The facility itself seems fine, though the ambient noise level was rather loud (likely influenced by all the metal and concrete). But the food, the feel, the service and the value just don't compete well with all those other places we have to choose from. The unhelpful attitude of the clerk taking my order didn't start things out well; she seemed genuinely annoyed about being there, and that attitude carried over into her tone when answering my questions or prompting me for info she needed. Also on the service side of things, I had to stop the waitress from throwing away my food -- a plate over half full -- after I'd walked not more than ten steps away to refill my drink. [She apologized, but only after I had to confront her twice; still don't understand why "don't throw that away!" could have been confusing.] The burrito and beans I ordered were edible, but so bland that I might as well have been eating packing materials. The accompanying chips were warm, but the cup of salsa was quite possibly the least appealing salsa I've ever been served in a restaurant. I've had Taco Bell food I've enjoyed more than this. There were several cars there but no line. We approached the food truck and started looking over the menu. Everything they do features birria style meat. Neither of us have much experience ordering birria style dishes but the young man at the window was helpful in his recommendations on what to order for now and what dishes would save best for leftovers. We went with his recommendation to share the quesadilla now and order the tacos for later. The prices range from $12-15 per item but they also have a birria pizza for $35 which looks large enough to feed several people. We paid with a credit card and we're provided a small device that alerts customers when their orders are ready. This was the first time we have ever received something like this and though it was brilliant because so many times you order at a food truck you are stuck standing close by so you can hear your name when the order is ready. Our food was prepared in a timely manner and we decided to drive up the road before eating. When we opened up our containers everything looked incredible. We immediately dug in and the quesadilla was full of delicious ingredients and flavor. I took a few pictures of my tacos but saved them for later. And a peppery sauce made from Guajillo peppers, oregano, garlic, onions, and more. But this is a very popular dish among Mexican households, often served on special occasions and holidays, and often on weekends because of the lengthy, labor intensive process when the dish is truly authentic! Tripe is the edible lining of the stomach of farm animals like cows, pigs, sheep and goats. Beef tripe is chewy and has a mild beef flavor. It takes on the flavors of what it is cooked in, so usually it is used in a flavorful soup or stew, as is the case with Menudo. The Menudo served here is good, but lacks authenticity. If there was any bone marrow or meat from trotters I didn't find it! The tripe, cut into 1 to 2 inch pieces, was a bit chewy, but only a bit, and the sauce was good, but not great, the heat was limited.
