This is a tip he picked up from friend who is in the restaurant business. Apparently, the cheese enchilada is an easy dish to make but, can easily be fumbled. Vaquero's is what they really eat. These kinds of tortillas can only be made by the old grandmother's in Mexico, who have never been to the US, and never plan on going. These tortillas here are obviously grown in house on a Metate (ok, I had to look that up), And the meats taste like they are marinated for days, in order to taste like this. My favorite is the Alambre Burrito. If you accidentally order something else in addition to the Burrito, you will probably be taking it home. And when you take home your Taco's, don't forget to take the chips with you. The chips are also obviously made in house, and fried in Lard before coming to every table.

It's comfortable, welcoming, and always hits the spot. My husband always orders the beef fajitas--every single time--and my younger son does the same. My older son is all about the brisket tacos and swears by them. I usually go for the veggie fajitas, but sometimes I keep it simple with the bean and cheese nachos, which are oddly comforting and always so good. We've been coming here since the original location off 377, and when they moved to the bigger location, we happily followed. That alone says a lot. The quality has stayed consistent, and it still feels like a place you can count on. Like I said... I truly don't think I've ever said no to Los Mocajetes--and I don't see that changing anytime soon.
