The wife and I have eaten here 3 times in the last year. Love the vibe of the restaurant, decor and almost anywhere you sit you are not on top of other guests. 8oz filet has been spot on all 3 visits. Asparagus is our favorite side, but we are working our way through the sides and deserts. Service is very prompt and professional. Excellent service on all visits. If you are staying overnight in the area, book a room at the Fredonia Hotel. Restaurant and Hotel are together. The quietest hotel room I have stayed in over my 40+ years of travel. So happy that we've been able to pass through and enjoy dinner at the hotel. Small college town, with some super nice people. Put it on your to-do list if you are passing through. read more

Our visit to the Republic Steakhouse was the deifintion of a "mid" experience.....at a premium price. We were seated in the bar section in some very low and comfortable seats that became significantly less comfortable when trying to lean forward and eat. That did wonders from my usually sore back, let me tell you. I had their stuufed flounder and even though it looked more like two crab cakes than a fish, it was actually pretty good. I was happy with it. My wife, on the other hand, ordered a sirloin cooked medium (pink center). What she got was a well-done steak. If this were Denny's and this happened to a $18.99 steak it wouldn't be a big deal but this was at a prime steakhouse and the stead was about $60. My wife went ahead and ate it because she said it still tased good even though it was not what she asked for but the last quarted of the steak because so very grey and dray that she could go no further. She pointed the issue to the server (who didn't even apologize or even seem bothered) and asked that he show the remainder of the $60 boot sole to the manager. Now, we were not looking to recieve any sort of compensation or anything like that. My wife simply wanted the issue acknowledged by the manager since the steak was so expensive and was not cooked correctly. The manager never bothered to show up. This is a clear indication that the management of the Republic Steakhouse doesn't really care about either the quality of the food or the satisfaction of the guests. This is a shame because there is alot to like otherwise. Unfortunately, it doesn't look like we will be visiting them again. One final tip for the bar staff: If you are going to charge $18 for an Old Fashioned, you either have to make it good or fill the glass. Pick one. read more

Who would have thought that you could get a Great steak in a hotel? I had a ribeye (medium rare) and it tasted and was cooked perfectly! The baked potato (loaded), asparagus and sautéed mushrooms were just as good. Our waitress was enthusiastic and made sure all our needs were met. Not that we needed it, but we topped the evening off with the strawberry topped huge slice of cheesecake. Delicious! The ambiance made for a great dinning experience too. I can tell you, this will not be our last stay at the Fredonia Hotel and The Republic Steakhouse! I have told several of my friends about the experience we had. BLT salad one of my favorite salads I've had anywhere. I ordered wrong on my steak. I ordered the ribeye but I should've ordered the big filet. You don't usually see a filet that size which is cool, but the ribeye I received I think was a bad cut. Almost no end cap and not tender. Everyone else around the table enjoyed theirs so I hated to send back and I did try someone's filet- very good- so I'm not going to deduct anything for my steak. Service was great, drinks were great, potato side dish (Au gratin, or something similar) was good. Ambience was really nice, date night, dinner and hotel type of place. I recommend! read more

well, d.... to me nacogdoches is in the middle of nowhere. take the fact that i usually avoid, if possible, restaurants inside of hotels period. coming here with a group large enough to shut the whole place down just for us turned out to be amazing. sure, service was challenged and failed in a couple of spots but i am actually not going to ding them for that. the fried calamari - soy, sweet chili sauce, szechuan peppers, rice noodles was amazing. the burrata bruschetta - grilled baguette, burrata, balsamic glaze, sugo, roasted tomatoes was great too. for a salad, the republic salad - field greens, candied pecans, grape tomatoes, goat cheese crouton, dijon vinaigrette, green apples was outstanding, and the rib eye - 16 oz, 44 farms black angus, cameron, texas was the perfect entrée. don't hesitate for a minute to give this place a try if you end up anywhere close! read more

I was really looking forward to this special reservation but since I don't eat much steak, I came here to Yelp to look at pictures, which is what makes Yelp valuable to me. The sea bass looked amazing so I chose that meal before we went. My husband ordered a steak that looked unlike I've seen before, but he said it was very good. My sea bass arrived looking amazing and expertly cooked. But first bite was unmistakably ammoniated, in other words, past it's best by date and tasting of ammonia. One more bite confirmed and I called the server and told her. She apologized and took the dish and said she'd have the manager come over. The manager never came and when the server returned with a salad I replaced the fish with, she was hostile. Fish can get old and that can be forgivable. That treatment cannot. read more

