far the best street tacos I've had in Longmont. What makes this a 5-star experience isn't just the food (which is truly delicious), but also the atmosphere. My son and his finance had their rehearsal party at a local brewery and we had Summit Tacos cater the event. We do not live in Longmont so mad several trips to try local restaurants (all were great) but Summit Tacos really hit it out of the park. Their food is so fresh and delicious. They were very responsive to my multiple of emails (sorry) and on the night of they were right on time and set up quickly. The price point per person was totally reasonable and we even had enough leftovers to feed some of the family who didn't fly out right after the wedding. I came for the vegetarian tacos and was blown away by the quality and freshness! I got the cauliflower taco and the nopales /cactus tacos. I had no idea if I'd like nopales /cactus but it is SO GOOD! I have gone out of my way a few times to get their tacos since trying them for the first time a few months ago. I'm also feeling my family about it so we can support the business. Horrible food! Tacos were almost inedible. Cost me $40 for some crap tacos. My boyfriend, mom and myself could barely eat them. My meat tasted like it had cinnamon on it!
