Another fabulous meal at the Copper Fox!! My big-city brother and sister-in-law were amazed at the quality, flavor and ingenuity with which these meals were prepared. We all had the wild mushroom soup which was full of flavor and the texture was velvety smooth. I had the braised pork shoulder. Tender tasty with a fabulous sauce full of flavor. The accompanying fried sauerkraut presented a new crunchy and tangy flavor treat I had never experienced before. One I look forward to repeating. The chimichurri and black beans were smoky and fragrant, complimenting the pork very nicely. Two of our party had the eggplant gnocchi. The gnocchi was firm, tender and did not have the "slippery" feel that gnocchi often has. The fresh eggplant in the accompanying sauce was zesty and harmonious. Swordfish is not easy to cook, correctly. My brother's swordfish was moist inside with a very nice grill on the outside. The risotto was creamy and flavorful and a great match for the swordfish. We split a Tiramisu that was the best I have had in a very long time and brought back memories of Italian bakeries in NYC. The dusting of cocoa powder over the top was a nice touch and the light, moist and flavorful treat was enjoyed by all. It is the little things that make the difference at the Copper Fox. There are many chefs who can cook a good pork shoulder or piece of fish, but, the care and the inspirational sides that are balanced to each dish are what make this restaurant soar above others. Chef Nick is an inspired and superb chef. Don't miss this place the next time you are in Springfield. As a matter of fact, The Copper Fox is a reason unto itself to make the trip. Don't bother waiting for hours in downtown Ludlow ... this place has much better food! We had the mussels (amazing), the burger (pickled onions and a biscuit style bun ... also amazing) and the swordfish tacos. This is an establishment that offers a lot of curb appeal. The decorating accentuates the good bones of the older architecture. The bar is set up beautifully with an elegant steam-punk-ish touch. The service is friendly - though at times the staff can be a bit scattered and frantic as they try to keep up with customers. Our food was switched with another couple's who were not dining with us - and the staff seemed to shrug it off. Their cocktail making skills need a bit of fine tuning - missing some essential components in a cocktail - leaving you a bit unsatisfied. The burger is nice for casual fare - but it a bit pretentious with with (undercooked) potato wedges and house made ketchup. This place has a good vibe and a good opportunity to excel - it just needs a little work / practice to get it right. read more

Awful table service, waitress Tessa was rude and dismissive, it took 29 minutes for our drink orders to arrive - and she refused to serve my 25 year old friend with a valid Florida license, even after verifying the ID with her manager. After politely stating our disappointment and intent to leave, the waitress stormed off and spilled my drink on me, and continued walking inside without apology. A friend and I recently had a delightful lunch at the newly renovated Copper Fox. The service was genuinely friendly but not 'in your face,' and the food was delicious--an avocado toast concoction that needs a much more elegant name to reflect the imagination and subtle flavors the chef put into it. The renovation created a fresh new ambience, attractive, nice use of space, and choice of where to sit...our favorite is the 'stage,' a corner table apart from the others and surrounded by windows. I ordered a pizza and when it came out they brought half because the other half sat in a hot spot in the oven and was burnt but they wanted me to start eating with my family so they brought the part that was okay and then brought a whole new pizza for me. What a little gem I came a-crossed here. Very pleasant greeting as I walked through the doors. Nice high ceilings and tall windows letting in the perfect amount of light. The fox painted on the wall is just stunning and so unique to a restaurant space. It was lunch so I didn't sample a cocktail but I can't wait to go back and try the chocolate bitters! The menu is unique and creative. The dirty potatoes where mouth watering. Such a generous portion I was almost to full to try my kale Caesar with fresh grated cheese. My sister got the chopped salad with an Asian style dressing. I couldn't decide which I liked more. The server was very busy but STILL super attentive. I don't think my water glass was ever empty. We met friends here for dinner last night and had an awesome dinner. The restaurant looks out toward Main St through large windows, with a very warm and relaxed atmosphere inside. The servers were attentive and friendly and the locally grown food was amazing. The pickle and cheese board was delicious, as well as the potatoes appetizer. Our meals were perfectly cooked and full of flavor. Drinks were delicious too and served in unique glasses. The Copper Fox is a genuine 100 carat diamond in the rough that is Springfield, VT. My husband and I enjoyed a fantastic meal a few Fridays ago. We got into town just after 8:00 pm, and even though the restaurant closes at 9:00, Kelly, our personable and gracious server, and the entire staff, made us feel welcomed and relaxed. I had the soup of the day, which was a cream-based, caramelized onion and sherry bowl of savory scrumptiousness, which I (reluctantly) shared with my husband in exchange for bites of his iceberg wedge bacon and blue cheese salad, which was fresh, crisp and crunchy and a perfect kickstart for the taste buds. We chose for our meals the pork schnitzel, which was a plate-sized breaded fried pork cutlet, pounded thin, tender on the inside and perfectly crispy on the outside, served with tasty mustard potato salad, apple compote, and sour cream, and pan seared salmon, served with baked spinach royale (think spinach dip but way better), and the yummiest gribiche -- if you are a fan of egg salad or deviled eggs, you will want to lick your plate to get every last bit of this sauce! For some reason, google takes you to North Springfield, in a residential area. From the get go the service was extremely welcoming and friendly. The food was impeccable and the drink menu was out of this world. This was my second experience at this establishment. Unfortunately I will not be returning. There were 4 of us from out of town dining together and catching up. Service was slow but we were understanding since there was only 1 waitress to cover the whole restaurant. We were having a nice time but we're suddenly delivered an appetizer that we hadn't ordered. We refused it at first been then thought maybe we were misunderstood and said we would take it. After we started to eat it we were notified by the waitress that it actually wasn't for us but for the table near us who had been waiting for quite a while. They were upset because they had been waiting for so long. We laughed about it and made light thinking it was an innocent mistake. After the other table left the waitress actually complained to us of them being upset and leaving her a bad tip. We thought how awful for her but continued our dining. We each had a cocktail before dinner and then shared 2 bottles of wine in a 3 hour period. We sat talking for a while and then decided to go to the bar to have an espresso martini to talk some more before leaving. I asked the waitress what time the bar closed and she said it's open until we leave. We walked over to the bar and found stools and sat down. We waited about 10 minutes and no one was coming over or even looking at us. We thought it was odd so we called the bartender over and asked if she made espresso martinis. She said yes but she couldn't serve us because we had eaten and had drinks at the table so establishment policy was that we couldn't be served at the bar. We were very confused about what she was saying but decided to just leave but first decided to talk to the owner be be clear on the policy. He seemed to not know what we were talking about and offered to buy us a drink. At this point the nasty unpleasant bartender was not worth staying for. She was rude and condescending and shouldn't be working with the public. And by the way, they charged us for the appetizer we didn't even order. It's just a small town dive trying to be a chic metropolitan establishment. Since it's the only place in town I guess it's better than fast food but don't expect much more. read more
