She had excellent recommendations, was professional, friendly, and on top of every aspect of our meal. Gosh darn, I think that this is the only restaurant in Springfield! Well, I saw a pizza place, a serial killer luncheonette disguised as a healthy restaurant, a steakhouse, and a family restaurant that probably would not appeal to the lactose- intolerant pescatarian and her vegan friend. After perusing our humble options, our humble group: my elegant bf and my dashing bff decided on The Copper Fox. Hungry after our long drive and day of adventures...we arrived at 5:27. We waited with another tourist couple for the doors to open. At 5:30pm on the dot, a lady opened the door. While we waited to be seated, I admired the wonderful art pieces, modern decor, and chic bar. We were seated right by the front window: our good looks were put on display! I would recommend the restaurant purchase some blinds or curtains. We felt like were blinded by the light. The waitress was very enthusiastic. She was green, but we appreciated her enthusiasm. The complementary focaccia bread was delicious! To drink Kyle ordered a beer. I had a refreshing, appropriately priced glass of vino verte. The wine selection was festive. To dine, my bff and ordered soups to start and salads for our main courses. Kyle ordered a pizza. The soup was certainly the highlight of the meal. Eggplant, tomatoes, and fresh herbs oh my! Our salads came out a while later. About 15 minutes later Kyle's pizza arrived. We asked for our salads without cheese, however Jae's had some cheese on it. The waitress corrected this error kindly. Kyle said the pizza was quite delicious. Our salads were simple but tasty. Four stars-only restaurant in town. But, if i were anywhere else: 3.5. Slightly expensive, ditzy but friendly service, tasty food and wonderful decor. read more

Coming from the small country of Denmark, I really did not know what to expect, yet I found the little new restaurant to holds so much sophistication and delightful ambience. Wonderful vibe. Music in the background, nice table space and sophisticated decor. The copper topped bar sits at least 12 plus there is additional high top seating near by. Their fresh "just off the farm" menu offers beef, chicken and fish entrees. The staff was attentive & friendly. They also have a creative cocktail list, wine and beer. We chose sword fish tacos and flank steak. We finished off the dinner with coffee and strawberry lemon truffle. We already plane to return. read more

I found this place purely by happy accident as it is located near my hotel. Both the food and the service are incredible. My waitress was friendly and attentive. I ordered the mushroom pizza. The pizza was thin crust and delicious. My friend had the crab cake for dinner. It was served with pea Shoots, chipotle aioli and warm onion fennel salsa. It smelled delicious, and I was told it was light and tasty. I can't say enough for the service. It was one of my best dinners in all my travels and delicious. read more

Pretty disappointing experience. I called and made reservations for an anniversary dinner for my wife and I and still had to wait for a table even after other tables were empty. Once we were finally seated we we given drinks and everything seemed to be back on track. Our appetizers: grilled street corn was overcooked and over charred but the mushroom soup was good. And we again were still waiting a long time for out entrees. There was a large table with a family who were served their meal before us even though we seated and already had ordered. I had the flank steak (41.00) which was so tough I didn't even finish it. My wife had the mussels which she did enjoy. After we we're done again we waited for our waitperson to ask about dessert. My wife mentioned that it seemed that the staff knew a lot of the other customers so that's why we were kind of forgotten about. So with that we decided to just pay the check and leave. I did mention while making the reservation that it was going to be a special night to celebrate our anniversary. So my expectations may have been a bit high, but given all the negatives regarding this dinner I don't see us returning to the Copper Fox anytime soon. read more

We had dinner here and had a really positive experience. The interior is designed with much attention to detail and looks really nice. The restaurant itself is very clean inside, and for the most part now is probably one of the nicer establishments in all of Springfield. Staff was really friendly and the hostess was a really sweet girl. The bartender/owner made great drinks for us at the bar and also was rather pleasant. We ordered some appetizers which came out tasting really good, our burger also was really enjoyable. The menu has a little bit of everything and is really constructed well. From the drinks to the food to the atmosphere I can only say positive things. Also, for a Thursday night it was pretty busy which is a good sign. My sister and I recently were in Springfield Vermont for a visit. I was born there and we visited frequently when my grandparents were alive so we went back to see New England again. We had dinner here at the Copper Fox one night and I must tell you the food was absolutely incredible. We had a harvest tortellini dish both of us did that was amazing. But the absolute best thing I had was the tomato and butternut squash bisque I want to take a bath in that soup it was so incredible. Sadly I'm back in California now and no Copper Fox. Seriously that soup was one of the highlights of my trip. read more

