They use chicken thighs which is my preference but to some may not be your thing. The chicken sat on a bed of really deliciously seasoned rice. They accompanied the dish with plenty pickled cucumbers and some fresh jalops. Every bite of this dish was heaven. Especially, washing it down to with some bomb beer from Rails End Beer company. My first bite -- explosion of flavor! The tortilla was soft and chewy, the potatoes melded with the eggs n' cheese, the meat tasted juicy but not greasy while the pico lifted and brightened the whole taco. It was savory while being fresh and reminded me of California Mexican! Something, I always want in my life. I got full after two but wished I could have eaten a dozen more. Will be back!