Our first experience at The Republic Steakhouse was an absolute success. The hotel lobby entrance that you walk through to arrive at the restaurant is impressive and so well decorated. We ordered the lobster bisque, Caesar salad, an 8oz filet and cheese cake. Every single bite was perfect and beyond delicious with the exception of the cheese cake. The service my wife and I had at this restaurant was absolutely the worst service I've ever experienced in my 53 years of life of eating at amazing places. After having a reservation for over a week, we requested the dining room and not the bar, and they stuck us in the bar next to the hosts stand, which I thought was where we were just gonna have a drink until our actual table was ready. After complaining and after they finally moved us to a table in the restaurant area. We ordered appetizers and a huge expensive filet with mac & cheese lobster and we ordered Caesar salads and wanted the dressing on the side. And of course we ordered a very expensive bottle of Cabernet to go with it all. With that said, we are also staying in the hotel in there most expensive room to enjoy the pool and had a great lunch at the café. We ordered espresso martinis when we got there just for a little pick me up before our meal came. When they brought out the steak and the macaroni and cheese lobster and our salads, which were drenched in dressing, which we requested on the side, I said, where is the wine and they said that they weren't going to serve the wine because we've had too much "to drink". And that call was made by our server Emily who would not bring us the bottle, but she did bring us all the food. We at that time refuse to eat the food, paid for our two drinks that we had and we walked out. We were looking forward to eating here for weeks as we live in Dallas and booked a 300 plus a night room. The manager was a complete joke and the entire experience was so bad. We came back to our room and ordered a pizza and went to bed. No explanation on why we couldn't drink one of our favorite wines with our steak except we had "exceeded" whatever the hell she said. The sad part is all they had to do was come tell us that before they brought all the food out and wasted all the food because we weren't going to eat it without the wine. I have a lot of people asking me about this place and trust me. You will hear for me again because this is absolutely ridiculous. If that waitress Emily doesn't get fired this place is going to become a flight pattern of a brick and go straight down hill. Can't wait to get out of here. I'd rather have stayed at a motel 6. Do not waste your time coming here. Our room was literally on the 1st floor cabana as they call it 20 feet from the restaurant so it's not like we were driving home. We were walking 20 feet back to our room. Complete joke. If you do go make sure you call and make sure Emily is NOT your waitress. She should be fired. read more

I came here for the first time with my bf and his family for his father's birthday. The food here is amazing, the center cut with bacon butter just melts in your mouth, and the Ahi Tuna Tartare as an appetizer was absolutely delightful. And the pasta dish they had was so good, the only thing was the shrimp in it didn't have much flavor compared to the 3 piece shrimp you order on the side but I guess because it was poached. When traveling it is, at times, difficult to locate what one would classify as a fine dining restaurant. That is especially true in college towns that have every possible fast food eatery along the main drag. If that is a normal rule then The Republic Steakhouse in the newly renovated Fredonia Hotel is the ultimate exception. The dining room is operational only on Thursday, Friday, and Saturday nights. Reservations are highly recommended. Upon our arrival, and this is an odd comment I know, we notice that parking around the hotel and restaurant is Texas size. No problem in safely parking a nice size vehicle. The ambiance and atmosphere is charming, laid back, and conducive to fine dining. That includes the artwork and the soft background music especially the singing of Ol' Blue Eyes. Table are spacious and the seating is comfortable. This is a place to arrive and wine and dine at leisure. The evening commenced with specialty cocktails. My wife completely enjoyed the Smoked Old Fashioned. I took in the Sinatra which is prepared with Jack Daniels; different and nice. The Sourdough bread presented with butter was delicious. And you have to force yourself to stop enjoying it knowing room needs to be left for what will be ordered. The Lobster Bisque which is made over a period of three days contains large pieces of Lobster. Delicious. The Crab Cake ranks at a level of one of the best this diner has enjoyed anywhere in the United States. Served with a tasty Asian Slaw and, of course, with lots of Jumbo Crab Meat. Devoured with Sonoma Cutrer Chardonnay by the glass. Continue with their Filet 8oz. That is cooked to order and is an absolutely delicious piece of meat. A pleasure to take in piece by piece. A crust on the outer portion that is so very flavorful. A Jordan Cabernet Sauvignon 2013 was very satisfying with the steak. Side of Burgundy Mushrooms served in a covered Lodge pot were both tasty and filling. At this point we could only look and think about dessert. Supplemented our thoughts with a satisfying carafe of French Pressed Coffee. Our server Jordan was excellent. Both in the manner he made us feel as regulars on our first visit and his total professionalism in his duties. As we say in New Orleans, "We pass a grand time at dinner!" Our complete experience was at a level we are accustomed to at such restaurants as Commander's Palace in New Orleans. Was surprised but not disappointed that Chef Doug Atkinson never cooked in New Orleans. This restaurant and this Chef would be big draws if located in any city known for fine dining. A final treat was meeting and talking with the Manager, Lucas Fandry, before we departed. We were very happy to share our most enjoyable experience with him and to advise of our joy having such a place in Nacogdoches. We will be returning at every visit to our second home. read more

