So my bestie and I booked a Friday reservation about three weeks out -- and I completely understand why reservations can stretch nearly a month. The space is very small and intimate, and every seat feels intentional. One of the most notable aspects of the evening was the open kitchen presentation. We were lucky enough to sit at the counter, which essentially turned dinner into a show. Watching each dish come together -- plated with precision, purpose, and care -- was mesmerizing. Chef Michael worked with such efficiency and order. After completing each dish, he cleaned and reset his station before moving on to the next, maintaining a pristine space throughout service. There was a quiet discipline to it all. Tonight was the Tasting Menu. It's easy to assume tasting portions might leave you wanting more, but that was absolutely not the case. We left completely satisfied. From the menu that evening: * tsar nicoulai caviar, basque cheesecake * tempura beef rib * canelé de bordeaux, tuna * radicchio, chowder, greens * king salmon, leeks, fennel, sea buckthorn custard * brioche, morel mushrooms, rice cracker, mushroom powder * polenta, perigord black truffle, broccoli * pork tenderloin, braised greens, black truffle mousse * Japanese A5 wagyu beef * mandarin sorbet, oranges, sabayon * meyer lemon ice cream, candied pecans * beignet, salted caramel * cheesy crème brûlée, essex manchego cheese Each course emphasized bold, striking flavors. Some dishes leaned heavier on salt than I personally prefer, but overall there was thoughtful balance between sweet, salty, acidic, and umami elements. Standouts for me were the tsar nicoulai caviar basque, the tempura beef rib, the king salmon with sea buckthorn custard (I could easily eat 4-6 of those), the pork tenderloin and Japanese A5 wagyu with braised greens and black truffle mousse, the refreshing mandarin sorbet, and the unexpected but delightful cheesy crème brûlée. Every dish felt intentional and composed with purpose. This isn't an everyday dining spot -- and I don't think it's meant to be. It's an experience. Chef Michael brings his background from places like Auberge du Soleil and Bouchon into this intimate Vallejo space, and it shows. If you have the opportunity to dine here before the doors close, I strongly encourage you to make the reservation. It's one of those meals you'll remember -- not just for the food, but for the artistry behind it.

The crabcake had good flavor but was not crispy on the outside however, the hollandaise sauce was done well. The mimosas were very good. The service was lacking. It took us over an hour to get our food then another 15 minutes after we've eaten to get the check. While, there was a large party in the speakeasy, it appeared that the staff was unorganized and could not handle the volume in the restaurant. I will try it again before I consider it a waste of time and money.
