Sushi Lab Rooftop is kind of a Speakeasy restaurant, as it is a bit hidden away, giving you that "place with the secret access" feeling. It is inside the Sanctuary Hotel, and there is a check in counter to the right of the entrance for Sushi Lab. It is a bit tricky to get to the rooftop, just keep following the signs... You can NOT go all the way up there via elevator, you need to go up the last floor(s) though the staircase. The rooftop is a covered space, so it was nice and warm, and very pretty. Definitely picturesque. No need to worry about bad weather here. We requested counter seats at the time of reservation, so we got to have a nice view of the sushi chefs making all the tasty creations. The sushi chefs were not Japanese, but I guessed that much before we went there... I was there for more of the experience than a real deal, authentic sushi made by sushi chefs with years and years of training. We started with some cocktails, we ordered Lychee Martini and Strawberry Geisha. They were tasty, but very sweet. Much sweeter than expected but also quite strong. For the food, we wanted to do Omakase, and we chose The Lab Experiment. It is a 15 signature course with some of the finest ingredients like truffle, wagyu, and caviar. It is stated "The Lab Experience is a journey for the senses" - which sounds very exciting! Everything we had was really good. Fresh and melt in your mouth. Some creative pieces, and we enjoyed them all. We had a nice, tasty lunch that felt luxurious. The service was really great, friendly and polite. I told them that we were celebrating my hubby's birthday at the time of reservation, and they gave him a glass of Prosecco on the house! How wonderful is that??? I've had this place bookmarked for the longest time ever, ever since they blew up on social media and I think that's all they have. It has been so hard to make a reservation and because of that, I had very high expectations about this place. First, this place is a maze. I don't eat sushi often but when I do, I go for the salmon roll and this roll was so filling and flavorful. I love Uni so you know I had to order it and it was so worth it and fresh. We were here a year and a half ago and made a point to come back this trip. The rooftop is quaint and cozy! The menu changed a little bit since last time, but I highly recommend doing the chefs tasting menu. The edamame requires a small wait but it's delicious. And we enjoyed the char on it with the truffle and the citrus. Last time is did scallop nigiri, and it had truffle mushrooms on it and it's literally my favorite price of sushi on the planet. This time it's not on the menu and unasked for it and it tripled in price. But. It is truly worth it. Their lychee martini is very light and refreshing. I also got that last time. Based on ambience alone, this place is a gem! It is located on an enclosed rooftop with windows and plants EVERYWHERE! It is like eating in a garden, it's amazing. It gets very crowded around lunch and dinner but it's a lively vibe, not overwhelming. As far as food, their portions are a bit small but still delicious! They have unique options like a scallop hand roll and green tea crème brûlée. I recommend coming here as a small snack during the day, that's what I've done because the food is light. Incredible omakase experience on a beautiful rooftop! I ordered The Lab Experiment omakase, which was $100 for the full experience (appears pricey at first but not as bad as some other omakase places and I think it is worth it). The cost is not just for the sushi itself (which is great and fresh), but for the whole experience. It was fascinating and entertaining to watch the sushi chefs make the sushi right in front of us at the chef's counter. Once we finished one piece, they would bring out the next piece and would describe each piece when they brought it out which was interesting and nice. The omakase experience included 15 pieces of sushi plus soba noodles at the end. In particular, I really liked the piece with uni and caviar on top of the tuna and the one with uni on top of a fried oyster, which was unique (plus I'm a big uni fan). Also, the jump shrimp was so soft that it was almost a creamy consistency. The squid was also very soft compared to the usual chewiness of squid. The wagyu beef was the final piece, which as cool to see them use the blowtorch on and the beef was so soft and tender with a couple gold flakes on it. I also got the Kimino Yuzu ($6) to drink, which was a sparkling yuzu juice - it was quite fizzy and good too. The rooftop is not actually at the top of the building, but is still outdoors (and covered) with a decent view. There are (fake but nice) flowers hanging down from the see-through cover overhead and the place is very photogenic. The staff were friendly and attentive and of course the service speed was quick given the sushi chefs were right in front of us. Overall, if you are looking to treat yourself or celebrate a special occasion with omakase that won't totally break the bank, I think Sushi Lab is an excellent place for you. read more