The Steak - 4 star (I would mark it 5 star but the 20oz ribeye steak was not 20oz prior to cooking.) I would guess it was more likely 1lb pre-cook and 3/4lb post cook. The flavor was excellent. The Mushroom Risotto - 0 stars (It was the consistency of gummy oatmeal). We had eaten less than 4/5ths of it. I voiced concern to the manager, he took the dish away yet the cost was still on my bill. The Brussel Sprouts - 0 star. They were to hard to eat. As in not cooked. I voiced concern to the manager. He left that dish on the table and we had to pay for that too. The baked potato - 5 star. Great skin on the tater. The Republic Salad - 5 star. Great salad The 6oz lobster tail - 3 star. It was fine. nothing special. The free sourdough bread and butter - 4 star. Good bread. The waiter - 2 star. He had no idea what any of the dishes tasted like. So he was of no help in offering assistance on what things tasted like or what his favorite dish was and why. That was a real disappointment. And a huge error on a restaurant that charges this much. The manager a 0 - No help! Enough said The ambiance/experience - 3 stars. It seemed overly dark. very open. not intimate. Family and friends eat here often. Four out of five visits consisted of unseasoned undercooked food and the service was poor. One would think there would be some type of training for wait staff serving in a fancy restaurant wiith $50 plus steaks. They often seem clueless. The prices definitely don't match the service. We ate at the Texas Roadhouse chain last night the service and the steaks were awesome for 75% less in cost of the Republic Steakhouse. Had a weekend anniversary trip to Nacogdoches to celebrate 31 years together. My wife and I arrived in town late and got dinner at the Republic steakhouse. We were starving, as he had been driving for a long time. When we arrived, we got the bad news that reservations were required and they were fully booked. After a brief discussion, we found an opening in the reservation system for 8:00, so we snatched it and agreed to wait 20 minutes. After about 5 minutes a table opened up and we were seated. Our server, Josephine, was delightful. She was attentive and engaging. We had immediately put her on the spot by asking for recommendations. She recommended the crab cakes appetizer, which we went with to start. My wife and I thought it was delicious. Perfect choice. For dinner we both went with the filet. I hadn't had a steak in a long time. My with had the blue cheese bacon butter topper, while I decided not to put anything extra on my steak. The steaks were cooked exactly to order (medium rare) and were super. Nothing better than a high quality steak cooked just right. For sides, Josephine recommended the burgundy mushrooms, so we went with that, along with the au gratin potatoes. The potatoes were good, but there's nothing special about au gratin potatoes. But the mushrooms . . . They were exceptional. The were light and flavorful, not oily, top notch. For dessert we had to choose between the bananas foster cake and the chocolate soufflé. The bananas foster was a sentimental choice, as it was what my wife and I ordered the first time we went to dinner together. However, we went against that sentiment because Josephine said the soufflé was excellent if you love dark chocolate (which we do). She was again spot on. I would give the Republic 5+ stars for service, and 5 stars for quality of food. Only downsides are that it is on the pricey side (can't come here ever day) and it's a little difficult to find (tucked in the very back of the Fredonia hotel). The Republic Steakhouse risks their local reputation with poor service. Our reservation for two couples made weeks in advance and confirmed again on the afternoon of our planned time together for 7:00 was met with disarray. No water service, incomplete flatware, no table bread (though some tables around us were served these same expected basics), delayed greeting by the wait staff, and 30 minutes for ordered wine to reach the table on a night where only 1/3 of the tables were occupied and there were no large groups. We pre-ordered both our appetizers AND side dishes with our drink orders, ordered our main entrees when drinks came to the table and the kitchen failed to deliver any of these items hot. My wife's entree was delayed by 25 minutes (and I waited to eat with her) when the chef came to the table to say it was "a bit overcooked and the" replacement entree would be on the table in "five minutes". My wife expressed that she would be happy with the crispy item to be delivered immediately. Twenty minutes later, a cold plate with a cold entree came with apologies from the table staff that they were sorry about not getting her order placed originally and for their delay in recognizing who the dish was intended for when it was finally prepared. The chef returned to see if we had enjoyed our meal before my wife had taken her first bite; we all found him intrusive and clueless about our cold food. Now, it was 8:45 and the heat was turned off and the staff was noisily moving tables and vacuuming. We were not offered a dessert menu, and our bill was brought to the table. My wife's meal was billed in full. I paid the full 20% tip and we said nothing to our young waitress about the multiple failures given that she was clearly undertrained.
