We ate at Tappi Sunday night, 2/16/20. It was an outstanding experience, top to bottom. Being just 2 of us we sat at the bar (as opposed to a table) looking into the food prep and cooking area soaking up the warmth of both the Italian dishes cooking in the wood fired oven and the great conversation about such cooking we had with John, the owner / chef. We watched him prepare our delicious Italian dishes and cook them in the brick oven fired with fruit wood ("always!") from local area orchards just over his shoulder. He masterfully prepared and served our dishes while we enjoyed a bottle of outstanding house red wine. Fabulously unpretentious and oh, so freaking good! The service staff were warm and engaging, attentive and very helpful. We highly recommend Tappi! Reservations highly recommended. Twisp is lucky to have such a wonderful restaurant! read more

We return to Tappi every year while in the Methow Valley on our ski vacation. John Bonica is wonderful host and he hires great staff. The smells are intoxicating as you arrive. The wood fired oven cooks up lovely pizzas and caramelizes the tops of other dishes. The dishes are simple and rustic Italian fare, but done quite well. John loves good wine and keeps great selections available. My only ding would be that, as a person trying to avoid dairy, gluten, and eggs, my choices are pretty limited. I ended up with the rib eye with salad (which was, by and large, delicious, albeit the raw side of medium rare), but I had skied a fair bit that day and I needed an appetizer/starter, but none were available to my limited diet, other than the salads, one of which came with my dinner. Perhaps some marinated olives? Our daughter enjoys chatting with John at the bar by his workspace. John is very gracious and seems to really enjoy people, including kids. read more

On the last night of an 11 day vacation which ran the culinary gamut from "fine dining" establishments in the San Juan islands to the frozen food at the Mazama Country Store (home made pot pies which were quite good actually), this little gem of a restaurant not only outperformed our expectations but truly was the best dining experience of our trip. The service was prompt and welcoming and never left us wanting for anything. The brick, wood-fired oven is conspicuously placed in the heart of the dining room allowing us to watch (and smell!) the various stages of our food's prep. The lone chef deftly prepped dish after dish before handing them over to his oven to finish them off. Looking around the room, you could always catch someone eyeing what he was up to, hoping to catch a glance of their food exiting the hearth. We had the following: Pillow bread with chèvre and honey, roasted dragon's tongue beans, house-made fusilli with pesto and heirloom tomatoes, the uncle felix pizza, and finished with chocolate panna cotta and roasted peaches with blueberries. Every single item was wonderful. The pillow bread was thick but somehow so light and flavorful and paired wonderfully with the cheese and honey. Frankly, it could have been our dessert. The dragon's tongue beans were roasted in the oven and topped with a generous helping of finely crumbled pecorino cheese with a roasted lemon. This was a very fresh plate which spoke more of spring than late summer. The pasta was amazing. So light and fresh. There is no substitute for fresh pasta. The pizza was the best I've had in a long time. The crust was thin without being undercooked or burnt to cracker consistency and light and airy around the gently charred edges. The sauce was thin and flavorful and the toppings were portioned just right for the pie. The panna cotta packed major chocolate flavor into its delicate presentation. The fire-roasted peaches... if they have them when you're there, get them! Warm, lightly charred, tender peaches paired with cool blueberries was a treat for the eyes as much as it was for the taste buds. I couldn't have been more pleased with this dinning experience. You can tell the folks here are proud of what they do. I don't know when we'll be back in the area but dinner at Tappi will be at the top of our priority list when we are. read more

It's been around for many years, but we only recently discovered it on a visit to the Methow and can't believe it's taken us so long to eat here. It is AMAZING! We have eaten pizza all over the world and this is truly one of the best pizzas we have ever had. The appetizers are delicious and seasonal and so very good. The pasta dishes are crave-worthy. Their wine selection is impressive and service is excellent. I cannot rave enough about this place. My husband and I said that if this were in our neighborhood in Seattle, we'd eat here at least once a week. read more