I think I was excited by the idea of this place, but the actual experience wasn't that great. We ordered the matcha crunch roll and some hand rolls, as well as two items from their specialty menu--the gold digger and the uni macaron. My favorite was the matcha crunch roll; it sounds odd but the green matcha balls did add a nice crunch to the roll! Hand rolls were fresh and yummy. The uni was kind of bitter and not that fresh, but honestly I have yet to find good uni on the east coast. While I like the concept of rooftop sushi, it was so hot on the roof the day we went that we were super sweaty by the end of the meal. I walk past a sign for this sushi spot every work day and finally decided to stop in for a quick lunch! I was pleasantly surprised at how good it was. I ordered the jalapeno Yellowtail roll and it was very good. The chili soy glaze was to die for! The service was very good as well. The staff refilled waters and were always attentive. This review is for weekend dinner. Honestly, I'd give the food a 3-3.5, but the ambiance is amazing. I made a reservation for three people at 8pm on a Saturday. The restaurant is in a hotel and a little confusing to find, so just make sure you follow the signs. Ambiance: the ambiance is beautiful. It's 100% the reason I'd come back again. Light, airy, dangling wooden lanterns, greenery, and so many florals. There was a live DJ bumping music too, so the vibe was really fun. One thing I did find odd was that the DJ stopped playing and packed up his stuff around 9:15, even though the restaurant closes at 10. They didn't put any other music on, so it was kind quiet and just killed the vibe. Service: great. They had to set up a table for us and who I presume to be the manager was super apologetic for making us wait and gave us a free thing of sake. Super thoughtful. Food: sadly I didn't love the food. Don't get me wrong, some of its fun and inventive, but taste-wise I was underwhelmed. If I was craving sushi I probably wouldn't come here. Some of the food seemed to have a lot of potential, but tasted bland. We ordered: -Salmon Belly & Poached Asian Pear: I actually enjoyed this. I will definitely be back for their omakase next time. FOOD: - Yellowtail Jalapeño Roll: silky, smooth, and very fresh with a hint of spiciness. This was probably my favorite. - Seared Salmon Roll: this was probably my 2nd favorite out of all the rolls we ordered. This was a sushi filled dream come true - just like I envisioned my first Omakase to be. And wow was it beautiful, cuisine-wise and venue-wise. My girl friends and I wanted a special place to celebrate our birthdays, and well we wanted to do Omakase. To get to this place, you'll need to take an elevator up in a hotel and then walk up two floors. The work on the way up was worth it from what was waiting for us. The ceiling was covered in a tent with flowers and lanterns hanging about. Interior was your basic restaurant format and the chef's counter tuck on one side. Next up, food analysis. If you're going to do Omakase, I recommend booking at the chef's counter so you can get the live show of the chefs crafting your sushi and it coming out fresh on the spot. There are two options for omakase: $60 Chef Selection and $100 Lab Experiment. If you want to do the full experience and don't mind spending extra, go for the Lab Experiment as they serve you all the good selections. There were no bad sushi pieces, all freshly textured, sensationally juicy and just plain melt in your mouth delicious. My top favorites were the grilled squid, mackerel, fatty tuna, pink salmon, wagyu tenderloin, and the Hokkaido uni fried sushi. Service was impeccable, our chefs were a delight and super engaging, got such great recommendations on sake to pair with our sushi and they even accommodated our request for photos. I also enjoyed the complimentary yuzu Prosecco given to me to top off my birthday dinner. If you're concerned about this venue's tent capabilities to keep everything together, it certainly did. I guess I was expecting that kind of experimentation at Sushi Lab. - The cocktails. The rest of the crew got the Strawberry Geisha and Lychee Martini. Both were way too sweet. I'm glad I stuck with wine. - Slow service to start. They were super busy and likely understaffed (like every restaurant these days), but it didn't really get us in the mood. We waited probably 15 min after we were first seated before our server came by. From then on, it was hard to flag him because the place was packed. First omakase experience and had a good time! Debated between the $60 Chefs Selection and $100 Lab Experiment, ended up going with the former but kind of regretted not