Really great food! And the atmosphere was very comfortable. We were just passing through town but were pleasantly surprised to find this quality restaurant in such a small town. Enjoyed the specialty cocktails, soup of the day, and roasted root vegetable and arugula salad was fantastic! Swordfish tacos were super tasty with great sauce and amazing pickled onions. Yum! I am one of the four that was at the Copper Fox on 9/6/2019. The following review was posted by Tom B. on 9/6/2019. " This was my second experience at this establishment. Unfortunately I will not be returning. There were 4 of us from out of town dining together and catching up. Service was slow but we were understanding since there was only 1 waitress to cover the whole restaurant. We were having a nice time but we're suddenly delivered an appetizer that we hadn't ordered. We refused it at first been then thought maybe we were misunderstood and said we would take it. After we started to eat it we were notified by the waitress that it actually wasn't for us but for the table near us who had been waiting for quite a while. They were upset because they had been waiting for so long We laughed about it and made light thinking it was an innocent mistake. After the other table left the waitress actually complained to us of them being upset and leaving her a bad tip. We thought how awful for her but continued our dining. We each had a cocktail before dinner and then shared 2 bottles of wine in a 3 hour period. We sat talking for a while and then decided to go to the bar to have an espresso martini to talk some more before leaving. I asked the waitress what time the bar closed and she said it's open until we leave. We walked over to the bar and found stools and sat down. We waited about 10 minutes and no one was coming over or even looking at us. We thought it was odd so we called the bartender over and asked if she made espresso martinis. She said yes but she couldn't serve us because we had eaten and had drinks at the table so establishment policy was that we couldn't be served at the bar. We were very confused about what she was saying but decided to just leave but first decided to talk to the owner be be clear on the policy. He seemed to not know what we were talking about and offered to buy us a drink. At this point the nasty unpleasant bartender was not worth staying for. She was rude and condescending and shouldn't be working with the public. And by the way, they charged us for the appetizer we didn't even order. It's just a small town dive trying to be a chic metropolitan establishment. Since it's the only place in town I guess it's better than fast food but don't expect much more." I would like to confirm and agree to the above review. As a business owner too, I hope the owner of the Copper Fox takes this opportunity to realize he/she has an operations problem and possibly a discriminating one.? The food was good, service was a problem. We were understanding of the poor service. Our tip was above twenty percent. I watched patrons waiting for empty tables and some left after waiting for more than ten minutes. If the bartender wanted to go home she should have stated the bar is closing soon. We stopped here for lunch to break up the trip from CT to our Vermont destination. The decor is rustic and hip with metal ripple next to rough planks that frame the bar and the upper beam flanks in the ceiling. The have gender neutral bathrooms and metal or paper straws. I had the grass fed burger from a local VT farm on a brioche bun with fingerlings sized potatoes wedges as a small side salad that was dressed with a salty vinaigrette. My plate also had house pickled sliced onions and pickled chips. My husband had a brisket grilled cheese and potatoes wedges with a small side salad just like mine. The brisket was executed very well with many flavors including hints of wine and the meaty tenderness you would expect. For dessert we split a (in-housemade) large chocolate chip cookie sandwich with a generous portion of vanilla ice cream. You can tell the cookie was made there, it just has that homemade taste. Our bartender was Jade; delightful company. My only complaint was that since I am preggers I ordered my burger medium and it was definitely rare in the middle. We enjoyed a private wedding celebration here on Saturday afternoon and the FOOD was OVER THE TOP DELICIOUS!! Since most in our party prefer vegetarian dishes the kitchen turned out some really kick-ass offerings! Being carnivorous, myself, I could not believe the caliber of vegetarian food served here!! Great atmosphere, food was just as good. Why three stars? The level of noise made for a rather unpleasant evening. Very high ceilings with absolutely nothing to absorb the sound. It was not a full house, but had to ask dinner guests to repeat themselves several times. No music that not either. Perhaps their outside dining is quieter. read more

While I reserve my 5 stars for culinary experiences that send my taste buds on an rollicking adventure, of which there have been regrettable too few, The Copper Fox ranks high up there, at least considering its surroundings. For instance, I had a 5 star meal in a large restaurant in the large tourist town of Koln, Germany. This cannot compare, of course. Nor does it have to; The Copper Fox is delicious. read more

Read some poor reviews, and I have to disagree with them! We are in the area for leaf season...so tourists ‍ and happened to land on Main street. The environment was welcoming so we popped in. Staff was incredible and accommodating, especially at the bar area. Food was local, and delicious. The burger was cooked perfectly and the perfect size. The portions were a little too big but if that's my only complaint then fine! I recommend stopping in and enjoying some local food. Otherwise, just stare at the beautiful copper bar and fox painting. read more

