The cold, creamy texture balances the acidity of the smoked meats and pinto beans. I always find a great potato salad adds the balance to the spices, acids and smoke to round out the meal. I gave them four stars simply because I understand the nature of running a kitchen, smoker, etc and sometimes the schedule to put product out for the next day may cause staff to miss a step here and there such as making sure cleaning agents and their lingering odors are flushed from cooking apparatus'.