I had dinner with my girlfriend and her son last week at this wonderful little place. The staff was extremely friendly, especially the owner/chef, John. One of our favorite Seattle restaurants is The Pink Door. Being one-quarter Italian, I know that lasagna and cheese driven pasta is only part (a small part) of the Italian food story. The Pink Door does it right, and we were pleased to learn about Tappi in Twisp, where we dined last Friday. Having skied (yes, there's plenty of snow now in the Methow for cross-country skiing) for several hours on Friday and earlier days, we were in the mood for some serious and tasty food. John was ready for the task. My wife ordered the special squash pizza, and claimed it was the best squash she'd ever eaten in her life (which is saying something since we love squash). The squash was buttersweet from Carlton and it was tasty. The other woman in our party ordered the ribs, which were fall of the bone variety and sufficient for her to enjoy for dinner the next day. The other man in our party ordered the Venetian beef, which I'd thought about ordering but I didn't want doubles, good to share different foods, etc. That Venetian beef as served with polenta, generous portion, and wonderful. I looked up a recipe for it and learned that, according to one website, Venetian beef is cooked for hours in several cups of wine. I can believe it. I ordered the lamb shank with white beans. Again wonderful. I had enough beans leftover to heat up the next morning, and mix with an egg. I liked it so much I went to the market after we got home and bought a couple shanks myself to try out a couple different recipes. We had the Barbaresco Nebbiolo with the food, a lovely selection. A jazz trio added musical fun to the evening. Playing 1920s-40s jazz, they were enthusiastic and very good. I'd even come here solo, and just sit at the bar. Hands down amazing, some of the best food I've had in a long time. My wife and I came up a couple of weeks ago from San Francisco to visit a friend for her wedding. The reception dinner was help at Tappi's. From the start start to finish every dish was fantastically seasoned and perfectly prepared. For appetizers we have the pizza bread balls w/ sauce prepared in a cast iron skillet. We also had plates of chunked cheese, asiago or parmesan, I'm not sure, that were drizzled in olive oil and balsamic vinegar. The final appetizer was a thin-crust garlic pizza bread. For dinner we had arugala pesto pasta, and steel head trout. Each was full of flavor and cooked to perfection. While each dish was delicious, I specifically want to call out the steel head trout. I'm not sure the last time I had fish that good. Very fresh, not overly seasoned and cooked so the fish was still full of moisture. I had to go back and grab a second piece! I would highly recommend this place if you ever get the chance! read more

My partner and I picked up carryout from Tappi while on a mini ski vacation in Winthrop- we will definitely be going back! We ordered the cheese-less pizza with kalamata olives and capers- omg what an amazing combo! I've never had capers on pizza before, or for that matter pizza without cheese- so good and was not missing the cheese! We also had the roasted eggplant and polenta with Emma's sauce (aka delicious vegetarian tomato sauce), the eggplant's texture was creamy and perfectly roasty, would definitely order again. I'd also recommend the lemon and the espresso panna cotta- perfect way to end our meal! read more

Wow, where to start. We made reservations and found that some of the tables are "community" style seating; you share the table with other guests. That usually is fine, and in this case it was. Immediately walking through the door, you're transported from a small Washington mountain village in to a rustic, cozy Italian restaurant. The owner is manning the pizza oven making delicious pizza pies. The night we were there a local musician was tastefully guitar strumming. The wait staff was personable, friendly and knowledgeable. They were there when you wanted them, but not bothersome. The wine selection was mostly Italian reds, so that was good. The house was a delicious 87 point red. We loved our order of cuscino 'pillow' bread, they serve it a variety of ways; with the traditional olive oil and balsamic, or combo of cheese and tomato. This is one of the must try appetizers. I tried the lamb shanks special- it was falling off the bone, over a bed of polenta and white beans caramelized in the pizza oven. The missus had an incredible pizza with garlic, anchovies and olives. It was memorable. Dessert, we tried their flourless brownie, so rich and delicious! read more

John uses the dough that he flattens for pizza, but allows it to 'puff' for the breads, served with his tasty tomato sauce it is a meal by itself! So impressed by the food here. What we ordered had such subtle and complex flavor. I ordered the porchetta which had the right combination of crispy exterior and moist pork inside. It was soooo good and one of those dishes that I will think reminisce about. My wife has the buscatini which had pasta made in house and that was equally delicious. We love Tappi, it's our go-to place, we have twin teens who love it too and the Tappi's crew are always so great and fun and easy to be with. Love the Italian wine list, and the pizza's can't be beat. My wife wants to me to add that she's addicted to the chocolate cheesecake (I said "obviously" and she hit me on the head with a frying pan - what's up with that?) We try to hit Tappi at least every other week and recommend that you do too. read more

This is a frustrated diner reluctantly taking a shot at what is obviously a loved local business. We ate at Tappi, last night and had high hopes for an amazing dinner and experience, but it all came across very average - not bad, not great, but just OK. It was 100 degrees outside and pretty darn warm inside and the place was pretty full at 7:15. We were given a lovely table for two and the server was always prompt and available. But, we either got caught in an unexpected rush, or it is normal for food to arrive 70 minutes after arriving. In either case, it is not acceptable to us and we won't risk repeating. The owner did something interesting - he apologized to one table, but not to ours. I am not sure what to make of that. How about the food? Again, it was OK, not great, but we are totally spoiled in Seattle with a wealth of amazing pizza, and quality Italian food is in every neighborhood. So, for Twisp, this is probably a 4 star Italian food experience, but measured against all Italian restaurants in the Northwest it sits squarely in 3 stars. And, with the wait, it would be approaching two stars, but I don't want to drive people away from this place. You should try Tappi, and think about going for a very late seat when it is not slammed, or, maybe the owner will read this and step it up a bit. I did notice he has a lot of distractions at the over - many local friends bending his ear, and it would be heard to get product out to diners promptly if you are catching up on the local goat cheese gossip. read more