I have been three times in the last two months. Our visit this evening was problematic however. Three stars because the food is often worthy of five stars. Upon entering the almost empty restaurant, the hostess looked us over, (we are middle aged but well dressed) consulted her seating chart, and told us that they had a lot of reservations. She asked if we would like to sit at the bar. I said no, probably not... She then disappeared back toward the kitchen, then returned and offered to seat us up in the little cold alcove by the window... Siberia. There was another group of gray-haired people eating up there, they looked nice. I don't think this attitude is coming from the chef/owner, I met him on our first visit to the restaurant, and he seems like a genuinely nice guy. Food here is generally very good, often extremely good... the salads are wonderful, duck risotto is great.... This is not about our server, who was excellent. When we left, $85 for two people later (which would have been more except for the vibe), the restaurant was still half empty. If we had agreed to sit at the bar and then watch as the tables never filled, it would have been even more insulting. So at least there's that. If the concept is to position the restaurant as a cool, hip (meaning young only) place, then I kind of understand. I am aware that it is considered a negative to be associated with an older crowd. But maybe you should consider that there are some people like us, who live ten minutes away, able to afford to be regulars at your restaurant... until this happens. read more

Service was exceptional. We didn't have a reservation and they fit us in! (Would recommend calling ahead in the future). There several tables of families with four generations! Tables were full the entire time we were there but it was easy to hear our conversation. Wine selection was very good and the food is all farm to table. Cauliflower soup was really smooth with good flavor. Strip steak was grilled to perfection. The location was picturesque which completed the entire atmosphere. Highly recommend it read more

We were recommended this place by a coworker and were pleasantly surprised by this unassuming place! I wasn't impressed by the beer, wine, and cocktail list. I wish they had a better and bigger selection. However, their soup of the day, the eggplant parmesan, was absolutely AMAZING. Although I was not fond of the concept of eggplant parmesan in a soup, they knocked it out of the park and was my favorite part of the meal. We also had the dirty potatoes which were chock full of flavor, however incredibly dense and rich in addition to the soup. For dinner, we decided to share the burger and prosciutto pizza. We ordered the burger medium, and it came out exactly to taste. Many restaurants in the area never prepare burgers to my liking and overcook it, but this time it was perfect. The burger was another highlight of the meal and it basically melted in your mouth on the brioche bun. It was perfectly seasoned. The pizza was average, and had a soggy crust in the middle and crisp on the outsides. However, the prosciutto was tasty and the greens were fresh. For dessert, we ordered the chocolate mousse. Although the mouse wasn't light and fluffy and had more of a cheesecake consistency, it was absolutely divine and you could tell the chefs used upscale ingredients. The chocolate was not acidic and did not leave a weird aftertaste. We shared a decaf coffee along with the dessert and it was some of the best tasting coffee I've had in this area. Only a 5 minute drive off of er 91. Food was delicious. I ordered the Dirty Potatoes, unlike anything I have had before and so good! The service was prompt and attentive and the decor was beautiful. Only down side is the kitchen is open to the dining room and the ventilation from the cooking smells could have been better. That said, overall experience was very good and would totally go back again. read more

This is an outstanding restaurant. Our first experience was on a Friday night and we had a blast. We sat at the bar and enjoyed Elise's wonderful service and a delicious meal. Chef Nick Matush has done an impressive job of sourcing local ingredients and creating a world class menu. We started with the pickles and cheese, the chefs twist on a traditional crudite. Wonderful local cheeses along with an interesting mix of the chef's own pickled vegetables. We also shared the grilled romaine salad which was impressive. The entree we shared was incredible. A slow roasted pork served with black beans, thyme demi glaze and chimichurri. You should absolutely try this. Last note. The partners who own The Copper Fox are locals who have stepped up and are working hard to be a positive addition to the Springfield community. I applaud their commitment to giving back to the area and encourage everyone to support their restaurant. Outstanding food, delightful service and a commitment to Vermont. Another fabulous meal at the Copper Fox!! My big-city brother and sister-in-law were amazed at the quality, flavor and ingenuity with which these meals were prepared. We all had the wild mushroom soup which was full of flavor and the texture was velvety smooth. I had the braised pork shoulder. Tender tasty with a fabulous sauce full of flavor. The accompanying fried sauerkraut presented a new crunchy and tangy flavor treat I had never experienced before. One I look forward to repeating. The chimichurri and black beans were smoky and fragrant, complimenting the pork very nicely. Two of our party had the eggplant gnocchi. The gnocchi was firm, tender and did not have the "slippery" feel that gnocchi often has. The fresh eggplant in the accompanying sauce was zesty and harmonious. Swordfish is not easy to cook, correctly. My brother's swordfish was moist inside with a very nice grill on the outside. The risotto was creamy and flavorful and a great match for the swordfish. We split a Tiramisu that was the best I have had in a very long time and brought back memories of Italian bakeries in NYC. The dusting of cocoa powder over the top was a nice touch and the light, moist and flavorful treat was enjoyed by all. It is the little things that make the difference at the Copper Fox. There are many chefs who can cook a good pork shoulder or piece of fish, but, the care and the inspirational sides that are balanced to each dish are what make this restaurant soar above others. Chef Nick is an inspired and superb chef. Don't miss this place the next time you are in Springfield. As a matter of fact, The Copper Fox is a reason unto itself to make the trip.
