My long time in Florida made those and Italian my favorites. There are amazing examples of all three in Florida. This place had a great menu, even for a special event ( see the pictures). I had the tripleta sandwich. Pastrami, chicken, and Italian sausage with onions and peppers in a roll. The sandwich was huge. I also got a beef empanada. The largest one of I've seen in years. You really get your money's worth from them. I love a good food truck, such a pleasant atmosphere to sit outside and eat outside. Definitely support these guys. Quick and courteous. They're trying to bring an amazing cuisine to the region. Try Puerto Rican food and you will find a new favorite. Fried plantains are a true guilty pleasure. They are on Sparkman Friday through Sunday, and at the Arsenal the rest of the week. Give them a try and you'll be hooked. A great addition to the Huntsville food scene.

It is brightly colored and hard to miss :) The health department gave them 100 for their last inspection. Excellent score!!! I ordered a combo with 3 quesabirria tacos, a side of potatoes and guacamole with chips and a drink. It was a 7 minute wait to get my food and I was surprised as it was delivered to me. My tacos were filled with soft delicious beef and a container of consommé. Wow! These tacos were loaded with meat and very tasty. The consommé was not too salty nor too greasy. The guacamole was about 2 tablespoons worth with about 8 chips. It was good. The diced red potatoes were so delicious. They were excellent. My combo scores 5/5. From a meat to taco shell perspective, this food truck was 3rd and second in taste. The quesabirria tacos they sell are extremely tasty and I will return to buy more. I saw several things on the menu I want to try. It is impressive they score a 100 health department inspection. If you like tacos, please try the quesabirria tacos. This is a food truck, though it's quite a large one and hard to miss with its beautifully pained sides! Most days they seem to not be itinerant and are instead parked in front of the Washlab (next to Shottenkirk Honda) on University Drive. However, they are active on social media and post their location weekly, and they do move around from time to time. Definitely check out their page before going looking for them. They have quite a large menu with lots of traditional Mexican favorites like tortas, sopes, and alambres, as well as some stuff for more American palates like hamburgers and cheesesteaks. I was, of course, after birria, which I ordered as a combo with rice and beans. The combo was fairly pricy at ~$20, but one thing I did like was that it included my choice of an agua fresca -- I chose pineapple this time. Service was very friendly, offered to help answer any questions I might've had, and got my order out to me in a timely fashion. I had no trouble ordering in English; likewise, the man who ordered after I did seemed to have no trouble ordering in Spanish. Win-win! Although the price was a little high, the quantity of food was great and the quality was impressive. My meal came with three quesabirria tacos, rice and beans, consommé, red and green salsas, a fresh lime, and some pickled veggies. EVERYTHING was yummy. The birria was tender and unctuous (though I wish there had been a *teeny* bit more meat), the beans were smooth and smoky, and the pickled veggies were delightfully crunchy and sour. The rice was just so-so flavor-wise, but it was nothing a splash of the delicious and mild-almost-medium heat red salsa couldn't fix. The salsa verde was herbaceous and cooling; my preference was the red but I can clearly see the merits of both! Lastly, my pineapple agua fresca was refreshing and sweet, though not cloyingly so. I finished my meal feeling so excited and happy about what I'd just consumed. The lingering flavor sensations of heat and savory, umami birria brightened my whole day! I will be back when the birria craving strikes again.

We both got 4 carne asada tacos for $6. So cheap! (I've found that food is not necessarily cheaper here than in CA even with the high wages in CA just saying...) And man was it good. The meat was so well seasoned and they gave plenty of meat per street taco. The only thing missing is some darn Carne Asada fries! I wish that was a thing here! Oh and orange bang. Their pastor and lengua are phenomenal (asada is hit or miss) and the flour tortillas are soooo chewy and delicious. Their cheese sauce and salsa are mid. And the only reason why I took off a star is because their hours can be super unpredictable. Make sure to give them a call OR check their instagram page BEFORE driving over! Even though their hours said they'd be open, they're not always open... Eating tacos at Valentina's is one of the reasons why I look forward to coming to HSV.