going all out and just trying the $100. Finished the experience with two specialty rolls just to try the quality. The omakase when dining at a garden table (not the chef's counter) is presented on platters with five pieces. First platter had a white fish, seared salmon, seared squid, tuna on top of deep fried oyster, and a fatty toro tuna. The toro was easily the best piece here. Then the seared salmon because seared salmon is always good. Then probably the tuna on top of the oyster followed by white fish and seared squid. Though I'm not a big fan of the squid texture (I don't mind it, but don't particularly like it). Second platter was black cod, ebi, scallop, uni, and unagi. My favorite was the black cod! The scallop was pretty good too. Ebi had a very interesting texture, I usually don't have completely raw ebi. Unagi and uni tasted pretty standard in all honesty. The Chefs Selection is then finished with A5 wagyu nigiri which is hands down the best item of them all. Tender, fatty, and juicy all in one. Even our server mentioned it was the best item, which makes sense. At the end, we debated between hand rolls, specialty rolls, or dessert. We ended up opting for specialty rolls and chose the matcha roll and wagyu roll. After we had finished, our server mentioned those two were great picks as most sushi places offer typical cold sushi rolls and those two were warmer. I've definitely had warmer but it was a fair point so those two would be my suggestions of all the specialties. Matcha Crunch Roll - a pretty standard crunch roll but on top are small matcha balls that add a soft crunch almost like a pastry addition. The matcha really intrigued me as I've never had a matcha flavored roll, but it wasn't really prominent. Nothing spectacular, but a good solid roll. Washugyu Beef - the American wagyu isn't as tender as the A5 so it's more chewy. Still tasty but can be a disappointment after the amazing A5 wagyu in the Chefs Selection. Amazing food and incredible service!!! Sofia was an amazing server! We ordered the lab experiment omakase and she made it so memorable. Even if she didn't drop off the course she made a point to stop by and talk to us to explain every dish, what her favorite piece was, and even stop by after we finished to see what we liked and didn't like. I feel bad leaving this review because our server was nice but this place was just possibly the worst sushi place I've been to. Food - we did omakase and all of it looked bland and tasted awful. Sushi itself was just so uninspired and poorly crafted, tasting like gas station sushi with mediocre rice and some very fishy tasting and smelling pieces. As I was eating it, I was positive that I'd have stomach issues later (I didn't but it should give you the idea of what it tasted like). This is my second time visiting Sushi Lab Rooftop. No idea what happened to my other review, so here it is. I reserved three spots at the chef's counter about a week before. These spots fill up fast so plan ahead if you want a seat at the chef's counter, which is what I recommend. Not really a true rooftop, as there is a cover over the entire space, but still aesthetically pleasing to take pictures for IG. On this particular visit, I got their Lab Experiment ($100), which is their premium omakase option that includes 15 pieces. This took approximately an hour and it was quite the journey. The sushi chef explained each prepared piece throughly. Drinks-wise, I ordered the Lychee Martini, which had a strong tequila taste with a slight touch of lychee. I came here on a Saturday night and got seated by the bar with no wait time. If you're coming with more than one person, I do suggest making a reservation just in case. I ordered the chef selection for omakase. I was very much pleased with every single piece I had, to the point where I was considering ordering it again hahaha also be aware that it's not filling, so maybe order one more item that will fill you. First time here so we wanted to give the OMAKASE a try. This was also my first time doing an OMAKASE experience in general. For $100 a person, I would definitely come back for it. Most places charges you $200+ for the experience. I understand why it's that much because of the fancy experience. The sushi chef will explain to you in details what it is in a quiet atmosphere. Sushi Lab is more chill with mellow music playing. Pretty much good vibes all around. The waitress or waiter do come and explain to you what you're about to devour unless you're sitting at the bar. We chose to be seated at a regular table which was probably a rookie move lol BIGGEST TIP, always sit at the sushi bar for OMAKASE so you can talk to the chef. You also get to try one piece at a time. If you don't, you'll get 5-6 pieces at one time. Overall, I really loved this place. Next time I will try things off the menu. The service itself was amazing.