My husband and I went here after a long day of whitewater rafting. What a surprise! A cute romantic restaurant in the middle of Twisp of all places. Comparable to a restaurant you would find in downtown seattle. Fresh and local ingredients grace the menu. I would say that my favorite thing about the restaurant is the atmosphere. If you can make reservations for the seats in front of the wood fired oven, where the owner makes you pizza and engages in conversation. read more

If you find yourself in the Methow Valley near Twisp craving a trendy, small, casual but romantic spot to eat.... then make reservations to eat here. Tappi is warm and inviting. As soon as you walk in, you will notice the brick oven with the owner of the restaurant, John, cooking away in his shorts. He loves to cook and socialize with his customers- adds a nice personal touch. Next, you will hear the muted tones of live music from a local artist.... ahhhhhh. Have a seat and take in the the atmosphere... oh so perfect for sipping on a glass of wine. I usually always have the weekly special glass o' wine and have never been disappointed yet! The food. Is. Delicious. There is a regular menu, but they also have weekly specials.... you can't go wrong either way. A few of my faves: cuscino w/ chèvre (melt in your mouth pillow bread), pizze Bianca (cooked in the brick oven, of course), Venetian beef (so tender.... and served with polenta). I also like to delve into the specials- there is always something new and different to try. If the night is going really well, and you have enough room in your belly.... definitely try some dessert. The only cons that I can tell you about is that this place is only open Friday- Monday at 5:30- maybe 10pm and this place is small... if you dont have reservations, then there is a good chance that you won't get in. Oh- and if you are looking for beer or a mixed drink- you'll have to go to the bar down the street. They only have wine here. read more

Walking in the place smelled great. Unfortunately the aroma entering the place was the end of any good experience we might have had. We ordered a glass of red wine each at 7.50 a glass and the pours were meager at best. The appetizer was good. The pasta dishes we ordered were undercooked, one to the point of being almost inedible, and it took them an hour to get it to our table, and these were very simple pasta dishes. The hostess wasn't rude but only offered a free desert to make it right. Can't recommend. read more

Just ate they tonight. When I called John was very accommodating. Got there outside of the building is nothing special. There was three of us including one vegan. It is really bad to go some place and you have to make a reservation to eat in a one horse town. Then when you do call to make a reservation the person on the other end of the line is so rude!! call at 2 o'clock in the afternoon and can't get a table tell 8 o'clock at night. What a great find!! I had a recommend from a friend for this restaurant. We went this past weekend. The food is amazing!! Everything is fresh and homemade. They buy local produce and meats whenever possible. That is a huge plus in my book. The house made "Emily's sauce is amazing. It was on the "pillow bread"--we got the tomato & goat cheese. Yum!! I got a pizza--it was a thinly sliced ham & pear with arugula. It was very tasty and good. The restaurant is on the smaller side so reservations might benefit you inside of walking in. You must have the cuscino with the works - different and delicious! The fire-roasted tomatoes are easily the best cooked tomatoes that I've ever eaten. Reasonable prices for the food and nice relaxed ambiance. So good we made an effort to come back to town a second night so we could eat here again. read more

Have lived in Twisp 3 years, finally made it into Tappi last Saturday night.....why did I wait so long ??? Told my mom she probably didn't need to make reservations.......she did and I was wrong, it opens at 5 pm and by 5:30 the place was packed !!! The place is a little upscale but on the same hand its casual too, a nice pair of jeans and t-shirt is fine, but if you dressed up you would fit right in too...just that kind of place. The wait staff was prompt and very friendly. The food ? Awesome !!! First off, I don't think I could go in here again without ordering the "Cusino" Pillow bread. Its pizza dough that is not flattened out so its left in a ball and baked, it comes out crisp on the outside and soft and doughy on the inside, we got ours with roasted tomatoes and chevre. The tomatoes are more of a sauce, the cheese is crumbled over the top and eventually melts in. It will serve 2 but there was 3 of us so we got 2 of them and I was glad we did, I wouldn't have wanted to share.....it was that good !!! My mom got spaghetti, which she liked, and my father and I both got pizzas. The crust is very thin and its is spot on....very good crust. The marinara sauce is perfect, not too spicy and not too sweet. They don't mess around with the topping either, the sausage they use was high quality as were the (left whole) kalamata olives. This place makes real food, and the chef is good at what he does. For the 3 of us we spent close to $100 and yet this place was packed in less then 30 min after it opened....I highly recommend Tappi !!! read more
